In the US, white chocolate must contain at least 20 percent cocoa butter. But for better flavor, look for something with an even higher percentage. Avoid white chocolate with fillers like oil and artificial flavor. A good white chocolate has a gorgeous milky flavor with a floral essence that can evoke both cocoa and vanilla.

1 1/2 cups graham cracker crumbs
1 tablespoon sugar
1/2 teaspoon kosher salt
6 tablespoons unsalted butter, melted
1 pound cream cheese, at room temperature
1/3 cup sugar
Pinch kosher salt
7 ounces good-quality white chocolate, melted and cooled slightly
2 large eggs, at room temperature
1/2 cup raspberry jam, seeds strained out

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with parchment paper, leaving a 2-inch overhang on 2 sides.
  • Add the graham cracker crumbs, sugar and salt to the prepared baking pan and toss with a fork to combine. Add the butter and toss until evenly moistened. Spread the crumb mixture out and pat down to an even layer.
  • Bake until the crust is toasted and fragrant, about 10 minutes. Transfer to a rack to cool completely. Lower the oven temperature to 300 degrees F.
  • For the cheesecake: In a large bowl using an electric mixer, beat the cream cheese, sugar and salt until fluffy and smooth, 3 to 4 minutes. Beat in the white chocolate until well combined. Beat in the eggs one at a time, just until combined; do not overmix once you've added the eggs. Transfer the cream cheese mixture to the cooled crust and spread out to an even layer.
  • Drop the raspberry jam in dollops all over the top of the cheesecake. Then, using a toothpick, swirl the jam and the cheesecake batter decoratively.
  • Bake until the cheesecake is set about 2 inches around the edges but is still a bit jiggly in the center, 25 to 30 minutes. Transfer to a rack to cool for about an hour, then wrap with plastic and refrigerate until completely cold, at least 6 hours.
  • Use the parchment to lift the cheesecake onto a cutting board and cut into pieces to serve.

1 1/4 cups shortbread cookie crumbs
1/4 cup sugar
1/3 cup butter, melted
16 ounces cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
2 tablespoons heavy whipping cream
1 tsp. freshly grated lemon zest
1/4 cup fresh lemon juice
4 ounces white chocolate
2 large eggs
2 ounces white chocolate, melted
2 tablespoons shortbread cookie crumbs

Steps:

  • Preheat oven to 375°.
  • Line 9x9-inch square baking pan with heavy foil and spray with cooking spray. In small bowl stir together crumbs and sugar. Add butter. Toss until combined. Evenly spread crumb mixture over the foil. Alternatively, use a regular muffin pan lined with paper liners and place about a tablespoon of crumb mixture in each cup. Bake at 375°F for 6 to 8 minutes or until light brown. Cool.
  • Reduce oven to 325°F.
  • Melt 4 oz. chocolate as directed on package; set aside to cool. Using a mixer, beat cream cheese, sugar, vanilla extract, almond extract, and heavy cream in large bowl until blended. Add lemon zest, lemon juice and melted chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon over cooled crust.
  • Bake 20-30 minutes (15-20 if using muffin pan) or until center is almost set. Cool completely then place in refrigerator and chill at least 8 hours, preferably 24 hours.
  • Carefully remove foil from pan and place on a cutting board. Slice bars into squares and drizzle with cooled, melted white chocolate then sprinkle with cookie crumbs.

Pinch of freshly grated nutmeg

4 ounces white chocolate, chopped, plus shaved chocolate for topping
4 8-ounce packages cream cheese, at room temperature
1 cup sour cream
1 cup plus 2 tablespoons sugar
4 large eggs
2 tablespoons cornstarch
1 teaspoon vanilla extract
Pinch of salt
1 1-pound bag cranberries (thawed and drained if frozen)
1 cup sugar
1 teaspoon grated orange zest
2 tablespoons fresh orange juice

Steps:

  • Make the crust: Set racks in the lower third and middle of the oven; preheat to 350 degrees F. Mix the graham cracker crumbs, sugar, nutmeg and salt in a bowl. Add the melted butter and mix with your hands until combined. Press into the bottom and 1 inch up the side of a 9-inch springform pan. Freeze until ready to fill.
  • Make the filling: Bring 1 inch of water to a boil in a small pot; remove from the heat. Put the white chocolate in a medium heatproof bowl and set over the pot (do not let the bowl touch the water); stir until melted, about 4 minutes. Remove the bowl from the pot and set aside.
  • Beat the cream cheese, sour cream and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 7 minutes. Beat in the eggs, one at a time, then add the cornstarch and beat 2 minutes. Beat in the melted white chocolate, vanilla and salt until combined.
  • Fill a roasting pan halfway with water and set on the lower oven rack. Pour the filling into the prepared crust and set on the middle oven rack. Bake until the edge is set but the center still jiggles slightly, 1 hour, 10 minutes. Turn off the oven and let the cheesecake sit in the oven, 30 minutes. Transfer to a rack to cool completely. Cover and refrigerate 8 hours or overnight.
  • Make the compote: Spread the cranberries on a rimmed baking sheet, sprinkle with 1/3 cup sugar and set aside until they release some of their juices, about 1 hour. Meanwhile, combine the remaining 2/3 cup sugar, the orange zest and juice, and 3/4 cup water in a medium saucepan. Bring to a boil, stirring, then reduce the heat to medium low and simmer until thick enough to coat the back of a spoon, about 10 minutes.
  • Drain the cranberries and add them to the saucepan. Cook, stirring, until they begin to burst, about 7 minutes. Transfer the compote to a bowl and refrigerate until completely cool.
  • Before serving, run a hot knife around the edge of the cheesecake, then remove the springform ring. Top with the cranberry compote and shaved white chocolate.

