CABBAGE AND NOODLES
Cabbage and onion sautéed in bacon fat make a delicious comfort meal when added to buttered noodles.

Steps:
- Cook bacon in a large nonstick skillet until crispy. Remove with a slotted spoon and place on paper towel-lined plate.
- Add onion to bacon grease and cook until it begins to soften, about 2 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add noodles and cook according to package directions. When they are done, drain and place in a large bowl with butter.
- Add cabbage to skillet with bacon grease and cook until tender, about 10 minutes, using tongs to move cabbage around so that it cooks evenly. Add caraway seeds, salt, and pepper.
- Stir cabbage and bacon into noodles and serve.

SPICY CAJUN CABBAGE
I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

- Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
- Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
- Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.

CABBAGE AND NOODLES
A great side dish or a meal on its own. This is a Polish/Hungarian dish. Can use bacon but I cut back on that to make it meatless. Also can garnish with poppy seeds. Adding peas for color and nutrition. Bacon is a yummy addition for those that eat meat. Just brown drain most of the fat then add butter and oil and brown onions. Be sure to give the onions a nice brown color using a med high heat.

- Melt butter and olive oil in pan over med high heat.
- Saute onions till golden brown, 5-10 minutes.
- Add cabbage cook till soft, 15 minutes.
- Mix in noodles and frozen peas; season with lots and lots of pepper and salt to taste. (Key here is lots of pepper.).
- Cook 2 minutes and serve.

CABBAGE AND NOODLES

- Bring a large pot of salted water to a boil.
- Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
- In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.
SPICY CAJUN CABBAGE AND NOODLES
This recipe was a fortunate "accident" I had with leftover cabbage a few years ago but it is so good I find myself craving it. I'm the only one in my family that likes cabbage so I get to eat all of it by myself:)Hope you like it. The seasonings are approximations. This is supposed to be sweet.

Steps:
- Cook the sausage and keep it chopped up like hamburger.
- Add in the cabbage, tomatos, salsa and spices.
- Continue to cook down on low boil for about 15-20 minutes.
- Put one cup water into the mixture with the noodles.
- Cook till the noodles are soft.
- Turn the heat off and cover the pot.
- Allow to set about another 30 minutes before serving.
- The longer this sits, the better it tastes.

- Cook fettuccine as directed on package. Drain and rinse in warm water.

- Combine the spices for the Cajun spice mix in a bowl, then set them aside. Finely shred the cabbage.
- Add the cooking oil to a large pot and heat over medium. Slice the smoked sausage, then add it to the pot. Stir and cook the sausage until it is well browned.
- While the sausage is browning, begin boiling a pot of water for the egg noodles. Once boiling, add the noodles, and continue to boil until they are tender. Drain the noodles in a colander.
