Our Best Waldorf Salad combines fresh celery, granny smith apples, seedless grapes, and pecans to make a fruity, light dish. After these fresh ingredients are chopped and mixed, you can eat them right out of the bowl or serve them on a bed of crisp lettuce. While the recipe calls to dress the salad with mayonnaise, to create a healthier dish, you can swap out the mayonnaise for Greek yogurt. This dish is versatile enough to serve as an appetizer or a light lunch salad. This salad is truly fit for any occasion but is most enjoyable in the summer heat or in the fall when crisp apples are in season.

1 tablespoon lemon juice
1/2 cup celery, chopped
1/2 cup halved green seedless grape
1/2 cup chopped walnuts
1/4 cup raisins
1/2 cup mayonnaise
1 1/2 tablespoons sugar
1/2 teaspoon lemon juice
1/2 cup whipping cream
ground nutmeg (to garnish)

Steps:

  • In a large bowl, sprinkle apples with 1 tablespoon lemon juice.
  • Add celery, grapes, walnuts, and raisins.
  • For dressing--------------.
  • combine mayonnaise and 1/2 tsp lemon juice.
  • Whip cream with sugar until fairly stiff.
  • Fold whipped cream into the mayonnaise mixture.
  • Mix with the apple mixture.
  • Sprinkle with nutmeg.
  • Chill at least one hour before serving.

4 Red Delicious apples, unpeeled, cored and diced
1 golden delicious apple, unpeeled, cored and diced
1 cup celery, finely diced
1 cup walnuts, chopped
1 (5 ounce) can pineapple tidbits, juice reserved
1 (5 ounce) jar maraschino cherries, juice reserved
1 cup Best Foods Mayonnaise (you may need more)

Steps:

  • In a large bowl, put diced apples, diced celery, drained pineapple, chopped cherries (about 1/2 the jar or as desired), and chopped walnuts. In a small bowl, mix together mayonnaise, 3 Tblsp. pineapple juice, and 2 Tblsp. cherry juice. Stir well and add more mayonnaise to get the right consistency. It should be like bottled salad dressing or a tad thinner. Mix with apple mixture, stirring until well coated. Chill, covered until serving time (about 1 hour). I never measure this so the amounts are a guess. You can use more or less of any of the ingredients.

1 cup seedless red grapes, halved
½ cup dried cranberries
½ Granny Smith apple, cored and cubed
¼ cup chopped red onion
½ cup mayonnaise
½ cup vanilla yogurt
2 teaspoons lemon juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread chopped walnuts onto a baking sheet.
  • Roast walnuts in the preheated oven until they are fragrant and browned, 3 to 5 minutes. Remove and let cool.
  • Lightly toss chicken with grape halves, cranberries, apple, walnuts, and onion in a salad bowl. Whisk mayonnaise, vanilla yogurt, and lemon juice in a separate bowl. Pour dressing over salad and toss again to coat.

2 cups uncooked orecchiette or small tube pasta (about 6 ounces)
1/4 cup reduced-fat plain yogurt
2 tablespoons mayonnaise
2 tablespoons 2% milk
4 teaspoons Dijon mustard
1/2 teaspoon dried thyme, optional
1 medium apple, chopped
1 tablespoon lemon juice
1/2 pound thick-sliced deli smoked turkey, cut into bite-sized pieces
1 cup quartered fresh strawberries
1 celery rib, sliced
1/4 cup toasted chopped walnuts, optional

Steps:

  • Cook pasta according to package directions. Drain; rinse with cold water and drain well., Meanwhile, in a small bowl, mix yogurt, mayonnaise, milk, mustard and, if desired, thyme until blended.