27 chocolate sandwich cookies (about 11 ounces)
1/2 cup chilled whipping cream
1 8-ounce package cream cheese, room temperature
3 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
Lime slices or lime twists (for garnish)

Steps:

  • Line 8x8x2-inch square baking pan with foil, extending over all sides. Stir chopped white chocolate in small metal bowl set over saucepan of barely simmering water until melted and smooth. Remove bowl from over water. Finely grind cookies in processor. Add 2 tablespoons melted white chocolate and blend until mixture clumps together. Firmly press mixture onto bottom of prepared pan. Chill while making filling.
  • Beat whipping cream in medium bowl until peaks form. Beat cream cheese, sugar, lime juice, and lime peel in large bowl until smooth. Beat in remaining melted white chocolate. Smooth and creamy cheesecake bars with a delicious layer of white chocolate ganache and white chocolate drizzle. You could turn the drizzle any color you'd like, but I love using red for Christmas or Valentine's Day.

2 cups [200 g] graham cracker crumbs
3 tablespoons granulated sugar
4 tablespoons [57 g] unsalted butter (melted)
24 oz [678 g] cream cheese (at room temperature)
1 1/2 cups [300 g] granulated sugar
1/2 teaspoon salt
3/4 cup [180 g] sour cream (at room temperature)
2 teaspoons pure vanilla extract
3 large eggs (at room temperature)
8 oz [226 g] white chocolate
1 cup [240 g] heavy whipping cream
2 oz [57 g] white chocolate
red food coloring

Steps:

  • Adjust an oven rack to a middle position of the oven. Preheat the oven to 350F [180C]. Grease a 9 x 13 in [23 to 33 cm] pan and line it with a parchment sling.
  • Place the graham cracker crumbs and sugar in a medium bowl and whisk together. Pour in the melted butter and stir until combined.
  • Press the mixture into the prepare pan and bake for 10 minutes. Remove the pan from the oven and let cool. After the pan has cooled, wrap the outside sides in two layer of aluminum foil, with the shiny side facing out (this helps keep the sides of the cheesecake from browning).
  • In the bowl of a stand mixer fitted with a paddle, beat the cream cheese on medium speed until light and completely smooth, 4 to 5 minutes. Scrape down the sides of the bowl often, making sure all the cream cheese has incorporated and is silky smooth. Add the sugar and salt and beat on medium speed until completely incorporated, stopping to scrape down the sides fo the bowl as needed, 2 to 3 minutes. Add the sour cream and vanilla, and beat on medium speed until combined. Add the eggs, one at a time, beating on low speed after each addition, until just combined. Using a spatula, give the filling a couple of turns to make sure it is fully mixed.
  • Pour the filling over the cooled crust and use an offset spatula to smooth the top. Bang the bottom of the pan on the counter a few times to help get rid of any air bubbles. Bake the cheesecake until the center of the cheesecake registers 150F [65C], 30 to 35 minutes. The outside 2 to 3 in [5 to 8 cm] of the cheesecake will be puffed and fairly firm and set, but the center will still be slightly jiggly at this point. Turn off the heat, open the oven door just a crack, and let the cheesecake rest and cool in the warm oven for 1 hour.
  • Transfer the pan to a wire rack and let the cheesecake cool. Once it is completely cool, place a piece of parchment over the top of the pan (this helps keep condensation off the top of the cheesecake) and transfer it to the refrigerator. Let chill for at least 6 hours or overnight.
  • Place the chocolate in a small bowl. Heat the heavy cream in a small saucepan until it is simmering and just about to boil. Pour the cream over the chocolate, cover the bowl with plastic wrap, and let sit for 5 minutes. Remove the plastic wrap and use a butter knife to stir the chocolate into the cream, until it is completely smooth. Let the mixture cool to almost room temperature. Once cool, remove the cheesecake from the freezer, and pour the ganache over the top, and use an offset spatula to spread in an even layer. Let the ganache set before decorating and slicing.
  • When the ganache layer is completely set, melt the white chocolate in a small saucepan, stirring constantly, until smooth. Add a few drops of red food coloring until the desired color is reached. If your white chocolate seizes when the food coloring is added, add a a little bit of water (a scant teaspoon at a time), stirring constantly, until it smooths out again (this happened to me, and it smoothed out just fine). Pour the chocolate into a disposable piping bag (or small zip-top bag) and snip the end to make a small opening (you want thin lines, so the smaller hole, the better). The chocolate will immediately want to start pouring out, so tip the end up until you are ready to pipe, and be ready to pipe immediately. Make a pattern across the top. Let the chocolate set before slicing. Use the parchment paper to gently remove the bars from the pan. Cut the cheesecake bars into squares.

