VANILLA BERRY YOGURT PARFAITS

Steps:
- For the fruit: Combine the blueberries, blackberries, strawberries, honey and vanilla extract in a bowl and stir. Let sit for at least 10 minutes.
- For the yogurt: Mix up the yogurt, honey and vanilla in a bowl.
- Layer some of the syrupy fruit on the bottom of 4 small mason jars, then top with a layer of yogurt. Repeat the layers. Serve immediately or chill until ready to serve.

- Combine the pork with 1 tablespoon of the cornstarch in a medium bowl; toss well to soat and set aside. Combine the remaining 1 tablespoon cornstarch, the water, vinegar, sugar, ketchup, and soy sauce in a small bowl; set aside.
- Heat a nonstick wok or a large, deep skillet ower medium-high heat until a drop of water sizzles. Swirl in the oil, then add the pork. Stir-fry until almost cooked through, 2-3 minutes. Add the ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add the bell pepper and pineapple; stir-fry until crisp-tender, about 3 minutes. Add the vinegar mixture and cook, stirring constantly, until the mixture boils and thickens and the pork is cooked just through, 1-2 minutes.
FRUIT AND FIBER PARFAIT - WW FRIENDLY 1 POINT
Great for break, lunch or as a dessert. I really like it with the White Chocolate Cheesecake or Amaretto Cheesecake yogurt, but any flavor will do. There seems to be some questions as to how I arrived at this being 1 pt when others are saying 4 pts. According to the online WW Point Tracker, which is what I track with: 1/2 cup Fiber One cereal = 0 pts; 6 ounces Weight Watcher's 1 point yogurt = 1 pt; 1/4 cup blueberries = 0 pts; 1/2 cup strawberries = 0 pts. Remember, Zaar's nutritional information facts are based on generic "low fat yogurt". I highly recommend you track each item for yourself in your point tracker instead. Hope that helps!

- Place four 10-oz parfait or wine glasses in refrigerator to chill, at least 1 hr ahead.
- Split the vanilla bean and scrape the seeds in one bowl.
- Stir in the yogurt cheese and honey; cover and refrigerate until needed.
- Combine the banana, mango, papaya, and apricots in another bowl; cover and refrigerate until needed.
- To assemble the parfaits, fill each chilled glass with equal amounts of the mixed fruit, alternate with a layer of yogurt mixture, then another layer of fruit, and finish with yogurt.
- Top with granola.
