CREAMY CAESAR DRESSING:
1/3 cup mayonnaise
2 tablespoons sour cream
4 teaspoons chopped onion
4 teaspoons half-and-half cream
1 teaspoon lemon juice
1/4 teaspoon minced garlic
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
Dash pepper

Steps:

  • In a serving bowl, combine the salad mix, nectarines, ham, cilantro, croutons and cheese. In a small bowl, whisk the dressing ingredients; drizzle over salad.

2 garlic cloves
3 tablespoons fresh lemon juice
1 tablespoons Dijon mustard
3/4 cup, plus 3 tablespoons olive oil
1/2 cup freshly grated Parmesan, plus shaved Parmesan for serving
3 heads romaine hearts, sliced lengthwise in 1/2
Salt and freshly ground black pepper

Steps:

  • Preheat grill to medium heat.
  • In a blender, combine the garlic, lemon juice and Dijon mustard. Drizzle in 3/4 cup olive oil to emulsify. Add the Parmesan and pulse.
  • Gently toss the hearts of romaine in remaining olive oil and season with salt and pepper. Grill for 2 minutes, until grill marks appear and the romaine becomes wilted.
  • Remove the lettuce to a cutting board and cut into 2-inch wide strips. Place in a bowl and drizzle with the dressing. Toss to coat and serve warm. Garnish with the shaved Parmesan.

1 cup Greek yogurt
1/4 cup capers, plus more for sprinkling
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 small cloves garlic
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 cup croutons
1 1/2 cups shaved aged Parmesan, or as much as you like
2 tablespoons blended oil
6 heads Little Gem lettuce, quartered and ends trimmed
1/2 large red onion, sliced 1/4-inch thick
1 tablespoon red wine vinegar

Steps:

  • Add the yogurt, capers, lemon juice, Dijon, garlic, 1 1/2 teaspoons salt and 1 teaspoon black pepper to a blender. Turn on the blender and slowly stream in the olive oil until combined, about 1 minute. Pour into a small dish and refrigerate until ready to serve.
  • In a small food processor, dump the croutons and 1/2 cup Parmesan and pulse until in rough bits, then set aside for later.
  • Heat a 14-inch cast-iron skillet over medium heat and add 1 tablespoon blended oil. Once heated add the Little Gem wedges cut-side down and sear until the undersides are medium to dark brown, 3 to 5 minutes. Remove and set aside. (Do this in batches if necessary to not crowd the skillet.)
  • Add the remaining tablespoon blended oil to the same skillet over medium heat. Add the red onions and cook until brown, about 5 minutes. Add the red wine vinegar and cook until the liquid is absorbed, about 30 seconds. Remove from the skillet and place in a small bowl.
  • Use a paper towel to wipe out the skillet, then return to medium-high heat. Add the crouton-cheese mixture and heat until warmed through and evenly browned, about 2 minutes. Remove from the heat.
  • Put a spoonful of dressing on each of 4 to 6 plates and spread in a circle with the back of the spoon. Arrange 4 to 6 pieces Little Gem on each plate. Drizzle with more dressing, then sprinkle on capers, charred onion and thinly shaved Parm all over those babies. Sprinkle your warm cheesy crumbs over the top to finish.

4 bunches baby Romaine or one medium head regular Romaine lettuce
1/2 cup sliced mushrooms
2 tablespoons red wine vinegar
1 teaspoon anchovy paste
6 tablespoons extra-virgin olive oil
1 large red onion, in thin slices
1 1/3 cups toasted croutons
Freshly ground black pepper

Steps:

  • If using baby Romaine, the leaves can be pulled off the core and placed directly in the salad bowl. With a regular head of Romaine, trim any unattractive outer leaves from the lettuce, remove the core, rinse the leaves and dry them. Tear them into bite-size pieces and place them in the salad bowl. Add the mushrooms.
  • Beat together the vinegar and anchovy paste. Beat in two tablespoons of the olive oil and set aside.
  • Beat the remaining four tablespoons of oil in a large skillet. Add the onions and saute over medium high heat until they have just wilted and lost their raw sharpness. Add the croutons and toss in the skillet to coat them lightly with the oil. Remove the skillet from the heat.
  • Add the vinegar, anchovy paste and oil mixture to the skillet, stir, then immediately pour the contents of the skillet over the lettuce. Season with pepper, toss and serve at once.

6 eggs
1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

Steps:

  • Place 6 eggs in a medium saucepan with enough cold water to cover. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

10 cups fresh turnip or beet greens, or savoy spinach (about 2 bunches), bottom stems trimmed
2 tablespoons kosher salt plus more for seasoning
2 cups 1" cubes peeled butternut squash
3 tablespoons extra-virgin olive oil, divided
2 tablespoons vegetable oil
4 ounces thinly sliced country ham or prosciutto, torn into pieces
1 apple, such as Braeburn or Fuji, quartered, cored, thinly sliced
2 tablespoons minced shallot
2 tablespoons (or more) fresh lemon juice
3 tablespoons buttermilk
Coarsely cracked whole black peppercorns

Steps:

  • Gently rub greens with 2 tablespoons salt in a large bowl. Let stand, checking often, until the greens begin to release water and soften, about 15 minutes. Rinse in two changes of cold water. Squeeze greens dry and pat with a kitchen towel; transfer to a clean bowl.
  • Meanwhile, preheat oven to 425°F. Line a rimmed baking sheet with foil. Toss squash with 1 tablespoon olive oil on prepared sheet; season with salt. Roast squash, turning occasionally, until lightly browned and tender, 20-25 minutes. Let cool.
  • Heat vegetable oil in a medium skillet over medium-high heat. Working in batches, add ham and cook until crisp, 1-2 minutes per side. Transfer to paper towels to drain.
