Zesty Queso Keto Chicken Soup image

Whether you eat keto or not, this zesty queso keto chicken soup is my new favorite for chilly nights. You can make it in the slow cooker or instant pot and it's creamy, slightly spicy and full of flavor.

2 large boneless skinless chicken breast halves
2 tablespoons taco seasoning
28 ounces petite diced tomatoes (not drained)
1/4 teaspoon kosher salt
2 cups chicken broth
1 cup salsa verde or green salsa
8 ounces cream cheese (softened)
avocado and monterrey jack cheese for topping

Steps:

  • Place chicken, taco seasoning, tomatoes with juices, salt, chicken broth, and green salsa in Instant Pot. Set to manual mode and cook for 10 minutes at high pressure. Allow pressure to release naturally (about 15 minutes), remove and shred the chicken. Set aside.
  • Stir softened cream cheese into the soup in the pot and whisk until fully melted into the soup. Return chicken to the soup and serve with diced avocado and monterrey jack cheese.
  • Place all ingredients in the slow cooker and cook on low for 6 hours or until the chicken is tender and shreds easily. Whisk cream cheese into the broth fully if needed after cooking time is up.

Keto-friendly take on chicken enchiladas without the tortillas. This casserole is easily customized by adding any ingredients you have on hand. Hubby loved it as part of our first week of ketogenic recipes. Makes great leftovers for lunch served cold or hot... a win-win! You can also add sliced olives, tomato, and lettuce, if you like.

Number Of Ingredients 8

1 teaspoon butter, or as needed
4 skinless, boneless chicken breasts, cut into chunks
1 teaspoon taco seasoning mix, or to taste
1 (8 ounce) jar salsa
½ cup sour cream
4 ounces jalapeno peppers, diced
4 ounces shredded Cheddar cheese
4 green onions, sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a baking pan.
  • Heat a pan over medium-high heat. Add chicken and saute until no longer pink in the center and juices run clear, 6 to 8 minutes. Drain excess liquid. Add taco seasoning; toss to coat. Transfer chicken into the prepared baking pan.
  • Mix salsa, sour cream, and jalapenos together in a bowl and pour over the chicken.
  • Bake in the preheated oven until hot, about 25 minutes. Remove from oven and cover with Cheddar cheese. Continue baking until cheese melts, about 5 minutes more.
  • Let casserole cool before cutting into pieces and garnishing with green onions.
