Frozen winter squash is transformed with dressing, an egg and a hint of sugar and spice in this Healthy Living casserole.

2 pkg. (12 oz. each) frozen winter squash, thawed
1/2 cup MIRACLE WHIP Light Dressing
1 egg
2 Tbsp. brown sugar
1/4 tsp. ground ginger
3/4 cup plain dry bread crumbs, divided

Steps:

  • Preheat oven to 350°F. Mix all ingredients except 1/4 cup of the bread crumbs until well blended.
  • Spoon into greased 1-1/2-qt. baking dish; sprinkle with remaining 1/4 cup bread crumbs.
  • Bake 30 min. or until squash mixture is heated through and top is lightly browned.

When my grown children come home for Thanksgiving, they always ask to make sure this squash puff is on the menu. The family favorite recipe came from my grandmother.-Diane McDuffee, Fort Plain, New York

3 cups mashed cooked winter squash
1 cup sugar
1/2 cup raisins
2 eggs, beaten
1/3 cup nonfat dry milk powder
1/3 cup orange juice
1/4 cup butter, melted
1/2 teaspoon salt

Steps:

  • In a large bowl, combine all ingredients; spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 65-70 minutes or until a thermometer reads 160°.

  • Melt 1 tablespoon of the butter in a small skillet over medium heat. Add the sliced onions, and toss to coat. Sauté until lightly caramelized.
