1 (8 ounce) package yolk-free wide egg noodles
1 teaspoon olive oil
1 lb boneless skinless chicken thighs, trimmed of all fat and cut into 2-inch pieces
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/2 lb plum tomato, seeded and chopped
1/2 lb shiitake mushroom, stemmed and sliced
1 red onion, thinly sliced
1 cup low sodium chicken broth
1/2 dry white wine
2 garlic cloves, minced
1 bunch spinach, cleaned and coarsley chopped
1/4 cup half & half light cream
3 tablespoons grated parmesan cheese

Steps:

  • Cook noodles according to package directions; drain.
  • Meanwhile, heat the oil in large nonstick skillet.
  • Add the chicken.
  • Sprinkle with the thyme, salt and pepper; saute until browned, about 6 minute.
  • Stir in mushrooms, onion, and water.
  • Cook, uncovered, stirring occasionally, until the onion is tender, about 8 minute.
  • Add the tomatoes, broth, wine, and garlic; bring to a boil.
  • Reduce the heat and simmer, covered, 10 min to blend the flavors.
  • Stir in the noodles, spinach, half-and-half, and cheese.
  • Simmer, uncovered, until spinach just begins to wilt.

1/2 cup flour (about 2 1/4 ounces)
1 tablespoon paprika
2 teaspoons garlic powder
8 boneless skinless chicken thighs (about 1 1/2 pounds)
1/2 teaspoon salt
1 tablespoon olive oil
cooking spray
1 medium onion, thinly sliced
5 garlic cloves, minced
1/2 cup dried tropical fruit
1/2 cup orange juice
1/4 cup tequila
1 lime, thinly sliced

Steps:

  • Preheat oven to 400°.
  • Combine first 3 ingredients in a small baking dish. Sprinkle chicken with salt; dredge chicken in flour mixture.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; cook 4 minutes on each side or until lightly browned. Transfer chicken to an 11 x 7-inch baking dish coated with cooking spray. Add onion to skillet; cook 3 minutes. Add garlic to pan, and sauté 1 minute.
  • Combine fruit, juice, and tequila in a microwave-safe dish, and microwave at high 2 minutes. Pour fruit mixture into pan; bring to a boil, scraping pan to loosen browned bits. Cook 1 minute. Pour onion mixture over chicken; top with lime slices. Bake at 400° for 20 minutes or until chicken is done.

Braised Chicken thighs in tomato sauce- tastes great over any type of pasta- I serve it over egg noodles and everyone loves it

Number Of Ingredients 9

4 chicken thighs, on the bone with skin
2 stalks celery, chopped in big pieces
2 large carrots, chopped in big pieces (or some mini carrots cut in half)
1 large onion (chopped in big pieces)
3 garlic cloves, peeled and whole
1 (16 ounce) can chicken stock
2 tablespoons oil
1 (28 ounce) can crushed tomatoes
1/2 cup water

Steps:

  • Heat oil in dutch oven over medium-high heat on stovetop. Put salt and pepper on chicken thighs and place in dutch oven (skin side down first) cook until each side has nice color on it (about 4 minutes each side). Take chicken out and put on a plate. Put a tbsp more oil in dutch oven and turn down to medium heat. Put carrots, celery, onion and garlic in and cook for 8 minutes or until onions are almost translucent. Add Chicken Stock, tomatoes and water and stir until they come to a boil. Put Chicken back in the pot so it is submerged in juices. Put lid on the dutch oven and cook @350 degrees for 2 hours 15 minutes and then turn oven off but leave the dutch oven in the oven for about 1 hour or more (it continues to cook). Remove pot from oven and serve over pasta-tastes good with egg noodles (chicken should be falling off the bone).

4 (5 ounce) skinless bone-in chicken thighs
1 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon black pepper
1 medium onion, halved and sliced
2 garlic cloves, thinly sliced
1 teaspoon fennel seed
1 teaspoon dried ancho chile powder
1 teaspoon dried oregano
1 teaspoon packed brown sugar
3/4 cup strong brewed coffee
2 teaspoons balsamic vinegar

Steps:

  • Sprinkle chicken with garlic powder, salt and pepper.
  • Spray large deep nonstick skillet with nonstick spray and set over medium-high heat. Add chicken and cook, turning once, until browned, about 6 minutes. Transfer to plate.
  • Add onion, garlic, fennel seeds, chili powder, oregano and brown sugar to skillet and stir to blend. Reduce heat to low, cover, and cook, stirring occasionally, until onion is tender, 8 minutes.
  • Add coffee and vinegar and bring to a boil.
  • Place chicken thighs on top on onion mixture.
  • Reduce heat to low, cover, and simmer 10 minutes.
  • Turn chicken thighs and simmer until chicken is tender and cooked through, about 10 minutes.
