CARAMELIZED ONION, SAUSAGE AND BASIL PIZZA

- Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal and set aside.
- In a large skillet, melt 3 tablespoons of olive oil and the butter over medium-low heat. Add the onions, salt and pepper. Cook, stirring occasionally, until golden and caramelized, about 20 minutes. Increase the heat to medium-high and add the sausage. Using a wooden spoon, break up the sausage and cook, stirring constantly, until cooked through, about 8 minutes. Set aside to cool slightly.
- On a lightly floured work surface, roll out the dough into a 13-inch diameter circle, about 1/4-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the onion mixture evenly over the dough, leaving a 1-inch border. Sprinkle the cheese on top. Bake until the crust is golden and the cheese has melted, about 15 to 17 minutes. Remove from the oven and sprinkle with chopped basil. Cut the pizza into wedges and serve.

- Preheat oven to 400. Unroll pizza crust and spread onto a baking sheet. Spread 1 tablespoon olive over dough along with minced garlic. Set aside.
- In a large skillet heat olive oil. Add sliced onion, salt and sugar. Cook onions for about 20 minutes or until they become caramel in color and are soft. Be sure to stir onions every 5 minutes to prevent them from burning and sticking to the pan. Add vinegar during the last few minutes of cooking, stir until liquid has evaporated.
- In a separate skillet, cook crumbled Italian sausage until completely browned. Top pizza with sausage, shredded cheese, onions, rosemary and oregano. Cook 10-12 minutes or until edges have browned.

CARAMELIZED ONION, DATE AND SAUSAGE PIZZA
ETA: Help! I need help developing this recipe. I made it but the sauce needs help. Any chefs out there willing to help me with stronger sauce ideas? Something needs to balance the sweetness of the dates a bit more. Maybe a denser balsamic-based sauce? I picked up some dates at Trader Joe's yesterday and thought they'd be really good on a pizza, so this is what I'm going to use them for this Pizza Friday. This (doubled) is The Best pizza dough to use for any pizzas and will certainly compliment mine: Recipe #301703 from I Can't Believe It's Healthy. Be sure to double or triple it. We're too wimpy for gorgonzola and don't like feta or goat cheese, but if you want to bump the sophistication level of this pie to lofty heights...

Steps:
- Preheat oven to 425 (or temp recommended by pizza dough manufacturer if using store-bought, and skip pre-bake steps).
- Roll-out and pre-bake in preheated oven for 4-5 minutes.
- While baking, whisk 1 Tbs Olive Oil, 1 Tbs Balsamic and 2 tsp of brown sugar in small bowl. Drizzle evenly over dough once pre-baked.
- In med saucepan heat 1 tsp Olive Oil over medium heat. Add sausage coins and cook through.
- Remove coins, but leave the fat in the pan and add sweet onion rings to pan. Carmelize onions by cooking 8-10 minutes or until browned, stirring frequently.
- Add dates during last 3 or so minutes of cooking to heat through. Remove and pat with paper towels to absorb some of the oil.
- Spread onions and dates on dough & sauce, sprinkle cheese on pizza dough, followed by sausages.
- Bake until crust is browned and cheese melted, about 15-20 minutes.

CARAMELIZED ONION AND GORGONZOLA PIZZA

- Put the onions, olive oil, and sugar into a skillet over medium heat and cook, stirring frequently, until the onions are wilted and brown, about 15 to 20 minutes. Reduce the heat if the onions are browning too quickly. Set aside to cool a bit.
- Heat the oven to 450 degrees F.
- Spread half the tomato sauce onto 1 of the crusts. Top with half the caramelized onions and half the mozzarella. Repeat with the other crust. Bake the pies until the mozzarella is browned and bubbling, about 10 to 15 minutes. As soon as the pies come out of the oven, sprinkle over the gorgonzola. Slice and serve.

- In a small bowl combine yeast and 1/4 cup warm water (not more than 110 degrees) until dissolved. Let stand 5 minutes, until creamy, then stir well.
- In the bowl of an electric mixer fitted with the dough-hook attachment, combine 1 1/2 cups all-purpose flour, the whole-wheat flour, and 1/2 teaspoon salt. Make a well in the center of the dry ingredients. Add the yeast mixture, 2 tablespoons olive oil, and 3/4 cup warm water (not more than 110 degrees). Mix until the dough is smooth and elastic, about 4 minutes, adding only enough of the remaining 1/2 cup all-purpose flour to make a very soft dough. Form the dough into a ball, and place into a large, oiled bowl, turning to coat.
- Cover with a kitchen towel, and let rise in a warm spot for 1 hour, or until the dough has doubled in size.
- Meanwhile, heat 2 tablespoons olive oil and butter in a large skillet over medium-low heat. Add onions and garlic cloves, and cook until they begin to soften, stirring often, about 20 minutes. Add balsamic vinegar, sugar, 1 teaspoon salt, and black pepper, and cook until golden brown, stirring often, about 50 minutes. Set aside.
- Heat 1 tablespoon olive oil in a medium skillet on medium-high heat. Add sausage, and cook until browned on all sides, about 10 minutes. Remove from heat, and slice into 1/4- to 1/2-inch rounds. Set aside.
- Heat oven to 400 degrees. Brush two baking sheets with olive oil, and set aside. Punch dough down, divide in half, and form each half into a ball. Roll one half of dough into a circle about 12 inches in diameter, keeping other ball covered with plastic wrap while working. Roll out second ball of dough, and transfer dough rounds to baking sheets. Brush the top of each dough round with olive oil. Divide onions in half, and spread a layer on each crust. Sprinkle the sausage on top of each crust, and dot each pizza with half the goat cheese. Bake until crusts are golden brown, about 15 minutes. Sprinkle with salt, pepper, and herbs. Slice the pizzas into small wedges, and serve immediately.

- To caramelize the onions, heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
- Add the balsamic vinegar and cook a few more minutes, then remove from heat.
- Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
- Spread the caramelized onions evenly over the pizza crust.
- Top the onions with the chopped peppers, crumbled goat cheese, shredded provolone, and chicken.

- Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
- Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.
