1 (3 pound) whole chicken
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon paprika
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels.
  • Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken.
  • Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and continue roasting to a minimum internal temperature of 165 degrees F (74 degrees C), about 40 minutes more. Let cool 10 to 15 minutes and serve.

6 boneless skinless chicken breasts (about 1 3/4 lb)
1/2 teaspoon salt
1/3 cup mayonnaise or salad dressing
3 tablespoons Dijon mustard
1 tablespoon vegetable oil
1/2 teaspoon pepper
2 cloves garlic, finely chopped
1 lb small red potatoes, each cut into 6 wedges
Chopped fresh chives, if desired

Steps:

  • Heat oven to 350°F. Line broiler pan with foil. Spray rack of broiler pan with cooking spray. Arrange chicken on center of rack in broiler pan; sprinkle both sides with salt.
  • In large bowl, mix mayonnaise, mustard, oil, pepper and garlic; brush about 3 tablespoons mixture on chicken. Add potatoes to remaining mayonnaise mixture; toss. Arrange potatoes around chicken.
  • Bake uncovered 45 to 55 minutes, turning potatoes halfway through cooking, until potatoes are tender and juice of chicken is clear when center of thickest part is cut (170°F). Sprinkle with chives.

2 cans (28 oz. each) stewed tomatoes, undrained
2 cans (15-1/4 oz. each) corn, drained
2 large onions, cut into wedges
1/2 cup KRAFT Zesty Italian Dressing, divided
10 bone-in chicken breasts (3 lb.)
1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
2 Tbsp. chopped cilantro

Steps:

  • Preheat oven to 375ºF. Combine tomatoes, corn, onions and 1/4 cup of the dressing. Pour evenly into two 15x10x1-inch baking pans; spread evenly to cover bottoms of pans. Pour remaining 1/4 cup dressing over chicken in large bowl; toss to coat. Top tomato mixture in each pan with 5 of the chicken breasts.
  • Bake 45 min. or until chicken is cooked through (165ºF).
  • Transfer chicken to serving platter; cover to keep warm. Mix both tomato mixtures in medium bowl. Add cheese and cilantro; stir until well blended. Serve with the chicken.

4 fresh chicken breasts
1 cup cornmeal
1/2 cup white flour
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons olive oil or 4 tablespoons canola oil
1 bell pepper, chopped
1 medium onion, diced
1 garlic clove, mashed
1 (14 ounce) can diced tomatoes, not drained
1 cup rice
butter (pat)

Steps:

  • Put about six cups of water and a small amount of oil in a sauce pan and bring to boil. Add rice and boil for 12 to 15 minutes. Put a pat of butter in a serving bowl. Using a strainer, drain water from rice, add to bowl and toss to lightly coat rice with butter. Cover and hold until serving.
  • Using meat pounder flatten chicken breasts to about ½ inch thick. Coat lightly with corn meal/flour mix and fry to slight brown, about 3 minutes each side. Remove chicken and set aside.
  • Leave remaining oil in skillet, heat still on medium. Add garlic and brown for about one minute. Add peppers and onions, stirring occasionally until softened, about 5 minutes. Add tomatoes and stir to mix well. Add chicken and simmer for about ten minutes.
  • If water is put on when you start it should be boiling by the time chicken is brown. You can then add rice about the time peppers and onions go into skillet and all will be ready about same time.
  • Serve by placing a chicken breast on a bed of rice and adding a liberal serving of the zesty sauce.
  • Makes four servings. For a heartier sauce more oil can be used. For more zest add another bell pepper and/or a little hot pepper like jalapeño.

2 chicken thighs, bone-in
1/2 cup lemon juice
1/2 cup orange juice
1 tablespoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon grated orange zest
1 cup chicken broth
3 russet potatoes
2 tablespoons extra-virgin olive oil
4 tablespoons capers
1/2 cup pitted and chopped black olives
1/2 cup crumbled feta cheese
Kosher salt and freshly ground black pepper
Basil leaves, for garnish
Mint leaves, for garnish
Parsley leaves for garnish

Steps:

  • Chicken:
  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss the chicken with the citrus juices, lemon zest and salt and pepper, to taste. Let sit for a few minutes.
  • In a large saute pan over medium-high heat, add the olive oil. When the oil is hot, remove the chicken from the marinade, shaking off the excess. (Do not discard the marinade.) Season the chicken with salt and pepper, to taste, and sear on both sides in the hot oil. Transfer the chicken to a baking sheet and finish cooking the chicken in the oven. Cook until internal temperature reaches 165 degrees F on an instant-read thermometer, about 10 to 12 minutes. Reheat the same saute pan over medium-high heat. Pour in the marinade and deglaze the pan. Stir with a wooden spoon and scrape up any brown bits on the bottom. Add the orange zest and the chicken broth and simmer to reduce by 2/3.
  • Potatoes: Peel and cut the potatoes into small chunks. Add them to a medium pot over medium heat. Cover with water and bring to a simmer. Cook them until al dente. Drain the potatoes well. Heat a large saute pan over medium-high heat and add 2 tablespoons olive oil. Add the potatoes and saute for 1 to 2 minutes. Turn off the heat and gently stir in the capers, black olives and feta cheese. Season salt and pepper, to taste. Transfer to a serving bowl and garnish with basil, mint and parsley.
  • Arrange the chicken on a serving platter and serve with the potatoes.

1 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander

Steps:

  • Preheat oven to 450°F.
  • Pat chicken dry. Stir together spices, salt, and 1 1/2 teaspoons oil and rub evenly all over chicken. Heat remaining tablespoon oil in an ovenproof heavy skillet (preferably cast iron) over moderately high heat until hot but not smoking, then brown chicken on both sides, about 5 minutes. Transfer skillet to middle of oven and roast chicken, skin side up, until just cooked through, 16 to 18 minutes. Transfer chicken to a plate. Add water to pan and deglaze over high heat, scraping up brown bits. Pour pan juices over chicken.

1/4 cup mayonnaise or salad dressing
1/4 cup zesty Italian dressing

Steps:

  • Heat oven to 375°F. Place chicken, skin sides down, in ungreased rectangular pan, 13x9x2 inches.
  • Mix remaining ingredients. Brush half of mayonnaise mixture over chicken.
  • Cover and bake 30 minutes. Turn chicken; brush with remaining mayonnaise mixture. Bake uncovered about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. (If chicken begins to brown too quickly, cover with aluminum foil.) Discard any remaining mayonnaise mixture.

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, crushed

2/3 cup chopped canned tomato

Steps:

  • Sauce:
  • Heat oil in a medium pan over medium heat. Add onion, garlic and chili flakes. Cook, stirring until the onion begins to soften.
  • Add the remaining sauce ingredients and bring to the boil.
  • Reduce the heat to low and simmer, stirring occasionally for 8 minutes.
  • Preheat oven to 220c.
  • Line a baking tray with foil and spray it with cooking spray.
  • Place the chicken on prepared baking tray, skin side down. Brush with half the sauce.
  • Bake for 8 minutes, turn over, brush with remaining sauce and bake a further 7 minutes or until cooked through.
