Crispy, fluffy, whole wheat waffles are a freezer friendly breakfast for the whole family.

Number Of Ingredients 8

285 grams whole wheat flour (10 ounces, or about 2 cups)
1 1/2 tablespoons baking powder
1/2 teaspoon salt
50 grams brown sugar (about 1/3 cup )
2 large eggs
4 ounces oil (1/2 cup)
18 ounces milk (2 1/4 cups)
1 1/2 teaspoons vanilla extract

Steps:

  • Sift together the flour, baking powder, sugar, and salt into a large bowl. Dump any salt that remains in your sifter into the bowl afterwards.
  • Separate the eggs and set the whites aside.
  • Beat the egg yolks, oil, milk, and vanilla together.
  • Preheat your waffle iron, and turn your oven on to 200°F.
  • Combine the wet and dry ingredients, folding gently until smooth. Set aside.
  • Beat the egg whites until they form stiff peaks.
  • Fold the egg whiles gently into the batter until there are no more white streaks. Do your best to not mix all the air out of the batter.
  • Ladle 1/3 to 1/2 cup of batter onto your waffle maker (this can vary by models), and cook on medium high until they're crispy and golden brown on both sides.
  • Slide cooked waffled onto a baking sheet in the preheated oven until you're ready to serve.

2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg
1 1/2 cups lukewarm milk
1/3 cup melted butter or coconut oil (Can you freeze butter? Yes! Here's how.)

Steps:

  • Preheat waffle iron while you make the waffle batter.
  • Whisk together the flour, baking powder, salt, and sugar.
  • In a separate bowl, whisk together the egg, milk, and butter or oil.
  • Mix together the wet and dry ingredients, stirring just until combined. The batter will be a little bit lumpy. Don't over mix.
  • Cook the waffles as directed in the instructions that came with your waffle iron.

2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, beaten
1 1/2 cups warm milk
1/4 cup melted butter or 1/4 cup oil
1/4 teaspoon vanilla, optionally

Steps:

  • Wisk dry ingredients.
  • Add wet ingredients and mix until just combined. A few lumps are okay, don't over mix.
  • Preheat waffle iron, spray with nonstick cooking spray, and cook waffles according to directions. I have one with 4 square waffles, and I placed 1/3 cup of batter in each square and cooked for about 7 minutes or until the steam stops coming out and the waffles are a bit crispy.
