91% less cholesterol • 56% less total fat than the original recipe. Substituting part of the all-purpose flour with whole wheat flour and ground walnuts doubles the fiber and adds a nutty flavor.

1 cup Gold Medal™ whole wheat flour
1/4 cup coarsely ground toasted walnuts
2 teaspoons baking powder
1 teaspoon baking soda
4 egg whites
2 1/4 cups buttermilk
2 tablespoons oil
Cascadian Farm™ frozen organic blueberries
1/4 cup white grape juice
1 tablespoon honey

Steps:

  • In a medium bowl, stir together all-purpose flour, whole wheat flour, walnuts, baking powder, and baking soda. In a large bowl, beat the egg whites with an electric mixer on medium speed until very foamy. Stir in buttermilk and oil. Gradually add flour mixture, beating by hand until smooth.
  • Pour 1 cup of the batter onto grids of a preheated, lightly greased square waffle baker (or 2/3 cup batter for a round waffle baker). Close lid quickly; do not open lid until waffle is done. Bake according to manufacturer directions. When waffle is done, use a fork to lift waffle off grids. Repeat with remaining batter. Serve waffles warm with Cascadian Farm™ Blueberry Sauce.
  • Blueberry Sauce: In a medium saucepan, combine 1 cup Cascadian Farm™ frozen blueberries, 1/4 cup white grape juice, and 1 tablespoon honey. Heat just until bubbles form around edges. Cool slightly. Transfer mixture to a blender. Cover and blend until smooth. Transfer sauce to a serving bowl. Stir in 1 cup Cascadian Farm™ frozen blueberries. Makes about 1 2/3 cups sauce.

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

1/4 cup firmly packed light brown sugar
2 tablespoons wheat germ
4 teaspoons baking powder
1 teaspoon ground cinnamon
Pinch fine salt
2 large eggs
1 1/2 cups milk
1/4 cup unsalted butter, melted
1/4 cup peanut or walnut oil
Maple syrup

Steps:

  • Preheat a waffle iron to medium-high.
  • Whisk the flour with the oats, sugar, wheat germ, baking powder, cinnamon, and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then add the milk, butter, and oil.
  • Gently stir the wet ingredients into the dry ingredients with a wooden spoon, to make a batter. Take care not to overwork the batter, it's fine if there are a few lumps.
  • Pour 1/3 to 1/2 cup of batter per waffle (it depends on the size of your waffle iron) and cook until the outside of the waffle is crisp and inside is cooked through, 3 to 5 minutes. (The time varies depending on the size and spread of a waffle iron). Serve warm with maple syrup. Repeat with remaining batter.

1 cup whole-wheat pastry flour
1 cup mixed whole-grain flours (such as whole wheat, spelt, cornmeal, rye,or buckwheat)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar (optional)
2 cups buttermilk
3 eggs
8 tablespoons (1 stick) butter, melted

Steps:

  • In a large bowl, measure and mix together: 1 cup whole-wheat pastry flour, 1 cup mixed whole-grain flours (such as whole wheat, spelt, cornmeal, rye, or buckwheat), 1 1/2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 tablespoon sugar (optional).
  • In a large measuring cup, measure: 2 cups buttermilk.
  • Whisk in thoroughly: 3 eggs.
  • Pour the buttermilk and egg mixture into the dry ingredients and stir until just mixed. Pour in: 8 tablespoons (1 stick) butter, melted and stir until well mixed. If necessary, thin with more buttermilk: the batter should pour off the spoon. Cook in a preheated waffle iron until crisp and golden.
  • To make waffles with regular milk, increase the baking powder to 2 1/2 teaspoons and omit the baking soda.
