Salmon and Cod Gefilte Fish image

Our modern take on the Passover classic transforms this often divisive dish into elegant quenelles made with salmon and cod rather than the traditional carp or pike.

2 tablespoons extra-virgin olive oil
2 medium onions, 1 chopped, 1 quartered
3 carrots, 2 peeled and chopped (2/3 cup); 1 peeled and cut crosswise into thirds
Kosher salt and freshly ground pepper
1 celery stalk, cut crosswise into thirds
1 dried bay leaf
1/2 teaspoon black peppercorns
2 tablespoons kosher fish sauce, such as Red Boat
3 tablespoons matzo meal
1 1/2 pounds skinless salmon fillet
1/2 pound skinless cod fillet, chopped into 1-inch pieces
1 tablespoon Dijon mustard
1 tablespoon sugar
3 tablespoons chopped fresh dill, plus sprigs for serving
3 large eggs
Escarole leaves, lemon wedges, sliced mini cucumbers, halved radishes, matzos, for serving

Steps:

  • Heat oil in a large straight-sided skillet over medium. Add chopped onion and carrots; season with salt and cook, stirring occasionally, until very soft, about 10 minutes. Transfer mixture to a bowl; let cool.
  • Return skillet to medium-high heat (do not wipe clean). Add remaining onion and carrot, celery, bay leaf, and peppercorns; toast until fragrant, about 2 minutes. Add 8 cups water, fish sauce, and 1 tablespoon salt; bring to a boil. Remove from heat. In a small bowl, combine 1/3 cup liquid and matzo meal. Cover skillet.
  • Meanwhile, slice 1/2 pound salmon into 10 strips, each about 1 inch thick and 2 inches long. Place on a plate, season with salt, cover, and refrigerate. Chop remaining 1 pound salmon into 1-inch pieces. Place chopped salmon and cod in a food processor with chopped-onion mixture, matzo-meal mixture, mustard, sugar, and dill. Add 2 1/2 teaspoons salt and 1/2 teaspoon pepper; pulse until combined. In the bowl of a mixer fitted with the paddle attachment, beat eggs on medium speed until foamy, 1 minute. Add fish mixture; beat until fluffy, about 7 minutes. Cover and refrigerate 1 to 4 hours.
  • Scoop fish mixture into 10 half-cup balls; transfer to a parchment-lined rimmed baking sheet. With dampened hands, press a salmon strip into each ball, then shape into an oval. Return liquid in skillet to a simmer. With a spoon, gently drop in fish ovals. Remove from heat; cover and let stand 15 minutes. Refrigerate overnight.
  • Let stand at room temperature about 30 minutes. With a slotted spoon, gently remove gefilte fish. Serve over escarole with lemons, cucumbers, radishes, matzos, and sauces.

Simple Whitefish With Lemon and Herbs image

I can't believe something this simple can taste this good. This was actually my very first time making fish, and it turned out absolutely fabulous! This is another recipe from my favorite cookbook, Eating for IBS by Heather Van Vorous. I actually didn't have any rosemary, so I made it with basil and oregano. Try it with your favorite fresh or dried herbs!

4 white fish fillets, about 1 1/2 lbs total (cod, halibut, etc.--I used haddock)
4 cloves garlic, minced
1 teaspoon dried rosemary or 4 teaspoons fresh rosemary leaves, crushed
1/4 teaspoon white pepper or 1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil
1 large lemon, thinly sliced,seeded,end pieces discarded

Steps:

  • Preheat oven to 450 F and place a heavy baking sheet in oven to preheat as well.
  • Cut 4 large rectangles of foil or parchment paper and place a fish fillet in the center of each piece.
  • Combine remaining ingredients except lemon slices in a small bowl and stir well.
  • Spread mixture evenly over fish, scatter lemon slices on top, and fold the edges of the foil or paper up over each fillet, crimping edges tightly.
  • Place packaged fish on preheated baking sheet and bake 13-15 minutes, until fish is just cooked through.
  • Serve fish in packages.

Gefilte Fish with Beet Horseradish image

White Fish Dumplings
3/4 pound skinless white-fleshed fish fillets, such as trout, yellow pike, halibut, or cod
1/3 cup grated or minced yellow or white onion
1 large egg
2 tablespoons matzo meal
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground white pepper
Beet Horseradish
1 large red beet (about 1/2 pound)
1 to 2 tablespoons grated fresh horseradish
1 1/2 teaspoons distilled white vinegar
1/4 teaspoon sugar
1/4 teaspoon kosher salt
Broth
1 1/2 pounds white fish bones and heads
1 small carrot, coarsely cut up
1/2 rib celery, coarsely cut up
1 large shallot, coarsely cut up
1 teaspoon kosher salt
5 cups water

Steps:

  • To make the dumplings, cut the fish into 1 1/2-inch chunks and place in the freezer for 10 to 15 minutes to freeze partially. Transfer to a food processor and process to as fine a puree as possible. Add the onion, egg, matzo meal, salt, and pepper and continue processing to a paste. Cover and set aside in the refrigerator until quite firm, at least 1 hour or up to overnight.
  • To make the beet horseradish, cook the beet in water to cover until it can barely be pierced, 20 to 30 minutes, depending on the size. Drain and let cool until it can be handled, then peel it while still warm. Grate on the medium-fine holes of a box grater. In a small bowl, combine the grated beet, horseradish, vinegar, sugar, and salt and stir to mix. Set aside at room temperature until ready to use or refrigerate for up to 2 days.
  • To make the broth, combine the fish bones and heads, carrot, celery, shallot, salt, and water in a medium saucepan, adding more water if needed to cover the ingredients. Bring to a boil over high heat and skim off any foam that forms on the surface. Decrease the heat to maintain a brisk simmer, cover partially, and cook until slightly reduced, about 30 minutes. Strain through a fine-mesh sieve into a large pot and bring to a simmer over medium-high heat.
  • To cook the dumplings, with wet hands, form the fish mixture into ovals the size of a very large egg, using about 1/3 cup for each dumpling. Drop them into the broth and bring just to a boil. Cover the pot and simmer, adding more water if necessary to keep the dumplings afloat, until cooked through, about 1 1/2 hours. Transfer the dumplings and broth to a serving bowl, let cool until no longer steaming, and refrigerate until the broth sets into a loose gelée, 3 hours or so.
  • Serve the gefilte fish and gelée cold with the beet horseradish on the side.
