Yakitori Chicken Soba Noodle Bowl image

Provided by Delicious Living Contributor

Yield 4 people

Number Of Ingredients 15

1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
8 small bamboo skewers
4 teaspoons low-sodium tamari, divided
4 teaspoons honey, divided
2 tablespoons sesame oil, divided
8 ounces low-sodium soba noodles
4 cups large spinach leaves, stems removed
3 bunches scallions (white and light green parts), sliced on the diagonal into 1-inch pieces
1 pound sliced button or cremini mushrooms
1 (2-inch) piece peeled fresh ginger, minced
3 cloves garlic, minced
1 cup low-sodium chicken broth
1 teaspoon Sriracha or other hot sauce, to taste
1-2 teaspoons toasted sesame oil
Black or brown sesame seeds, for garnish

Steps:

  • Preheat grill or broiler. Thread chicken onto skewers, leaving a bit of space between pieces. If using broiler, place on a rimmed baking sheet lined with foil. Whisk together 2 teaspoons tamari, 2 teaspoons honey, and 1 tablespoon sesame oil. Brush chicken with mixture and season liberally with black pepper. Grill or broil for 5 minutes per side or until cooked through.
  • While chicken is cooking, bring a large pot of water to boil and cook noodles al dente, 5-7 minutes.
  • While water comes to boil, stack spinach leaves, roll into a tight tube lengthwise, and cut crosswise into thin shreds. Heat remaining 1 tablespoon sesame oil in a large skillet over medium-high heat, and cook scallions and mushrooms until tender and lightly browned, about 5 minutes. Add ginger and garlic; stir for 1 minute. Add spinach, broth, remaining tamari, remaining honey, Sriracha, and toasted sesame oil, and cook for 1-2 minutes, until spinach is just wilted. Season to taste with black pepper and additional tamari, if needed.
  • To serve, divide noodles among four bowls and top with broth and vegetables. Place two skewers on each bowl. Sprinkle with sesame seeds, and serve immediately.

CHICKEN YAKITORI RICE BOWLS

Chicken Yakitori Rice Bowls image

Provided by Andrew Zimmern

Categories     main-dish

Time 35m

Yield 3 to 4 servings

Number Of Ingredients 11

1 pound boneless, skinless chicken thighs, each cut into 8 pieces
1/4 cup plus 2 tablespoons sake
2 tablespoons cornstarch
1 cup short-grain rice
1 medium yellow onion
1/4 teaspoon instant dashi (available at Asian markets or from Amazon)
3 tablespoons peanut oil
2 tablespoons mirin
3 tablespoons naturally-brewed soy sauce, such as Kikkoman or Yamasa
2 tablespoons sugar
2 scallions, light and dark green parts only

Steps:

  • Place the chicken thighs in a medium bowl. Add 2 tablespoons of the sake and the cornstarch; stir well with chopsticks or tongs to evenly coat the chicken. Cover and refrigerate while you cook your rice.
  • Rinse the rice in a fine-mesh sieve until the water runs clear. Place the rice in a medium saucepan and add 1 1/2 cups of water (or follow the ratio and cooking instructions on your rice package). Bring to a simmer over medium-high heat. Reduce the heat to low, cover and cook for 20 minutes.
  • Meanwhile, halve the onion and cut into thin slices. Add the instant dashi to 1/2 cup of hot water and stir until it dissolves.
  • Once your rice is cooked, remove from the heat and keep warm.
  • Preheat a large skillet over medium-high heat. Add the peanut oil and swirl to coat. Add the chicken in one layer and cook until browned on both sides, about 4 minutes total. Remove the chicken from the skillet and reserve on a plate.
  • Next, add the onions to the skillet, reduce the heat to medium and cook, stirring, until slightly soft, about 1 minute.
  • Add the mirin, soy sauce, sugar, dashi mixture and remaining 1/4 cup sake to the skillet. Stir and scrape the bottom of the skillet to release any browned bits.
  • Increase the heat to medium-high. Bring to a simmer and add the chicken along with any juices from the plate to the skillet; cook, stirring occasionally, until the liquid reduces to a glaze, about 3 minutes.
  • Meanwhile, thinly slice the scallions, keeping the light and dark green parts separate. Add the light green scallions to the skillet and stir.
  • Place the rice in individual serving bowls. Divide the chicken yakitori over the rice, garnish with the dark green scallions and serve.

YAKISOBA

Yakisoba image

Sponsored by Lea & Perrins®. Yakisoba loosely translates to grilled noodles, but you're not expected to place noodles on the grill. Traditionally, an iron pan is placed over the grill and noodles are cooked on them. The dish's roots are from Chinese lo mein, but with a Japanese flavor twist and a fusion of flavor from Worcestershire sauce. It's a Japanese street food favorite that will quickly become a weeknight favorite in your home.

