JUICIEST HAMBURGERS EVER
No more dry, lackluster burgers. These are juicy, and spices can be easily added or changed to suit anyone's taste. Baste frequently with your favorite barbeque sauce. If you find the meat mixture too mushy, just add more bread crumbs until it forms patties that hold their shape.

- Preheat grill for high heat.
- In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.

BACON CHEESEBURGERS
This takes a little more effort than the average cheeseburger, but is well worth it! Serve on buns with your favorite condiments.

Steps:
- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

REALLY EASY BEEFBURGERS
Perfect for getting the kids cooking, these burgers are fun to make, freeze well and are super tasty too

- Flavour the meat: Put the meat in a mixing bowl, then sprinkle over the chilli powder and a little salt and pepper. Mix well with your hands or use a fork. The mild chilli powder gives the meat added flavour without making it too spicy.
- Shape into burgers: Divide the mixture into 4 equal pieces, then shape with your hands into round burgers about the width of the buns, or pack the mixture into large presentation rings (if you have them) placed on a chopping board. You need to press down on the meat to compact it, then carefully lift off the rings - a bit like making sandcastles.
- Now get cooking: Fry the burgers on a hot griddle or grill them outside on the barbecue for 5 mins on each side, turning them carefully with a metal spatula. Take care as hot fat from the meat may spit a little.
- Top with cheese and toast the buns: If you want to make cheeseburgers, put a slice of cheese on top of the burgers when you turn them over and let it melt while the other side cooks. When they are ready, cut the burger baps in half and warm them in the toaster or on the barbecue - take care that you don't burn them.
- Prepare the toppings: Meanwhile, prepare the toppings of your choice. Separate the lettuce into leaves. Then, using a sharp knife, thinly slice the tomato, cucumber and gherkin on a separate board to the one you prepared the burgers on. Peel and finely chop the red onion.
- Assemble and enjoy: Spread a little mayonnaise or ketchup - or both if you like - onto the toasted buns, then top with your burgers and salads of your choice, followed by the remaining half bun.

WOOFER BURGERS
We make these burgers for our 2 woofers, Buddy and Toodee. They have also given me permission to sample at least one patty to make sure they have the right flavor. Our pets are very special to us, they treat us real well and we reciprocate.

Steps:
- In a large bowl, break up ground round.
- Add crushed saltine crackers and using your hands, mix until well mixed.
- Add beaten eggs, garlic powder, salt and pepper, and using your hands, mix until all ingredients are incorporated.
- Divide the mixture into 7 equal amounts (about 3.6 ounces each) and roughly form into patties.
- Using a 3 inch diameter dish with 1 inch sides or a 3 inch diameter cookie cutter, rub interior with some olive oil.
- Place the patty into the dish and using a drinking glass with a smooth bottom, press the patty down until it flattens nicely.
- Turn upside down and remove the formed patty and continue with the remainder patties.
- Preheat a frying pan to medium-high, add 2 tablespoons of olive oil.
- Using a wooden spoon with 1/4 inch round handle, make a hole in the center of each patty.
- Place the patties into the frying pan and cook for about 3 minutes.
- Turn over and continue to cook for another 2 to 3 minutes or until the hole in the center fully closes. The burger is now properly cooked.
- Remove to a platter to cool and serve a portion to the woofers.
WIMPY BURGERS

- Brown celery, onion and pepper in bacon fat until tender.
- Combine all ingredients in sauce pan.
- Cover and simmer until cooked through.
- Place mixture on hamburger buns.
- Place in warm oven until warm.
BBQ BURGERS
Steps:
- Heat a gas or charcoal grill to high. Brush the grill grates with oil.
- For the coleslaw: Combine the carrot, cabbage, onion, vinegar, mayonnaise, oil and sugar in a large bowl. Season with salt and pepper to taste. Let the slaw sit at least 15 minutes before serving.
- For the spice rub: Whisk together the ancho chile powder, paprika, coriander, cumin, mustard powder, oregano, cayenne and 1 teaspoon each salt and pepper in a small bowl.
- For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper. Sprinkle the spice rub on one side of the burgers then brush with oil. Grill, spice rub-side down first, covered, until golden brown and slightly charred, about 4 minutes per side for medium.
- While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
- Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
- Place the burgers on the bottom buns and spoon about 2 tablespoons of the BBQ sauce on each. Top with the sliced pickled jalapenos, some of the coleslaw and the top buns and serve immediately.
