APPLE CINNAMON QUINOA BREAKFAST BOWLS

1/2 cup uncooked quinoa, rinsed and drained
1 cup water
Pinch of salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
2 tablespoons maple syrup
2 tablespoons milk (optional)
1 apple peeled and diced
1 teaspoon melted coconut oil or butter
2 teaspoons maple syrup
1/4 teaspoon ground cinnamon
1/2 cup plain non-fat Greek yogurt
1 teaspoon maple syrup
1/4 teaspoon ground cinnamon
Toasted chopped pecans and toasted coconut flakes

Steps:

  • In a small saucepan, bring the quinoa, salt and water to a boil. Once boiling cover with a lid and reduce the heat to medium. Cook for 12-15 minutes or until the liquid is absorbed (drain remaining liquid if needed. Add in the cinnamon, ginger, nutmeg, maple syrup and milk. Stir together then remove from the heat and let it steam, covered for about 10 minutes.
  • Divide the quinoa into two bowls then add the coconut oil or butter to the saucepan and heat over medium-high heat. Add in the diced apple, maple syrup and cinnamon. Stir together and cook until the apples are tender, about 5 minutes.
  • While the apples cook, whisk together the yogurt, maple syrup and cinnamon.
  • Top the bowls of quinoa with the Greek yogurt mixture, cooked apples, chopped pecans and coconut.

2 teaspoons coconut oil, divided
2 granny smith apples, diced, plus 1, sliced, divided
1 ½ cups quinoa, uncooked, rinsed well
½ cup walnuts, chopped
2 large eggs
3 cups unsweetened almond milk
½ cup applesauce
⅓ cup maple syrup
1 teaspoon vanilla extract
1 tablespoon cinnamon
½ teaspoon ground nutmeg
1 pinch salt

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large cast-iron skillet, melt 1 teaspoon of coconut oil over medium-low heat. Add the diced apples and let caramelize slightly, stirring occasionally, about 5 minutes. Remove the apples from the skillet and set aside.
  • Melt the remaining teaspoon of coconut oil in the skillet, then add the quinoa and cook until it is well browned and smells toasty, about 10 minutes.
  • Return the apples to the skillet, along with the walnuts. Stir to combine, then remove the skillet from the heat and let cool.
  • In a medium bowl, lightly beat the eggs, then add the almond milk, applesauce, maple syrup, vanilla, cinnamon, nutmeg, and salt. Whisk well to combine.
  • Pour the wet ingredients into the skillet with the apple quinoa mixture. Arrange the sliced apple on top in a decorative pattern.
  • Bake for 1 hour, until the liquid is absorbed and the quinoa is tender.
  • Remove from the oven and let cool for at least 15 minutes before serving.

Whether for breakfast or dessert, you can completely justify the butterscotch in this dish because of the protein packed quinoa. I always use Dib's recipe for toasted quinoa #16399 it is perfect for this recipe as the nuttiness produced by toasting compliments perfectly the butterscotch flavour. Update: I've tried to correct the fluid amount several times without success(editing glitches) but it is supposed to read; 150 ml water and 30ml milk.

30 ml light evaporated milk (plus extra for serving)
1 ounce butter
1 ounce brown sugar

Steps:

  • Place the water and milk together in a pan and bring to a boil, add the quinoa and continue to boil until almost all the liquid is absorbed.
  • Reduce the heat and stir in the sugar and butter.
  • Continue to cook gently until thick and syrupy, stirring constantly.
  • Serve hot or cold with a drizzle of evaporated milk.
