This Sauteed Swiss Chard is a flavorful, easy side dish!

Number Of Ingredients 5

1 bunch swiss chard
1 teaspoon olive oil
2 cloves garlic (minced)
1 tablespoon butter (or to taste)
salt & black pepper (to taste)

Steps:

  • Wash chard and shake dry.
  • Separate stems from leaves. Keeping leaves and stems separate, cut leaves into large pieces and cut stems into 1" pieces.
  • Heat olive oil in a pan over medium heat. Add garlic and cook just until fragrant, about 30 seconds.
  • Add chard stems and cook 5-6 minutes over medium heat. Stir in leaves. Cover and cook an additional 3-4 minutes or until tender stirring occasionally.
  • Remove from heat and stir in butter. Season generously with salt & pepper to taste.

A splash of vinegar adds big flavor to this Wilted Chard with Bacon and Garlic recipe. This quick and easy side dish complements almost any roasted meat dish and it's packed with vitamins to boot!

4 slices bacon (cut into ½ inch pieces)
1 tablespoon butter ((or preferred oil))
1 small red onion (diced)
2 cloves garlic (crushed)
2 tablespoons red wine vinegar
1 bunch chard (washed, dried, with large tough stems removed, and sliced into 1 inch pieces)
sea salt ((to taste))

Steps:

  • Place a double layer of paper towels on a heat resistant plate. Heat a large heavy pot with a cover over medium heat. Add bacon and cook until bacon is crisp and brown, stirring occasionally. Remove bacon with a slotted spoon and place on the prepared plate with the paper towel to drain.
  • Discard all but 1 Tablespoon bacon grease from pot. With pot over medium heat, add the butter and allow pan to reheat. Add the onion slices and cook, stirring occasionally until the onions are translucent with browned edges. Add garlic to pan and cook for two minutes, stirring constantly.
  • Add vinegar to the pan, stirring to scrape up browned bits. Cook until liquid is reduced by half. Add chard and lightly sprinkle with salt. Stir to combine ingredients. Cover to allow chard to wilt for about 30 seconds.
  • Uncover and stir, then replace lid for about 30 seconds. Repeat until chard is wilted as desired. Stir in reserved bacon. Taste and adjust seasoning if necessary.

2 1/2 pounds swiss chard
1 medium onion, chopped
3 cloves garlic, finely chopped
1/4 teaspoon crushed red pepper flakes
3 tablespoons cider vinegar, plus more to taste
Pinch freshly grated nutmeg
1 cup chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Fill a large bowl with cold water. Trim and discard the last 2 inches of the chard stems. Add leaves to water. (If the greens are very dirty wash them in several changes of water.) Lift the greens from the water, and put them in a colander to drain. Roughly chop the greens.
  • In a large Dutch oven or tall sided skillet over medium heat, cook the onion, garlic, red pepper flakes, cider vinegar and nutmeg for about 2 minutes. Add the greens in batches, stirring each batch as they wilt, before adding more. Add 1 cup chicken stock and cook, covered, stirring once or twice, until tender, about 10 minutes. Adjust the seasoning with vinegar, salt and pepper, to taste. Serve immediately.

This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

1 bunch Swiss chard
2 tablespoons olive oil
2 cloves garlic, minced
1 pinch red pepper flakes
salt to taste
1 squeeze fresh lemon juice

Steps:

  • Remove Swiss chard stems and cut into small pieces. Slice leaves into strips. Set both aside.
  • Heat olive oil in a skillet and saute chard stems for 3 to 5 minutes. Add garlic and red pepper flakes; cook until fragrant, about 30 seconds. Mix in chard leaves, cover, and cook until wilted, about 2 minutes. Uncover, stir and cook for 2 minutes longer. Season with salt and squeeze lemon juice on top.

1 large bunch Swiss chard (preferably red variety)
3 quarts water (plus 2 tablespoons red wine vinegar if the chard is of the red variety)
1 tablespoon salt
1/4 cup olive oil
2 tablespoons chopped garlic
1 teaspoon dried red pepper flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Clean the Swiss chard of any dry outer leaves and discard the very bottom of the stem. Cut the chard into 1-inch pieces, shredding as much of the largest pieces as possible. Bring the(and vinegar) to a boil and add the salt. Add the chard and cook 3 to 4 minutes at a simmer. When the chard is tender but still retains some of its bite, remove from the heat, drain, and shock in ice water to stop the cooking process. Drain the chard again and dry on paper towels.
  • In a large saute pan, heat the oil until hot, add the chard, and saute over high heat for a minute before adding the garlic and pepper flakes in quick succession. Cook the chard for 1 to 2 minutes more and then season with salt and pepper, then serve.

SWISS CHARD WITH GARLIC AND ANCHOVIES

2 pounds Swiss chard, with white stalks
2 tablespoons olive oil
4 cloves garlic
1 small can anchovies
Freshly ground black pepper

Steps:

  • Wash the chard. Cut off the white stalks and trim their ends and any discolored portions. Heat the oil in a covered pan and add the garlic and anchovies, allow this to cook until the anchovies have melted into the oil, about 5 minutes. Cut the chard stalks into 1-inch pieces, blanch them in boiling water and refresh under a cold tap. Drain well, add them to the oil and season with the pepper. Cover and cook gently for 10 minutes. If you wish you may add the chard greens at this stage and cook for a further 3 to 5 minutes or you may wish to use the greens for something else.

1 small bunch ruby Swiss chard
1 small bunch green Swiss chard
1 tablespoon olive oil
2 cloves garlic, peeled and thinly sliced lengthwise
Salt and freshly ground pepper

Steps:

  • Remove the stalks from the leaves: Hold the leaf in one hand, and gently pull out the thick stalk with the other. Cut the stalks into 2-inch-long pieces. Stack the leaves, and cut them crosswise into 4-inch-wide strips.
  • Heat the olive oil in a large skillet set over medium-low heat. Add the garlic, and cook just until golden. Remove and reserve the garlic. Add the stalks. Cook, stirring, 2 to 3 minutes to soften slightly. Add 3 tablespoons water, cover, and steam until firm but tender, 4 to 6 minutes.
  • Add leaves, cover, and cook until wilted, about 3 minutes. Sprinkle with the reserved garlic, and season with salt and pepper. Serve warm.

Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

  • Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
  • Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil.
