Steps:
- Preheat oven to 350°F.
- Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
- Stir in carrots, apples, raisins and nuts.
- Combine milk, beaten eggs and vanilla.
- Pour liquid ingredients into dry ingredients.
- Stir until ingredients are moistened. DO NOT OVER MIX.
- Fill muffin cups 3/4 full.
- Bake for 15-20 minutes.

- Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper cupcake liners.
- Cover raisins with water in a microwave-safe bowl, and microwave on High for 1 minute to plump. Drain the raisins, and set aside.
- Beat the egg with milk in a bowl, and mix in the bran cereal. Let the mixture stand until the cereal absorbs the liquid, about 5 minutes. Gently mix in the plumped raisins, flour, baking soda, cinnamon, melted butter, shredded apple, mashed banana, and honey, and stir a few times to mix.
- Spoon the batter into the prepared muffin cups, and bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Stir milk and lemon juice together in a bowl; let sit until milk curdles slightly, about 5 minutes. Pour bran cereal into milk mixture and let cereal soften, about 5 minutes more.
- Sift flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and cloves together in a bowl. Beat brown sugar, vegetable oil, egg, and vanilla extract together in another bowl. Stir egg mixture into flour mixture until batter is just-combined.
- Stir bran cereal mixture into batter; fold in raisins. Spoon batter into prepared muffin cups.
- Bake in the preheated oven until browned and set, 16 to 18 minutes.

- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.

- Preheat the oven to 375°F.
- Line two 12-cup muffin pans with paper liners, or coat with cooking spray.
- In a large bowl, combine oat bran, flour, flax seed, wheat bran, baking powder and salt; set aside.
- In a blender of food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda. Blend well.
- Pour orange mixture into dry ingredients.

INSANELY HEALTHY VEGAN BRAN FLAX MUFFINS

Although, I am not vegan my roommate is and I knew I would need her help with the eating. These are sooo delicious! I went into these thinking they would be barely edible, but they ended up being really, really great and (or although) they do taste healthy. So if you don't like healthy food, this may not be the recipe for you!

- Preheat oven to 375°F.
- Line muffin pan with paper liners (12) or coat the muffin tins lightly with cooking spray.
- In a large bowl, combine dry ingredients and set aside.
- Beat the applesauce, eggs, oil, brown sugar, vanilla and orange peel with a fork until well mixed. Note: the liquid ingredients will all fit in a 2c measuring cup with enough room to mix them together.
- Pour into dry ingredients and mix by hand being careful not to over mix.
- Fold in nuts and dried fruit.
- Spoon batter into muffin cups and if desired, sprinkle with a bit of oatmeal flakes.

- Cool in the pan for 5 minutes before placing on a cooling rack.
- Freezes well if placed in a zip lock bag. Just microwave 15-30 seconds to reheat.
