Gourmet Sweet Potato Supreme image

A sublime dish that will have your guests begging for more! This recipe completely replaced the marshmallow topped sweet potato dish I always made for the holidays.

5 sweet potatoes, baked until tender
1/4 teaspoon salt
1/4 cup butter
2 eggs
2 teaspoons vanilla
1 teaspoon ground cinnamon
1/2 cup white sugar
3 tablespoons heavy cream
1/4 cup butter, at room temperature
1/4 cup flour
3/4 cup firmly packed light brown sugar
1 cup chopped almonds

Steps:

  • Peel and mash sweet potatoes and butter with a hand held mixer or stationary mixer until smooth.
  • In a separate small bowl, mix together eggs, salt, vanilla, cinnamon, sugar and heavy cream until blended well.
  • Slowly add to potato mixture, stirring constantly until completely blended.
  • Place in a greased, baking dish-- I used a souffle dish.
  • In a small food processor, process together the topping ingredients until crumbly.
  • Sprinkle over the sweet potato mixture.
  • Preheat oven to 350 and bake about 30 minutes, until topping is crisp and lightly browned.

4 pounds yams cooked (approximately 2 cups), peeled
1/4 cup butter or margarine, melted
3 tablespoons cream
2 tablespoons brown sugar
1/4 teaspoon cinnamon ground
1/4 teaspoon allspice ground
1/4 teaspoon salt
1 egg
1 (13-ounce) can pineapple chunk packed in own juice, drained (reserve juice)
3 bananas ripe, peeled and sliced
2 tablespoons honey
1/4 cup orange juice concentrate
1/3 cup coconut sweetened flakes

Steps:

  • Heat oven to 350° F. Rice or mash yams. Beat in melted butter or margarine, cream, brown sugar, cinnamon, allspice, salt, and egg. Spread potato mixture in bottom of well greased 1 1/2 -quart shallow baking dish. Top with a layer each of pineapple and bananas. Mix honey, orange juice, and 1/4 cup reserved pineapple juice drizzle over potatoes and fruit. Bake uncovered in oven for 15 minutes. Sprinkle with coconut flakes, completely covering fruit. Return to oven and bake for 15 minutes or until coconut is golden brown.

Salt to taste
2 tablespoons butter
1/2 cup warm milk
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg

Steps:

  • Place the yams in a saucepan and add cold water to cover. Bring to a boil and simmer for 30 minutes or until done. Drain.
  • Peel yams when cool enough to handle. Cut into 1-inch cubes and put them through a food mill or ricer. Put the yams in a saucepan and add remaining ingredients. Blend thoroughly, stirring until blended and hot.
