Steps:
- Cook noodles according to package directions; drain.
- Meanwhile, heat the oil in large nonstick skillet.
- Add the chicken.
- Sprinkle with the thyme, salt and pepper; saute until browned, about 6 minute.
- Stir in mushrooms, onion, and water.
- Cook, uncovered, stirring occasionally, until the onion is tender, about 8 minute.
- Add the tomatoes, broth, wine, and garlic; bring to a boil.
- Reduce the heat and simmer, covered, 10 min to blend the flavors.
- Stir in the noodles, spinach, half-and-half, and cheese.
- Simmer, uncovered, until spinach just begins to wilt.

Steps:
- Preheat oven to 400°.
- Combine first 3 ingredients in a small baking dish. Sprinkle chicken with salt; dredge chicken in flour mixture.
- Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; cook 4 minutes on each side or until lightly browned. Transfer chicken to an 11 x 7-inch baking dish coated with cooking spray. Add onion to skillet; cook 3 minutes. Add garlic to pan, and sauté 1 minute.
- Combine fruit, juice, and tequila in a microwave-safe dish, and microwave at high 2 minutes. Pour fruit mixture into pan; bring to a boil, scraping pan to loosen browned bits. Cook 1 minute. Pour onion mixture over chicken; top with lime slices. Bake at 400° for 20 minutes or until chicken is done.

BRAISED CHICKEN THIGHS
Braised Chicken thighs in tomato sauce- tastes great over any type of pasta- I serve it over egg noodles and everyone loves it

- Heat oil in dutch oven over medium-high heat on stovetop. Put salt and pepper on chicken thighs and place in dutch oven (skin side down first) cook until each side has nice color on it (about 4 minutes each side). Take chicken out and put on a plate. Put a tbsp more oil in dutch oven and turn down to medium heat. Put carrots, celery, onion and garlic in and cook for 8 minutes or until onions are almost translucent. Add Chicken Stock, tomatoes and water and stir until they come to a boil. Put Chicken back in the pot so it is submerged in juices. Put lid on the dutch oven and cook @350 degrees for 2 hours 15 minutes and then turn oven off but leave the dutch oven in the oven for about 1 hour or more (it continues to cook). Remove pot from oven and serve over pasta-tastes good with egg noodles (chicken should be falling off the bone).

WW COFFEE-BRAISED CHICKEN THIGHS
I got this recipe from my sister. Putting on aar for safe keeping. 1 thigh and 3 tablespoons of sauce (4 servings, 4 Points each) Great served with brown rice or couscous with mushrooms. Enjoy

Steps:
- Sprinkle chicken with garlic powder, salt and pepper.
- Spray large deep nonstick skillet with nonstick spray and set over medium-high heat. Add chicken and cook, turning once, until browned, about 6 minutes. Transfer to plate.
- Add onion, garlic, fennel seeds, chili powder, oregano and brown sugar to skillet and stir to blend. Reduce heat to low, cover, and cook, stirring occasionally, until onion is tender, 8 minutes.
- Add coffee and vinegar and bring to a boil.
- Place chicken thighs on top on onion mixture.
- Reduce heat to low, cover, and simmer 10 minutes.
- Turn chicken thighs and simmer until chicken is tender and cooked through, about 10 minutes.
