ZA'ATAR POTATO CHIPS RECIPE

Za'atar, a Middle Eastern spice mixture most often made with sumac (a tart spice), sesame seeds, thyme, and oregano, gets a new starring role as a flavor for homemade potato chips. Best of all, it's incredibly easy: just sprinkle store-bought za-atar on the freshly fried chips and you're all set.

Extra-Crunchy Potato Chips (see note)
Kosher salt
1/4 cup store-bought za'atar spice blend (available at specialty food stores and Amazon)

Steps:

While chips are still hot and fresh from the oil, and working in batches if necessary, set in a large paper-towel-lined bowl and season with salt and sprinkle za'atar all over. Using clean hands, toss to coat chips evenly, then transfer to a serving bowl. Cooled chips can be stored in a zipper-lock bag or airtight container for up to 2 days.

Za'atar is a Middle Eastern spice mixture, generally consisting of ground dried thyme, toasted sesame seeds, sumac and salt. It tastes great on roasted potatoes!

Ingredients

1 ½ pounds Yukon Gold potatoes, cut into 1/2-inch cubes
2 tablespoons extra virgin olive oil
2 tablespoons za'atar
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

Line a baking sheet with parchment paper.
Combine potatoes and olive oil in a large bowl and mix well. Sprinkle potatoes with za'atar, salt, and pepper; toss to coat. Transfer potatoes to the prepared baking sheet.
Set baking sheet on the lowest rack of a cold oven and heat the oven to 425 degrees F (220 degrees C). Roast until potatoes are golden brown and tender, 30 to 35 minutes, stirring halfway through.