Exceptionally quicker and easier than a full cheesecake, these white chocolate raspberry cheesecake bars are luxuriously creamy, perfectly sweet, and swirled with layers of homemade fresh raspberry sauce.

2 teaspoons room-temperature water, divided
1 teaspoon cornstarch
1 and 1/2 cups (205g) fresh or frozen raspberries (do not thaw)
2 Tablespoons (25g) granulated sugar
20 Oreos (about 220g)
5 Tablespoons (75g) unsalted butter, melted
6 ounces (170g) white chocolate, finely chopped
2 8-ounce blocks (16 oz; 450g) full-fat cream cheese, softened to room temperature
1/3 cup (65g) granulated sugar
1 Tablespoon (8g) all-purpose flour
1 teaspoon lemon juice
1 teaspoon pure vanilla extract
1/8 teaspoon salt
2 large eggs, at room temperature

Steps:

  • The raspberry sauce must cool down completely before using, so I recommend making it first. Mix 1 teaspoon water with 1 teaspoon cornstarch in a very small bowl. Set aside. Combine raspberries, granulated sugar, and remaining 1 teaspoon of water together in a small saucepan over medium heat. Stir the mixture as it begins to cook, breaking up some of the raspberries as you stir. Once simmering, add the cornstarch mixture. Continue to stir and allow to simmer for 3 minutes. Remove the pan from heat and press through a fine mesh strainer to remove the seeds. Allow the thin raspberry sauce to cool completely before using. Cover and store for up to 1 week in the refrigerator.
  • Preheat oven to 350°F (177°C). Line the bottom and sides of a 9-inch square baking pan (8-inch is too small) with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
  • In a food processor or blender, pulse the whole Oreos into a fine crumb-you should get about 2 cups of crumbs. Stir the cookie crumbs and melted butter together in a medium size bowl. Press tightly into the bottom of the lined baking pan. Pre-bake for 8 minutes. Remove from the oven and set aside. Leave oven on.
  • Melt the chopped white chocolate in a double boiler or the microwave. If using the microwave: place the white chocolate in a medium heat-proof bowl. Melt in 20 second increments in the microwave, stirring after each increment until completely melted and smooth. Let the warm chocolate cool as you work on the other cheesecake filling ingredients. You can place it in the refrigerator, but just don't let it solidify!
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes. Add the flour, lemon juice, vanilla extract, and salt, then beat until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the 2nd egg is incorporated into the batter, stop mixing. A few small lumps can remain. Pour in the cooled (but still liquid) white chocolate. Beat on low speed just until combined.
  • Pour half of the cheesecake filling onto the crust. It's ok if the crust is still slightly warm. Drizzle half of the raspberry sauce all over the top. Spread remaining cheesecake filling on top. (It's ok if the raspberry sauce has spread to the sides or slightly incorporates into the top layer of cheesecake.) Drizzle remaining raspberry sauce on top, then use a toothpick or knife to gently swirl everything together.
  • Bake for 32-36 minutes or until the cheesecake appears set on top and the edges are lightly browned. The bars will be puffy, but will sink slightly down as they cool. Place pan on a wire rack. Cool for 45 minutes at room temperature, then chill in the refrigerator for at least 3 hours (and up to 1 day) before slicing. If you plan to chill the bars for longer, loosely cover with aluminum foil after 3 hours of chilling.
  • To slice, lift the bars out of the pan as a whole using the parchment overhang on the sides. Cut into squares with a sharp knife. For extra neat squares, wipe the knife clean between each cut.
  • Cover and store leftover cheesecake bars in the refrigerator for up to 1 week.

3 oz. BAKER'S White Chocolate, divided

1/2 cup sugar
1 tsp. vanilla
2 eggs
1/4 cup red raspberry preserves

Steps:

  • Heat oven to 350ºF.
  • Line 8- or 9-inch square pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Mix cookie crumbs and butter; press onto bottom of pan. Melt 2 oz. chocolate as directed on package.
  • Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add melted chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
