Sweet Potato-Beet Hash image

Provided by Melissa d'Arabian : Food Network

Categories     side-dish

Time 55m

Yield 4 servings

Number Of Ingredients 6

1 large sweet potato, peeled and cut into 1/4-inch dice
1 large fresh beet, peeled and cut into 1/4-inch dice
1 tablespoon olive oil
Kosher salt and freshly ground pepper
1 slice bacon, cut into lardons
1 small onion, diced

Steps:

  • Preheat the oven to 400 degrees F. Toss the cut sweet potatoes and beets with olive oil and season with salt and pepper. Place on a parchment-lined baking sheet and bake until vegetables are golden, about 25 to 30 minutes, stirring every 10 minutes.
  • Meanwhile, in a medium skillet over medium-low heat, add the bacon and render the fat until the bacon is crispy. Add the onions and season with salt, and continue to cook until the onions start to caramelize and turn golden, about 10 minutes. Add the roasted sweet potatoes and beets to the pan and stir to combine cooking another 5 minutes. Taste and adjust the seasoning, if necessary and serve immediately.

SWEET POTATO HASH

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

3 strips bacon, chopped
3 tablespoons olive oil
2 medium sweet potatoes, about 8 ounces each, peeled and 1/4-inch diced
1/2 cup chopped red onion
2 cloves garlic, thinly sliced
1 tablespoon pickled jalapenos, chopped
1/2 teaspoon ground cumin
Salt and freshly ground black pepper

Steps:

  • In a 13-inch saute pan over medium-high heat, add the bacon and olive oil. When the oil heats and the bacon begins to sizzle, add the sweet potatoes and spread out as much as possible to allow the potatoes to rest in the pan in 1 layer. Leave the potatoes to cook until a quick toss reveals browning on the side in contact with the pan, about 5 minutes. Continue to toss and let stand until most sides of the potatoes are golden and the bacon bits are crisp, 3 to 5 minutes longer. Then add the onions, garlic, jalapenos, cumin and season with a nice pinch of salt and a grind or 2 of pepper. Cook the same way, allowing everything to sit in the heat of the pan for a minute or 2. Taste and re-season if necessary.

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

3 sweet potatoes (about 2 1/2 pounds)
3 tablespoons olive oil
3 cloves garlic, chopped
1 onion, diced
1 red bell pepper, diced
Kosher salt and ground black pepper
4 cups baby spinach
1 tablespoon butter
4 eggs
8 fresh basil leaves, torn or chopped
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.

  • In a large skillet, heat the olive oil over medium heat. Add the garlic, onions and peppers and cook until soft, about 5 minutes. Add the diced sweet potatoes and some salt and pepper; continue to cook, stirring occasionally, until the potatoes are cooked through, 10 to 15 minutes. Turn the heat to low and stir in the spinach.
  • Melt the butter in a large nonstick skillet over medium-high heat and fry the eggs until the whites are set and the yolks are still runny. Spoon the hash onto four plates and top each serving with a fried egg. Garnish with basil and Parmesan.

Yield 4 to 6 servings

Number Of Ingredients 9

2 large sweet potatoes, peeled and cubed into 1-inch cubes
6 tablespoons olive oil, divided
1/2 red onion, chopped
1 red bell pepper, chopped
1/4 cup green onions
2 cloves garlic, chopped
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Add the potatoes to a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with paper towels.

  • Preheat the oven to 400 degrees Fahrenheit and adjust the oven rack to the middle position. You will use the oven at the very end to cook the eggs through.
  • In a large cast iron skillet, heat up 2 tablespoons of the oil. One sizzling, add the sweet potatoes and stir to coat. Cook and stir, uncovered, until the outside of the potatoes begin to turn brown. Add 2 teaspoons of the seasoning and stir again. Cover the skillet and continue cooking until the potatoes are soft throughout. Be sure to take the cover off and give them a stir every 5 minutes so they do not burn. If they are too dry, add a bit more oil. This will take roughly 10-12 minutes.
  • While the potatoes are cooking, add the remaining 1 tablespoon of oil to another skillet and add the bell peppers. Cook and stir, uncovered for 5-7 minutes until they are cooked through. Transfer the bell peppers to the sweet potato mixture.
  • After adding the bell peppers to the sweet potatoes, give everything a nice stir until well combined. Add the bacon and create 4 wells to crack the eggs into. Be sure the wells are deep and wide enough to prevent the yolks from breaking and the whites from running all over the place.
