CHILLI LIME EGGS ON TOAST



Chilli Lime Eggs on Toast image

A totally unique way to use your eggs, this appy will certainly please a few palettes. The ingredient list is a little longer than usual, but hey, its well worth it!

Number Of Ingredients 17

3 eggs
½ cup coconut milk or dairy cream
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon pepper
Couple pinches of chilli flakes
Zest of 1 lime
1 tablespoon lime juice
2 tablespoons butter
¼ cup corn (fresh or frozen)
¼ cup red pepper (small diced)
¼ cup onion (small diced)
Your choice of hearty whole grain cracker...Wasa, ryvita etc.
¼ cup cream cheese
Optional garnishes:
Fresh basil (sliced thin), tomato and avocado (diced)

Steps:

  • In a medium sized mixing bowl whisk together the eggs, coconut milk, cumin, garlic powder, salt, pepper, chilli flakes and lime zest and juice. Give it a good whisk and set aside.
  • Preheat a small pan on medium heat. At the same time, preheat the broiler of your oven or toaster oven. Add the butter, corn, pepper and onion to the pan. Sauté for 3-4 minutes, stirring regularly until lightly browned.
  • Now add the egg mixture and make a frittata/omelette. After 2 - 3 minutes lift the egg with a spatula on one side and tilt the pan so the un-cooked eggs slide under the cooked eggs. Repeat on the other side and then put the pan under the broiler to finish cooking the eggs. If you care to try, you can flip the frittata and finish cooking in the pan.
  • Carefully transfer to a cutting board and cut into bite sized pieces.
  • Now assemble your toasts! Apply some cream cheese on the crackers of choice, top with a piece of the frittata and garnish with the your choice of basil, tomato and/or avocado and enjoy!

  • In 12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 3 minutes. Carefully turn fish over. Cook about 3 minutes longer or until fish flakes easily with fork.
  • In small bowl, mix sauce ingredients. Serve with fish.

4 chicken thighs
1 cup white rice
1 ½ cups chicken broth
2 tablespoons olive oil
½ onion, diced
4 cloves garlic, minced
½ cup fresh cilantro, chopped
1 can black beans, drained
1 lime
salt, to taste
pepper, to taste

Steps:

  • Season both sides of the chicken thighs with salt and pepper.
  • In a large skillet, add the olive oil and place the chicken skin side down for about 5 minutes or until skin is golden brown. Flip the chicken and cook for another 3 minutes.
  • Take the chicken out and add the onions and cook until they're translucent, about 5 minutes.
  • Add the rice, stir to coat in the oil and onions, and toast for 3 minutes.
  • Add the garlic then pour in the chicken stock and place the chicken on top of the rice. Bring to a boil, then cover and simmer for 25-30 minutes, or until rice is cooked.
  • Once cooked, take the chicken out and add in the cilantro, black beans, and the juice of one lime. Mix until well-incorporated.
  • Serve the chicken over rice and garnish with cilantro.
  • Enjoy!

½ cup sour cream
1 tablespoon dry ranch dressing mix
1 medium lime, zested and juiced
3 cups vegetable oil
½ cup all-purpose flour
1 tablespoon taco seasoning mix
⅓ cup water
¼ cup cornstarch

Steps:

  • Drain peppers and reserve 1/4 cup plus 1 teaspoon of brine from the jar. Pat peppers dry with paper towels.
  • Combine sour cream, ranch seasoning, the zest and juice of the lime, and one teaspoon of reserved jalapeño liquid. Stir well and set aside. This could be made up to 3 days ahead.
  • Pour oil in a small saucepan and heat over medium heat to 375 degrees F (190 degrees C).
  • Whisk together flour, taco seasoning, remaining reserved jalapeño juice, and water in a shallow dish until smooth. Toss dried jalapeños in cornstarch until lightly coated and shake off any excess. Coat slices in flour mixture with a fork and allow the excess to drip off.
  • Add several coated slices to the hot oil and fry until golden and crisp, 1 1/2 minutes. Transfer to a paper towel to drain and repeat with remaining jalapeños, in batches. Serve immediately with ranch dip.

I asked my neighbor if there was anything that she would recommend, and she handed me a few mini limes. She said "Use these, and they will ask for more." Boy was she right! This is the recipe for one egg, but it is super easy to double or triple.

1 mini lime
1 teaspoon salt (or to taste)
1 teaspoon ground black pepper (or to taste)
1 large egg
1/4 tablespoon butter (enough to grease the pan) (optional)
1/4 teaspoon ground cayenne pepper or 1/4 teaspoon cayenne chili pepper flakes

Steps:

  • Rub your butter around your pan and put the pan on medium heat, allow the pan to heat up .
  • Cut the mini lime into fourths and set aside. if you would like scrambled eggs, whisk your egg in a bowl with 1/4 cup of milk and the juice if 2 , mini lime slices.
  • When the pan reaches desired temperature, squeeze a slice of lime to flavor the bottom of the pan for the egg. Put the egg in and squeeze another slice on top of the egg. if you are making the scrambled variation, skip adding more lime. Sprinkle the ground cayenne pepper onto the egg and cook the egg.
  • If you are making over easy eggs, watch the egg carefully so that the yolk doesn't cook to much. For scrambled, make sure all ingredients are spread throughout the egg so that you don't end up with some areas being under seasoned, or a pocket of seasonings.
  • When the egg is done, serve and enjoy! With my family, its a hit. I hope you and your family likes it too.
