WHOLE30 TACO SALAD
A flavorful taco salad that happens to be Whole30, paleo, and low carb. An easy Mexican dinner recipe with seasoned ground meat, guacamole, and pico de gallo.

Steps:
- Make the ground meat: Heat a large skillet over medium heat. Add ground meat and sprinkle taco seasoning over. Brown completely, crumbling with a wooden or metal spatula to incorporate seasoning.
- Make the guacamole: Mash the avocados with the juice of 1 lime and salt to taste. Add in half the red onion and cilantro if desired. Stir.
- Make the pico de gallo: Toss the tomatoes with juice of 1/2-1 lime, salt, the remaining red onion, and a pinch of cilantro, if desired.
- Make the dressing: Combine all ingredients and whisk. Add more almond milk to reach desired consistency, if needed.
- Assemble the salad: Divide lettuce evenly between four bowls then top with ground meat, then guacamole and pico de gallo. Garnish with additional toppings as desired then drizzle with cilantro-lime ranch.

- Start by heating 1 tbs. olive oil in a medium skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft, then add ground turkey meat. Break meat up with spoon and when no longer pink, add in taco seasoning and 1/4 cup water. Bring to a simmer and then turn heat to low.
- In bowls, tear up kale leaves and distribute evenly. Drizzle on 1 tsp. olive oil into each bowl and massage kale leaves to soften. Season with salt and pepper, then top with taco meat and desired toppings. Drizzle with Avocado Lime dressing if using!
- Combine all ingredients except for the water in a small food processor. Add 1 tbs. of water at a time to thin to your desired consistency. Taste for seasoning and adjust salt, pepper or add more jalapeño for more heat!

- Heat 1 tablespoon avocado oil in a large stock pot or dutch oven over high heat. Add the ground beef and brown in batches. If required, add more avocado oil to brown the second batch of beef.
