  • roll up chicken and wrap with bacon slices --
  • secure chicken with toothpicks.

1/4 cup Dijon mustard
2 tablespoons honey
1 teaspoon dried oregano
1 teaspoon water
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (4 ounces each)
4 sandwich buns, split
1 cup shredded lettuce
8 thin tomato slices

Steps:

  • In a small bowl, combine the first six ingredients. Broil chicken 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°, brushing occasionally with mustard mixture. Serve on buns with lettuce and tomato.

Grilled honey mustard chicken sandwiches are awesome! So delicious!

1/2 cup yellow mustard
1/2 cup honey
1/2 cup Italian dressing
16 slices bacon
8 thin chicken breasts (skinless and boneless)
salt and pepper
4 to 6 slices sliced cheddar cheese
4 hamburger buns
1 tbsp unsalted butter (for the hamburger buns)
1/2 cup mayonnaise (optional, for garnish)

Steps:

  • In a medium-sized bowl or dish, whisk together the honey, mustard and Italian dressing. Reserve about a half a cup of the dressing for slathering on the toasted buns when ready to serve.
  • Place the chicken into the marinade are turn until all cutlets are well coated.
  • Pre-heat oven to 400°F. Place the bacon on 1 (or 2) baking sheets and bake until crisp, about 8 to 10 minutes (time will vary depending on how thick the bacon is). Flipping half way through the baking. Set aside.
  • Meanwhile, turn your grill to medium-high heat.
  • Grill the marinated chicken until nicely browned. Sprinkle salt and pepper over the cutlets on each side as they cook. Brush more of the marinade over the cutlets until they are golden brown and the glaze has slightly caramlized. Remove from the gril.
  • Grill the buns until nicely browned.
  • On a baking sheet, place 4 chicken cutlets, then criss-cross two slices of cooked bacon, and repeat this. Place cheese slices on top. Turn your broiler on high and then cook just until the cheese has melted, about 1 to 3 minutes. Keep and eye on this...don't let them burn!
  • Slather a good layer of the reserved honey mustard dressing on the toasted buns. Add mayonnaise, too, if desired. Place the prepared chicken/bacon/cheese on the buns and serve at once.

4 boneless skinless chicken breasts (about 1 1/4 lb)
4 whole-grain sandwich buns, split
4 slices tomato
4 leaves leaf lettuce

Steps:

  • Heat gas or charcoal grill. In small bowl, mix mustard, honey, oregano and red pepper. Brush on both sides of chicken.
  • Place chicken on grill over medium heat. Cover grill; cook 12 to 15 minutes, brushing frequently with mustard mixture and turning occasionally, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Discard any remaining mustard mixture. Serve chicken in buns with tomato and lettuce.

From Taste of Home. Quick and easy! We enjoy these sandwiches with their tangy honey-mustard sauce. I usually make a bit of additional sauce and mix it with some mayo to spread on the sandwich buns. I also use the lesser amount of cayenne pepper to allow for the little taste buds in our family and often grill the chicken instead of broiling it. Either way, we think they're tasty!

1/4 cup Dijon mustard
2 tablespoons honey
1 teaspoon dried oregano
1 teaspoon water
1/4 teaspoon garlic powder
1/8-1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (1 pound)
4 sandwich buns, split
1 tomatoes, thinly sliced
1 cup shredded lettuce

Steps:

  • In a bowl, combine the first six ingredients.
  • Broil chicken 4 inches from the heat for 3 minutes on each side.
  • Brush with mustard sauce. Broil 4-6 minutes longer or until juices run clear, basting and turning several times.
  • Serve on buns with tomato and lettuce. Yield: 4 servings.
  • **NOTE**.
  • The cooking times in this recipe are from the original recipe - I admit I have never timed the chicken exactly. Depending on the thickness of your chicken breats, your time will vary. In the past, I have found that when I pound the chicken breast flat to an even thickness instead of just using them "as they are" I come closer to the recipe times listed.

  • In bowl or plastic bag combine chicken breasts, olive oil, garlic, Worcestershire sauce, salt and pepper. Shake bag to make sure all the marinade gets evenly mixed and coated over the chicken. For best flavor, marinade the chicken for at least 25 minutes before cooking.
