I found this recipe on a library bookmark (believe it or not) and decided to try it out--the result was delicious! If you love the words chocolatey, peanut buttery, sweet and addictive, you'll love these cookies.

1/2 cup butter
2 cups sugar
1/2 cup cocoa
1 dash salt
1/2 cup milk
1 teaspoon vanilla
1/2 cup chunky peanut butter
3 cups quick oats

Steps:

  • combine butter, sugar, cocoa, salt, milk, and vanilla in a saucepan and cook for 5 minutes.
  • stir in peanut butter.
  • remove from heat and add quick oats; mix well.
  • drop from a teaspoon onto wax paper; let cool.

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon table salt
3 tablespoons reduced-calorie margarine, stick-variety
2 tablespoons reduced-fat peanut butter
1/2 cup packed light brown sugar
1/4 cup sugar
1 large egg white
1 teaspoon vanilla extract
cooking spray (2 sprays)

Steps:

  • Combine flour, baking soda and salt in a small bowl; mix well and set aside.
  • Combine margarine and peanut butter in a mixing bowl; beat on medium speed until blended and smooth. Gradually add both sugars and beat until blended; add egg white and vanilla and beat until smooth. While beating on low speed, gradually add flour mixture and mix until just blended.
  • Transfer dough to a large piece of plastic wrap and roll into an 8-inch log. Wrap log in plastic wrap and freeze for 2 hours. (Note: You can make the cookie dough up to 3 days in advance and freeze until ready to bake.).
  • Preheat oven to 350ºF. Coat 2 large baking sheets with cooking spray.
  • Remove cookie dough from freezer and slice crosswise into about twenty-four 1/3-inch-thick slices; place slices 1 inch apart on prepared baking sheets. Bake until golden around edges, about 8 to 10 minutes. Transfer cookies to wire racks to cool completely. Yields 1 cookie per serving.
  • Flavor Booster: Browned margarine has a nutty flavor that enhances a peanut butter cookie. Melt the margarine in a small skillet until it sizzles and just begins to brown. Remove from heat and freeze for 20 minutes, or until firm, before using in recipe.

Steps:

  • Bring margarine, milk, Splenda, and cocoa to a boil in medium saucepan. Boil for 1 minute.
  • Remove from heat. Stir in peanut butter and vanilla until combined.
  • Stir in oats.
  • Drop by spoonfuls on wax paper or parchment paper.
  • Allow to cool completely before eating.

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt

4 tablespoons reduced-fat peanut butter

1 cup butter, room temperature
1 cup sugar
1 cup light brown sugar
3/4 cup peanut butter
2 large eggs
2 teaspoons maple extract (or use vanilla)
2 cups flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1 1/2 cups chocolate chips
1 cup unsalted dry roasted peanuts, chopped

Steps:

  • Set oven to 350 degrees.
  • Line a large cookie sheet/s with parchment paper, then butter the parchment paper or use a cooking spray.
  • In a large bowl beat together the butter with both sugars, maple extract and peanut butter until well blended.
  • Add in the eggs; beat until well combined.
  • In another bowl mix together the flour, cocoa powder, baking powder and salt; add to the creamed mixture; beat until combined.
  • Add in oats, chocolate chips and peanuts; mix until combined.
  • Drop by 2-tablespoonfuls onto prepared baking sheet.
  • With a lightly-floured fork, flatten slightly into about 2-1/2-inch rounds.
  • Bake (one pan at a time) for about 12-14 minutes.
  • Let stand 5 minutes on the baking sheet, then using a spatula transfer cookies to racks to cool (if the cookies are too hot they will break).
