LONG BEACH COLESLAW

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
1/2 red onion, thinly sliced
2 tablespoons garlic, minced
1/2 small head red cabbage, cleaned and cut into 1/8-inch, julienned
1 tablespoon freshly ground black pepper
1 teaspoon sea salt
8 ounces red wine vinegar
2 Iceberg lettuce heads, cleaned and cut into 1-inch pieces
12-ounces blue cheese dressing, thick and chunky

Steps:

  • In medium saute pan over medium heat, add olive oil, onion and garlic, cook for 2 minutes, do not let brown. Add cabbage, pepper, salt, and vinegar. Mix thoroughly, and cook for 3 to 5 minutes until cabbage is tender. Remove to abowl and let chill in refrigerator until cool.
  • In large salad bowl, add Iceberg lettuce and toss with blue cheese dressing.
  • Strain cabbage mixture of any liquid and lightly mix with Iceberg and blue cheese dressing. Add pepper, to taste.

2 tablespoons extra-virgin olive oil
1/2 red onion, thinly sliced
2 tablespoons minced garlic (about 6 cloves)
1/2 small head red cabbage, trimmed and cut into 1/8-inch shreds
Fine sea salt and freshly ground pepper
1 cup red wine vinegar
2 heads iceberg lettuce, trimmed and cut into 1-inch squares
1 cup thick, chunky blue cheese salad dressing (such as Marie's)

Steps:

  • In a large skillet over medium-high heat, combine the olive oil, red onion and garlic and cook 2 minutes (do not brown). Add the cabbage, 1 teaspoon salt, 1 tablespoon pepper and the vinegar and mix thoroughly; cook 3 to 5 minutes, until the cabbage is tender. Transfer to a bowl and let cool to room temperature, then refrigerate 30 minutes.
  • In a large salad bowl, toss the lettuce with the blue cheese dressing. Drain the cabbage and lightly mix with the iceberg and dressing. Add more pepper to taste. Serve immediately.

1 teaspoon salt

  • Stir cream, sugar, vinegar, and salt together in a bowl until sugar and salt have dissolved; cover and refrigerate dressing for 30 minutes to blend flavors. Pour dressing over cabbage in a bowl, toss to combine, and refrigerate until thoroughly chilled, at least 2 hours.

I bought a cookbook at a rummage sale and inside the book was a hand written recipe card for coleslaw- It was written on a card that said "A Taste of Wrightsville Beach" and was written by Susette, who wrote "Tom's favorite" on the back. By the way, Wrightsville Beach is in North Carolina. I had never heard of it before but you learn something new every day. This sounds very good and I wanted to share.

5 cups cabbage, shredded
1/2 cup almonds, toasted
1 1/2 cups dried cranberries
1/4 cup green onion, finely sliced
1/2 cup green bell pepper, finely diced
1/2 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon honey mustard
1 tablespoon honey
salt, to taste
pepper, to taste

Steps:

  • Combine the first 5 ingredients in a bowl.
  • Combine the next 6 dressing ingredients in a separate bowl and whisk to mix.
  • Combine the slaw and dressing just before serving. Keep refrigerated.

1 teaspoon garlic salt
2/3 cup white sugar
1/3 cup garlic-flavored red wine vinegar
1 cup heavy cream
2 tablespoons mayonnaise
4 minced fresh garlic cloves (about 2 tablespoons()
1 lb cabbage, finely shredded (about 8 cups)

Steps:

  • Whisk together all wet ingredients.
  • You can use a cider vinegar if desired and the sugar can be lessened if you desire not such a 'sweet' taste.
  • Pour over 8 cups chopped cabbage (or 1 lb prechopped bag of coleslaw mix).
  • Place in refrigerator and chill overnight.
  • If too 'wet' drain slightly before you serve.
  • Take 2 breath mints after -- maybe 4.
  • NOTE: I marked it Kosher, but I'm not an expert.
