HONEY WHOLE-WHEAT PRETZEL STICKS

- Preheat the oven to 425 degrees F.
- Combine yeast, honey and warm water in the bowl of a stand mixer fitted with the paddle attachment. Let sit for 5 or 6 minutes, or until mixture begins to foam. While yeast mixture is sitting, combine whole-wheat flour, all purpose flour and 2 teaspoons salt in a bowl and whisk to combine. Add flour mixture and oil to yeast mixture and mix on low speed until just incorporated and dough begins to form. Switch to dough hook and mix on low to medium speed for 2 to 3 minutes, or until dough is smooth but still pliable. If the dough is very sticky, add all-purpose flour, by the tablespoon, as necessary.
- Remove the dough from the bowl and roll into a long log. Cut log into 16 pieces and roll each piece into a 10 by 1-inch tube. Spray 2 baking sheets with cooking spray. Twist each dough stick several times and arrange sticks on cookie sheets, about 1 to 1 1/2 inches apart. In a small bowl beat the egg with water and brush on dough. Combine 1 tablespoon salt with sesame seeds and sprinkle evenly among dough pieces. Bake for 18 to 20 minutes, or until a golden crust has formed but pretzels are still soft inside. Remove from oven and cool completely.

Add egg whites, honey and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.3. Bake at 400°F about 18 minutes or until golden brown. Serve warm.

100% WHOLE WHEAT PEANUT BUTTER AND JELLY BREAD
I wanted a 100% whole wheat bread that tasted good with peanut butter and jelly sandwiches and that has a decent rise. This one not only tastes good, it rises more than than white-bread-flour recipe I used to make. It is also soft and freezes well. I make my bread on Sunday, then make and freeze my sandwiches for the week. Each day I take one out of the freezer and Friday's is just as good as the one on Monday. You can use any flavor jelly.

- In a large bowl, combine the water, yeast & honey. Let stand 5 minutes, or until bubbly. Meanwhile, in a small saucepan over low, combine the milk & butter. Heat until warm but not hot. You should be able to comfortably leave your fingers in the mix. Add the sage to the milk, then set aside. To the yeast mix, add the salt, both flours and milk mixture. Use an electric mixer on low to mix until the ingredients form a soft dough. Mix in the apricots until evenly distributed. Let the dough rest in the bowl for 5 minutes. Transfer the dough to a lightly floured surface & knead for 5 minutes or until soft & supple. Transfer the dough to a lightly oiled bowl, cover it with plastic wrap & let rise until doubled, about 30 minutes. Heat oven to 375. Coat a baking sheet with cooking spray. Transfer the dough to a lightly floured surface. Use your fingers to press the dough into a 10x14" rectangle. Cut the dough into 12 strips. Arrange the strips on the prepared pan, twisting them slightly. Let rise for 10 minutes. Bake until golden brown, about 15 minutes.

This was modified (slightly) from How it all Vegan! Whole wheat flour makes it slightly less moist that usual, so if you don't care about the fiber, you might want to just use all-purpose. If you like apricots, this is really yummy.