Provided by Jet Tila

Categories     main-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup Worcestershire sauce, such as Lea & Perrins® Worcestershire Sauce
4 teaspoons ketchup
1 tablespoon sugar
2 teaspoons soy sauce
One 16- to 18-ounce package cooked yakisoba noodles (see Cook's Note)
2 tablespoons neutral-flavored oil
8 ounces skinless pork belly, sliced into thin tiles
3 ounces shiitake mushrooms (2 to 5 mushrooms), sliced
1/2 onion, sliced
1/2 carrot, julienned
4 cabbage leaves, chopped
2 scallions, cut into 2-inch pieces
Freshly ground black pepper
Dried green seaweed flakes (aonori; see Cook's Note)

Steps:

  • Shredded pickled red ginger (beni shoga or kizami beni shoga; see Cook's Note)
  • For the yakisoba sauce: Whisk together the Worcestershire sauce, ketchup, sugar and soy sauce in a small bowl and reserve.
  • For the yakisoba: Place the noodles in a bowl, add about 1 teaspoon of the oil and stir to separate.
  • Heat the remaining oil in a skillet over high heat for 1 to 2 minutes. Add the pork belly and sear on all sides, about 3 minutes. Stir in the mushrooms, onion and carrot and cook until tender but not cooked all the way, 3 to 4 minutes. Add the cabbage and cook until almost tender, about 1 minute. Stir in the scallions and cook until slightly softened, about 30 seconds. Sprinkle in some pepper.
  • Add the noodles to the skillet and lower the heat to medium. Stir to warm and combine the noodles with the vegetables in the skillet for about 30 seconds. Stir in the yakisoba sauce and cook until the sauce is absorbed and distributed, about 1 minute. Plate up and top with the dried green seaweed and pickled red ginger if using.

2 cups carrots, cut into julienne strips
1 medium onion, cut into julienne strips
1 tablespoon freshly grated ginger
3 cloves garlic, minced
½ head napa cabbage, shredded

salt and ground black pepper to taste
4 tablespoons pickled red ginger (beni shoga), or to taste
4 tablespoons kizami nori (dried flaked aonori seaweed), or to taste

YAKITORI CHICKEN

Yakitori chicken image

Enjoy this deliciously sticky chicken made with a sauce of soy, mirin, sake and sugar as part of an easy Japanese banquet. Serve on bamboo skewers

Provided by Elena Silcock

Categories     Dinner, Main course, Supper

Time 40m

Number Of Ingredients 7

100ml soy sauce
100ml mirin
50ml sake
2 tbsp caster sugar
500g boneless and skinless chicken thighs, chopped into 3cm chunks
4 spring onions , each cut into three
4 flat teppo gushi bamboo skewers (available from amazon.co.uk)

Steps:

  • Soak the skewers in a bowl of water while you prepare everything else, to prevent them from burning. Tip the soy, mirin, sake and sugar into a small saucepan, and cook over a medium heat for about 15 mins until the sauce is glossy.
  • Remove the skewers from the water and thread each one with a piece of chicken, followed by a piece of spring onion. Repeat twice more so the skewer is well stacked. Fill all four skewers.
  • Heat a large frying pan over a medium heat - you want to cook the chicken fairly gently so it soaks up the sauce. Put the skewers in the pan, then brush with the sauce. Cook for 10 mins, turning regularly and brushing in all the sauce. Serve immediately.

  • Easy Chicken Yakitori. ChefJackie's yakitori recipe uses chicken thighs, a cut of chicken that tends to stay more moist during the high-temp grill than chicken breast.
  • Tsukune (Japanese Chicken Meatballs) In addition to chicken meat, organs, and skin, chicken meatballs, or tsukune, are common in yakitori restaurants.
  • Yakitori Don. "One of the most popular Japanese dishes," says recipe creator Jana Marko. "The tasty ginger and rice wine marinade can be used for meat or fish.
  • Michelle's Chicken Yakitori. This chicken yakitori recipe calls for just six ingredients, which means the marinade is potent but simple. Marinate for several hours for the best flavor.
  • Beef Yakitori. Yakitori might traditionally be chicken, but you'll find some yakitori restaurants offering beef and pork. The recipe creator, Rayna Jordan, says this marinade is good with pork and chicken, so you can use it for all the yakitori you're making in one night if you want.
  • Salmon Yakitori. The original recipe calls for cooking in a wok or skillet, but you can turn this into traditional yakitori by cutting the salmon fillets into bite-sized pieces and skewering before your grill.
