Casserole breads are easy to make and there is not too much fussing and they make DELICIOUS toast. They are also nice with soups. There isn't much kneading, if any, and they smell so good while baking waiting for that soup.

3 cups whole wheat flour
2 (1/4 ounce) packages yeast
2 1/2 cups buttermilk
1/4 cup molasses
1/4 cup honey
1 tablespoon salt
1/3 cup butter
1 1/2 cups rolled oats
2 eggs (beaten)
2 1/2-3 cups white flour

Steps:

  • Combine the whole wheat flour and yeast in a large bowl.
  • Heat the buttermilk, molasses, honey, salt, and butter to 115 degrees and add to the above; mix well.
  • Add the rolled oats, eggs, and enough flour to make it a good consistency.
  • Rise for 1 hour.
  • Shape and put into two 1 1/2 quart casserole.
  • Rise till double--about 45 minutes.
  • Bake at 375 degrees for 25-35 minutes.

12 ounces of whole-wheat pasta shells (or the pasta of your choice but try to get whole-wheat)
3 (7 ounce) cans albacore tuna, packed in water
1 1/4 cups fresh peas (frozen are also okay but fresh peas are much better)
8 ounces fresh sliced cremini mushrooms (also called Baby Bellas)
1 1/2 cups sharp cheddar cheese
2 (10 3/4 ounce) cans condensed mushroom soup
1 cup milk
1/2 cup olive oil mayonnaise (It's usually called Olive Oil Mayo)
1 medium red onion, chopped
1 cup roasted red pepper, chopped
1 tablespoon salt
3 tablespoons dried herbes de provence
3 tablespoons minced garlic (garlic powder will also suffice if that's all you have)
1 tablespoon mccormick crushed chipotle pepper
1/2 cup grated parmesan cheese
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • Cook the pasta in boiling water for 8 minutes. Drain and set aside.
  • In a small bowl, combine the parmesan cheese and Italian bread crumbs and set aside.
  • In a large bowl, combine all of the other ingredients and then stir in the pasta.
  • Pour the mixture into a lightly oiled baking dish (9 x 12 inches) and then spread it evenly.
  • Sprinkle the parmesan and breadcrumb mixture over the casserole.
  • Bake for 45-50 minutes.

I found this recipe in the 4 June 1983 issue of California Farmer magazine (page 29). It looked good, so I tried it. Not only did it become a family favorite, but also won its share of blue ribbons at the county fair. They can be baked, and served, in a casserole dish, hence the name.

Number Of Ingredients 9

1 cup milk
2 tablespoons dark molasses
2 tablespoons sugar
2 teaspoons salt
1/4 cup butter or 1/4 cup margarine
1/2 cup warm water
2 (1/4 ounce) packages active dry yeast
2 1/4 cups whole wheat flour
2 1/2 cups all-purpose flour

Steps:

  • Scald milk.
  • Stir in molasses, sugar, salt and butter or margarine.
  • Cool to lukewarm.
  • Measure water into large bowl.
  • Sprinkle yeast onto water and stir until dissolved.
  • Stir in lukewarm milk mixture.
  • Combine flours in separate bowl.
  • Stir half of flour mixture into liquids.
  • Beat until smooth.
  • Stir in remaining flour.
  • Turn dough out onto lightly floured surface.
  • Knead until smooth and elastic, approximately 10 minutes.
  • Grease bowl.
  • Place dough in greased bowl, turning once to grease top.
  • Cover and place in warm spot to rise until doubled in bulk, about an hour.
  • Punch down and turn out onto lightly floured surface.
  • Divide dough in half.
  • Form 12 inch roll from each half.
  • Cut each roll into 12 equal pieces.
  • Form into balls.
  • Place balls 1/2 inch apart in greased shallow casserole dish OR place in greased round or square pans.
  • Cover and place in warm spot to rise until doubled, about 50 minutes.
  • Bake at 375 degrees, about 25 minutes for casserole dish, about 30 minutes for pans.
