4 large sweet potatoes
2 tablespoons butter
1/4 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon pepper
1/2 teaspoon sea salt
pinch of nutmeg

Steps:

  • Slice sweet potatoes into chunks. Place them in a large pot with cold water and let it come to a boil. Once the water is boiling, reduce the heat to medium-high. Cook for 20-30 more minutes, or until the sweet potatoes are fork-tender.
  • Drain the water and return the potatoes back the pot. Add the butter, heavy cream, salt, pepper, vanilla, and nutmeg. Whip the mixture with a food processor, hand mixer, stand mixer, immersion blender, masher, or a fork.
  • Serve and enjoy!

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

1 tsp. ground cinnamon

3 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 350°F.
  • Beat potatoes, butter and spices with mixer until blended.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with marshmallows.
  • Bake 15 to 20 min. or until potato mixture is heated through and marshmallows are lightly browned.

4 pounds russet potatoes
Kosher salt
2 leeks, white parts only
6 tablespoons butter
Freshly ground black pepper
1 cup milk
1 tablespoon chopped garlic
2 sprigs fresh thyme

Steps:

  • Peel the potatoes and cut them into 1-inch pieces. Put them into a large pot of cold water. Add a big pinch of salt and put the pot over high heat. When it comes to a boil, cook until the potatoes are just cooked through, about 20 minutes.
  • While the potatoes are cooking, slice the leeks into small pieces and thoroughly wash to remove any dirt. Put a medium skillet over medium-low heat and add 2 tablespoons butter. When the butter is melted, add the leeks and season with salt and pepper. Cook the leeks until they are very soft, being careful not to let them color or burn, about 20 minutes.
  • Drain the potatoes in a colander. Then put the potatoes back into the pot and let the potatoes dry out a bit while you finish the leeks.
  • In a small pot over low heat, add the milk, the remaining 4 tablespoons butter, garlic and thyme and warm it up. Strain the garlic and thyme from the warm milk and stir the milk into the potatoes using a wooden spoon. Mash with a potato masher, breaking up the big lumps. Stir in the melted leeks, taste and season with salt and pepper. Reserve 2 cups for another use if desired, such as the Round 2 Recipe Thanksgiving Pie. Cover the rest and keep warm until ready to serve.

2 1/2 pounds Yukon Gold potatoes (5 to 6 medium), peeled and chopped
Kosher salt
2 sticks salted butter, cut into pieces, at room temperature
2 leeks (white and light green parts), thinly sliced and rinsed
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
Freshly ground pepper
1/2 to 3/4 cup milk, warmed

Steps:

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium low and simmer until the potatoes are very tender but not falling apart, about 15 minutes.
  • Meanwhile, melt 4 tablespoons butter in a large skillet over medium heat. Add the leeks, thyme and rosemary. Cook, stirring, until the leeks soften, 12 to 15 minutes; season with salt and pepper and set aside.
  • Drain the potatoes and return to the pot over low heat; cook until any excess water evaporates, about 2 minutes. Add the remaining 1½ sticks butter, reserving 1 tablespoon for topping, and mash with a potato masher until smooth and the butter has melted. Gradually mash in ½ cup milk and ½ teaspoon salt until creamy, adding up to ¼ cup more milk as needed. Season with salt and pepper and stir in the cooked leeks.
  • Transfer the potatoes to a bowl; top with the remaining butter before serving.

2 lbs orange fleshed sweet potatoes (about 3)
4 medium leeks
1/2 cup heavy cream
1 tablespoon Bourbon
1 whole nutmeg, in a grater
1 lemon, zest of, grated
salt
white pepper, in a peppermill
2 tablespoons unsalted butter

Steps:

  • Scrub the sweet potatoes under cold running water. Cutn the potatoes into thirds or quarters and put them in a large pot with enough cold water to cover them. Remove the potatoes and bring the water to a boil. Add the potatoes, return to a boil, cover and reduce heat to medium. Cook about 20 - 25 minutes until you can pierce them easily with a fork.
  • Split leeks lengthwise and wash them under cold running water, root end up. Bending back the leaves to get all the dirt that is clinging to the inner layers. Trim off roots and slice them thinly crosswise.
  • Peel the sweet potatoes. Whip the potatoes with the cream, bourbon, a few grinds of nutmeg, lemon zest and seasonings.
  • Put the butter and leaks into a saute pan and turn the heat on to medium. Wilt the leeks, tossing them frequently, until they are translucent and just tender, about 3 to 4 minutes.
  • Transfer the potatoes to a large serving dish and smooth the top. Put the leeks around the edges and serve at once.

Uncover the pot, lower the heat so that the water stays at a simmer, and stir in the teaspoon of salt. Simmer uncovered for about 20 minutes, until the potatoes are very tender.
  • While the potatoes are cooking, heat about two tablespoons of butter in a large skillet over medium heat. Add the leeks and cook, stirring frequently, until they are very tender and lightly browned, about 20 minutes. Make sure the heat isn't too high – you want them to slow cook and very lightly brown. Season lightly with salt and pepper.
  • Drain the potatoes. Pass them through a ricer or a food mill, and transfer the mashed vegetables back to the pot, or alternately you can mash them in the pot with a potato masher (this method will yield a few lumps, which some people like).
  • Add the remaining butter and 1½ cups of the milk to the pot and stir or whisk over high heat until hot, creamy, and smooth. Add the remaining milk as desired to get to the consistency you like. Season with additional salt as needed, and the pepper.
