1 large egg white, lightly beaten
2 tablespoons whole milk
1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1/4 teaspoon each salt, pepper, garlic powder, cayenne pepper and dried oregano
8 boneless skinless chicken breast halves (4 ounces each)
1/4 cup butter, cubed
1 cup shredded part-skim mozzarella cheese
1 can (8 ounces) tomato sauce
1 teaspoon dried basil

Steps:

  • In a shallow bowl, combine egg white and milk. In another shallow bowl, combine the bread crumbs, Parmesan cheese and seasonings. Dip each chicken breast in the egg white mixture, then in the crumb mixture. , In a large skillet; cook chicken on both sides in butter until chicken is golden brown and crispy and juices run clear. Sprinkle with mozzarella cheese. Remove from the heat and cover for 2-3 minutes or until cheese is melted. , Meanwhile, in a small saucepan, combine tomato sauce and basil; cook until heated through. Serve with chicken.

4 bone-in chicken breast halves (12 to 14 ounces each), skin removed
2 cups marinara sauce
1 medium tomato, chopped
1/2 cup Italian salad dressing
1-1/2 teaspoons Italian seasoning
1 garlic clove, minced
1/2 pound uncooked angel hair pasta
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Place chicken in a 4-qt. slow cooker. In a small bowl, combine the marinara sauce, tomato, salad dressing, Italian seasoning and garlic; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender., Cook pasta according to package directions; drain. Serve chicken and sauce with pasta; sprinkle with cheese. Freeze option: Do not cook pasta. Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Cook pasta according to package directions. Place chicken mixture in a large skillet. Heat until a thermometer inserted in chicken reads 165°, stirring occasionally; add a little water if necessary. Serve as directed.

¼ cup fresh lime juice
2 tablespoons sunflower oil
1 jalapeno pepper, seeded and chopped

1 (1 inch) piece fresh ginger root, minced
1 teaspoon ground coriander
2 tablespoons brown sugar
2 tablespoons grated lime zest
6 (6 ounce) skin-on, boneless chicken breasts
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Whisk the soy sauce, lime juice, sunflower oil, jalapeno pepper, garlic, ginger, coriander, brown sugar, and lime zest together in a bowl until the sugar dissolves. Place the chicken into a resealable plastic bag, and pour the marinade overtop. Mix to coat chicken, then seal bag, and refrigerate at least 2 hours.
  • Heat a large, nonstick skillet over medium-high heat. Remove the chicken from the marinade, and shake off excess. Place into skillet, skin-side down, and cook until the skin crisps, about 4 minutes. Turn chicken over, and continue cooking on the other side until no longer pink in the center. Once done, remove the chicken and keep warm. Pour the remaining marinade into a skillet. Dissolve cornstarch in water, and stir into the sauce until thickened and clear. Bring the mixture to a boil, reduce heat to medium-low, and simmer 5 minutes. Serve chicken with sauce.
