An authentic recipe for Za'atar Spice - a flavorful Middle Eastern Spice that can be used to season hummus, baba ganoush, vegetables, meats, etc. (My Egyptian Dad's recipe.)

1 tablespoon dried thyme- crushed (or sub oregano)
1 tablespoon cumin (see instructions about whole or ground)
1 tablespoon coriander
1 tablespoon toasted sesame seeds
1 tablespoon sumac
½ teaspoon kosher salt
¼ teaspoon or more aleppo chili flakes- optional

Steps:

  • Mix all the ingredients together in a small bowl. Store in an airtight container.
  • For the most flavor, toast whole seeds (cumin seeds and coriander seeds) until fragrant, then grind. This will make the most flavorful zaatar. If you don't have whole seeds, feel free to use ground spices.

1 cup picked fresh za'atar or oregano leaves (or 6 tablespoons dried oregano)
3 tablespoons dried marjoram
3 tablespoons toasted sesame seeds
4 teaspoons dried thyme
1 tablespoon ground sumac
1 teaspoon fine sea salt

Steps:

  • If using fresh za'atar or oregano, arrange it on a towel-lined plate and microwave in 15-second intervals, stirring between intervals, until dry and crumbly, 2 to 2 1/2 minutes.
  • Crumble the leaves by hand or in a spice grinder until almost fine (the way dried herbs look), then combine in a medium bowl with the marjoram, sesame seeds, thyme, sumac, and salt. Store in an airtight container for up to 3 months.

  • Simply combine all of the ingredients in a bowl or jar, and stir to combine.
  • For enhanced flavor, warm the spices together in a medium skillet over medium heat, until fragrant and the sesame seeds are starting to turn golden. Remove from the heat and transfer to a bowl to cool. (Skip this step if you will be baking your za'atar on pita bread, which essentially does the same thing.)
  • Store za'atar in an air-tight container at room temperature for up to 1 month.

2 tablespoons sesame seeds, toasted
1 1/2 tablespoons dried thyme leaves
1 tablespoon ground sumac
1 tablespoon dried oregano leaves
1 teaspoon ground cumin
1/2 teaspoon sea salt
1/4 teaspoon lemon seasoning (optional)

Steps:

  • In a small skillet over medium heat, add the sesame seeds and sauté until nicely brown, about 5 minutes, tossing often. Remove from the heat and let them cool off for 10 minutes.
  • Add toasted sesame seeds to a spice grinder and process until fine, about 5 seconds. Transfer to a small bowl and add thyme, sumac, oregano, cumin, salt and lemon seasoning; stir until well blended.
  • Transfer the spice blend to an airtight container and store in a cool, dark place for up to 3 months. Yields 6 tablespoons.
