WHOLE30 SHAKSHUKA CHICKEN
I love shakshuka, a traditional Middle Eastern and Mediterranean breakfast dish of spicy tomato sauce, cooked vegetables and poached eggs. I swapped eggs for chicken to create this tasty (and spicy) chicken shakshuka recipe.

Steps:
- Heat oil in a large pan over medium high heat.
- Add onions and cook for 3-4 minutes until softened, then add mushrooms and cook for another 3-4 minutes before adding zucchini and garlic and cooking for another 3-4 minutes.
- Add harrissa to mixture (start with 1 Tbsp. and adjust to taste - it's very spicy) and add Kosher salt and pepper.
- Add jarred sauce and bring to a slight boil, then lower heat to medium low (simmer).
- Add chicken pieces into the sauce until fully covered, cover and simmer mixture for 10 minutes.
- Uncover and continue cooking on low for 10 minutes.
- Serve immediately

- Heat oil in a large skillet over medium-high heat. Add the onions and bell peppers. Cook for about 10 minutes or until onions become translucent.
- Pour in the tomatoes and stir until well combined with all the spices. Add salt and pepper. Turn down the heat and let simmer until tomatoes thicken.
- Using a wooden spoon, open up small holes in the tomato mixture. Gently crack the eggs into each hole. Cover the skillet and cook until eggs are done to your liking. I cooked mine for 7-8 minutes.

- In a well-heated skillet, saute cubed yams with 1.5 tbsp cooking fat of your choice over medium-high heat . Saute until they’re browned and turn softer. Season with salt and pepper to taste. Add shallots, keep sauting until the shallots turn translucent color.
- Spread out the cubed yams in one layer over the skillet. Add butter chicken sauce. Distribute the sauce evenly.* Slightly warm up the sauce over low heat for about 1-2 minutes. Stir occasionally. Make 3-4 wells and crack the eggs one at a time directly over each well and over the butter sauce mixture, making sure to space them evenly over the sauce.
- Cover the skillet with a lid and cook over low heat until the egg whites are set and the yolks are still soft and little runny (about 6-7 minutes). Keep an eye on the skillet to make sure that the sauce doesn't reduce too much, which can lead to burning.
