12 fresh cherrystone clams
3 cups cold water
2 bacon strips, diced
1 small onion, chopped
2 medium potatoes, peeled and finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1 cup whole milk
1/2 cup half-and-half cream

Steps:

  • Tap clams; discard any that do not close. Place clams and water in a large saucepan. Bring to a boil. Reduce heat; cover and simmer for 5-6 minutes or until clams open. , Remove meat from clams; chop meat and set aside. Strain liquid through a cheesecloth-lined colander; set aside., In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Saute onion in drippings until tender., Return bacon to the pan; add clam meat and reserved liquid. Stir in the potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender., Combine flour and milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir in cream; heat through (do not boil).

4 slices bacon, diced
1 ½ cups chopped onion
1 ½ cups water
4 cups peeled and cubed potatoes
1 ½ teaspoons salt
½ teaspoon ground black pepper to taste
3 cups half-and-half
3 tablespoons butter
2 (10 ounce) cans minced clams

Steps:

  • Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp; add onions, and cook 5 minutes. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.
  • Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Do not allow to boil.

1/3 cup salt pork or 3 slices bacon, diced
1/4 cup butter
1 tablespoon oil

1/4 teaspoon paprika
1 bay leaf
1/2 cup all-purpose flour
2 medium potatoes, peeled and cut into 1/2-inch dice

1 cup shucked clams or 2 (10 ounce) cans chopped clams, drained reserving liquid
1/2 cup cream

Steps:

  • Cook first five ingredients together in a large skillet.
  • Add next five ingredients and cook until vegetables are crisp-tender.
  • Stir in flour until well mixed.
  • Cook about five minutes, taking care not to scorch.
  • While the vegetables are cooking, cook potatoes in water, clam juice and any reserved clam juice until tender.
  • Add clams and vegetable mixture to potatoes; cook and stir until thoroughly heated.
  • Stir in cream and serve.

3 dozen littleneck clams, scrubbed
12 cockles, scrubbed
1 large Yukon gold potato, scrubbed
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons canola oil
1 tablespoon canola oil
1/2 pound slab bacon, cut into 1/2-inch dice
1 cup canola oil
2 medium okra, cut into 1/4-inch-thick slices
Kosher salt and freshly ground black pepper
1 cup yellow or white cornmeal
2 tablespoons canola oil
2 shallots, finely diced
1/4 cup finely diced carrot
1/4 cup finely diced celery
2 anchovy fillets in oil, patted dry and chopped
Pinch Calabrian chile flakes or red pepper flakes
2 tablespoons tomato paste
2 cups clam juice
2 tablespoons finely chopped fresh parsley, plus more leaves for garnish
1 teaspoon finely chopped fresh oregano
1 teaspoon finely chopped fresh thyme
1/2 cup creme fraiche
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • For the clams: Bring the wine and 1/2 cup water to a boil in a large saucepan, stir in the littleneck clams, cover and steam until the clams open, about 5 minutes. Discard any clams that do not open. Remove the clams with a slotted spoon and place in a bowl to cool.
  • Bring the broth back to a boil, add the cockles and cook until open, about 5 minutes. Discard any cockles that do not open. Remove with a slotted spoon to a separate bowl (these will be used in their shells as a garnish).
  • Strain the clam broth through a mesh strainer lined with cheesecloth into a bowl. Set aside.
  • Remove the littleneck clams from their shells and coarsely chop.
  • For the potato: Put the potato in a small saucepan, cover with cold water, add 1 tablespoon salt and bring to a boil. Cook until a paring knife inserted into the center meets with some resistance, about 15 minutes. Drain and let cool slightly, about 10 minutes.
  • Heat the butter and oil in a cast-iron or nonstick pan until it begins to shimmer. Cut the potato into a 1/2-inch dice. Add the potato to the pan, season with salt and pepper and cook until lightly golden brown on all sides.
  • For the bacon: Heat the oil in a small pan over medium heat. Add the bacon and cook until golden brown and the fat has rendered, about 10 minutes. Remove the bacon to a plate lined with paper towels.
  • For the fried okra: Heat the oil in a small saucepan until it begins to shimmer. While the oil heats, season the okra with salt and pepper, dredge in the cornmeal. Fry in the oil, in batches if needed, until golden brown and just tender, about 4 minutes. Remove to a plate lined with paper towels and season with salt.
  • For the chowder: Heat the oil in a large saucepan over medium heat. Add the shallots, carrot and celery and cook until soft, about 4 minutes. Add the anchovy and chile flakes and cook for 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly.
  • Add the clam juice and reserved clam broth and bring to a boil. Reduce the heat to low, add the reserved littleneck clams and cook for 10 minutes. Add the parsley, oregano and thyme and cook for 1 minute. Whisk in the creme fraiche and lemon zest until smooth. Season with salt and pepper to taste.
  • Ladle the soup into bowls, top with some of the potatoes, bacon, okra and reserved cockles. Garnish with parsley leaves.

2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed

1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. Freshly ground black pepper
3 cups half-and-half
Crackers, for garnish
1/8 cup chopped chives, for garnish

Steps:

  • Place diced bacon in large saucepan with the butter. Cook on medium heat until almost crisp; add onions, and cook 5 minutes. When onions are translucent, stir in water, clam juice and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered until the liquid has reduced by half. Potatoes should be fork tender. Pour in half-and-half and simmer for a further 5 minutes. Adjust seasoning and add chopped clams just before serving, (otherwise clams will be tough). Garnish with crackers and chopped chives.

This is a mix of several other recipes that I took and made my own. I now live in Idaho so I have to use canned clams.Requested often by my finicky teenage stepdaughter. Usually I make a double recipe as it is gone very soon. This is clam chowder not potato chowder seasoned with clams if you get my meaning. Sometimes I make it thicker by omitting some of the stock and using powdered or cubes of bouillion.

1/2 cup butter
6 slices bacon, chopped
1 large yellow onion, chopped
2 celery ribs, chopped
2 bay leaves
2 garlic cloves, minced
1/8 teaspoon thyme
3 -4 cups chicken stock (or equivalent of bouillion and less water)
4 medium russet potatoes, cubed
1 cup corn
reserved clam juice, from the canned clams
36 ounces canned clams
1 pint heavy cream (half and half for you dieters)
1/2 cup chopped tomato (optional)

Steps:

  • Add 1/4 of butter to stock pot and brown the bacon in the bottom.
  • Once the bacon is done, remove it and save as garnish. Add the remaining butter, onion, celery, thyme, bay leaves, and garlic. Saute till soft.
  • Add the chicken stock, potatoes, corn, and the reserved clam juice. Cook on medium till tender. It will take about 25-30 minutes. If using the bouillion, you will need enough water to cover the potatoes.
  • Add the clams and the cream.
  • Adjust the seasonings with salt and pepper. Thicken it to your taste. I use a slurry of flour and water strained. Then bring to boil making sure you stir so as not to burn the bottom.
  • I like a few fresh pieces of tomato on mine at the last second.
  • Serve with oyster crackers or saltines.
