I created this recipe by tweaking one I already had. I added flax seed, substituted whole-wheat flour for some all-purpose, applesauce for some oil and fat-free milk for whole. My family loved the changes, and now it's a favorite. -Judy Parker, Moore, Oklahoma

Number Of Ingredients 10

1 cup all-purpose flour
1 cup whole wheat flour
3 tablespoons ground flaxseed
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, separated
2 cups fat-free milk
3 tablespoons canola oil
3 tablespoons unsweetened applesauce
Mixed fresh berries and confectioners' sugar, optional

Steps:

  • In a large bowl, combine the flours, flax, baking powder and salt. Combine the egg yolks, milk, oil and applesauce; stir into dry ingredients until just moistened., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with berries and confectioners' sugar if desired., To freeze, arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Transfer to a resealable plastic freezer bag. Waffles may be frozen for up to 2 months., To use frozen waffles: Reheat waffles in a toaster. Serve with berries and confectioners' sugar if desired.

My husband loves to make these waffles on weekends. He usually makes a double batch so that we can freeze the extras and enjoy a healthier version of Eggos on busy weekday mornings. These waffles are low in fat and made from half whole wheat flour, but they taste delicious! My picky kids love them! We got this recipe years ago from Eating Well magazine.

Number Of Ingredients 12

1 cup whole wheat flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups skim milk buttermilk (fat free)
1 large egg, separated
1 tablespoon vanilla extract
1 tablespoon canola oil, plus
more canola oil, for greasing the waffle iron
2 large egg whites
2 tablespoons sugar

Steps:

  • In a large bowl, stir together flours, baking powder, salt, and baking soda.
  • In a separate bowl, whisk together buttermilk, egg yolk, vanilla, and oil.
  • Add to the dry ingredients and stir with a wooden spoon until just moistened.
  • In a grease-free mixing bowl, beat the 3 egg whites with an electric mixer until soft peaks form.
  • Add sugar and continue beating until stiff and glossy.
  • Whisk 1/4 of the beaten egg whites into the batter.
  • With a rubber spatula, fold in the remaining egg whites.
  • Preheat waffle iron.
  • Brush the surface lightly with oil.
  • Fill the iron 2/3 full.
  • Cook for 5-6 minutes, or until the waffles are crisp and golden.
  • Repeat with the reamaining batter, brushing the surface with oil before cooking each batch.

THIS NORWEGIAN WAFFLE RECIPE HAS BEEN THE FAVORITE OF ALL MY RECIPES. ENJOY! WE NEVER EAT THEM WITH SYRUP BUT WITH STRAWBERRY JAM AND MUNSTER CHEESE OR IF U CAN FIND - BROWN NORWEGIAN CHEESE. VANILLA SUGAR CAN BE BOUGHT HERE IN THE USA AT IKEA OR WHOLE FOODS - JUST LEAVE OUT IF YOU DONT HAVE ANY AFTER YOU TAKE THE WAFFLE OFF THE IRON PUT IT ON COOLING RACK. MY KIDS EAT THEM AS FAST AS I CAN MAKE THEM :) THEY ARE ALWAYS THE BEST - FRESH *great and easy recipe to make ahead of time. store in a sealed container in the refrigerator. Waffle maker I use is the heart shaped one by villaware - u can buy it on amazon.

1 teaspoon baking powder
2 tablespoons vanilla sugar (u can find at ikea or whole foods)
2 eggs, seperated
1 3/4 cups whole milk
6 tablespoons of melted butter
4 tablespoons wheat germ (can be added if u like)

Steps:

  • Beat the egg whites with an electric mixer, set aside. beat egg yolks and stir in the milk. beat in flour, baking powder, vanilla sugar, and sugar. add the melted butter.
  • when all combined, fold in the beaten egg whites.
  • serve with strawberry jam and sliced munster cheese or norwegian brown cheese.
