- Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

- Preheat the oven to 425 degrees F.
- Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
- Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.
PARMESAN BROCCOLI BALLS
I have made this recipe for parties before, and they seem to go quite quickly. These are great warm or cold.

- Place broccoli in a medium saucepan with enough water to cover. Cover, and bring to a boil. Cook 5 minutes. Uncover, and continue cooking 2 to 3 minutes, until tender. Remove from heat, drain, and cool.
- In a large bowl, mix broccoli, stuffing mix, Parmesan cheese, onion, eggs, margarine, pepper, and garlic salt. Cover, and chill in the refrigerator approximately 1 hour, until moisture has been absorbed.
- Preheat oven to 325 degrees F (165 degrees C).
- Roll the chilled mixture into 1 inch balls, and arrange on a medium baking sheet.
- Bake 15 to 20 minutes in the preheated oven, until browned.

- Preheat oven to 400°. Place half of broccoli in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam 3-4 minutes or until crisp-tender. Place in a greased 13x9-in. baking dish; repeat with remaining broccoli., Meanwhile, in a small saucepan over medium heat, melt 4 tablespoons butter. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer., Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. - Drop the broccoli florets into a pan of boiling salted water. Bring back to the boil, cook for 3-5 mins until tender, then drain.
- Melt the butter in a large frying pan and, once sizzling, add the broccoli. Season with salt and pepper and sprinkle in as much of the parmesan as you want to use. Gently stir the florets in the cheese and butter. Scatter on a little more grated parmesan to serve.

- Cook frozen broccoli according to package directions; drain well.
- Combine all ingredients, mixing well.
- Pour mixture into a sheet pan and spread evenly; Refrigerate.
- When firm, roll mixture into small (1 inch) balls.
- Roll balls in Parmesan cheese.
- Freeze.
- To serve: Put frozen broccoli balls in a preheated 350 degree F. oven and bake for 35-40 minutes, or until golden brown.

- Place the frozen broccoli in a microwave-safe bowl and microwave on HIGH for 5-6 minutes; cool and squeeze out any excess moisture with hands, place in a large bowl.
- Add in stuffing mix, Parmesan cheese, cheddar cheese, onion, beaten eggs, seasoned salt, garlic powder, black pepper and cayenne to taste (if using) mix until combined adjusting seasoned salt and pepper to taste.
- Cover and refrigerate for 4 or more hours or until all the moisture is absorbed and the mixture is completely cold.
- Shape into 1 or 1-1/2-inch balls, then place onto greased baking sheet.
- Set oven to 325.
- Bake for 12-15 minutes for 1-inch balls (bake a little longer for 1-1/2-inch balls) or until browned.
- If desired immediately sprinkle finely grated cheddar cheese on top.

- To make the balls: Use a muffin tin greased with the olive oil. While preparing the ingredients: Preheat the oven to 200°C (3920°F).
