Number Of Ingredients 16

Meringue:
1/2 cup unsweetened cocoa powder
3/4 cup hot water
1/2 cup vegetable oil
1 teaspoon vanilla extract
8 egg yolks
1-3/4 cups sifted cake flour
1-1/2 cups sugar
1-1/2 teaspoons baking soda
1 teaspoon salt
8 egg whites (about 1 cup)
1/2 teaspoon cream of tartar
1/4 cup sugar
Frosting:
4 cups whipped cream
1 thick (king-sized) chocolate candy bar

Steps:

  • Combine cocoa powder in hot water in mixing bowl. Stir to dissolve; cool. Preheat oven to 325 degrees. Line bottoms of 3 9-inch round cake pans with parchment (or make 2 cake layers and 12 cupcakes). Add oil, vanilla and egg yolks to cooled chocolate mixture. Whisk until smooth. In large mixing bowl, whisk together flour, sugar, baking soda and salt. Add chocolate mixture to flour mixture and whisk until smooth. To make meringue: In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form. Add sugar and beat on high speed until stiff peaks form. Gradually add meringue to chocolate batter and stir until incorporated. Pour into baking pans and bake 30 minutes, until a pick inserted into the center comes out clean. Cool on wire rack, then remove from pans. Frost between layers, top and sides with whipped cream. Use a vegetable peeler to peel curls off sides of chocolate bar and use to garnish cake.

I have always loved crab cakes and I had some leftover cooked shrimp so I decided to mix it up a bit with Old Bay® seasoning and they turned out to be awesome!

1 pound cooked shrimp, peeled and deveined
1 cup dry bread crumbs
½ cup diced red bell pepper
½ cup diced green bell pepper
1 tablespoon seafood seasoning (such as Old Bay®)
2 teaspoons parsley flakes
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon onion salt
½ teaspoon Italian seasoning
½ teaspoon dry mustard
1 egg
2 tablespoons chipotle mayonnaise
1 teaspoon hot sauce

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
  • Place shrimp in the bowl of a food processor; pulse until shredded.
  • Transfer shrimp to a large bowl and add bread crumbs, bell peppers, seafood seasoning, parsley flakes, salt, pepper, onion salt, Italian seasoning, and dry mustard; mix until well combined.
  • Mix egg, mayonnaise, and hot sauce together in a small bowl. Add to shrimp mixture and mix until fully incorporated. Form into 5 patties and place on a baking sheet.
  • Place under the preheated broiler for 5 minutes. Turn broiler to high and cook until tops are well browned, about 5 minutes longer. Flip shrimp cakes and broil on high until the other sides are browned, about 5 more minutes.

Found this in Prevention magazine and thought it would be a SLIGHTLY healthier treat for my sugar monsters. Haven't made it yet!

3/4 cup unsweetened cocoa powder
1/4 cup sugar
1/2 cup boiling water
1 (16 ounce) package angel food cake mix
1 1/4 cups water
1 tablespoon instant coffee powder
1 1/2 cups nonfat milk
1 (1 1/3 ounce) package whipped dessert topping mix
1 (1 1/2 ounce) package sugar-free instant chocolate pudding mix

Steps:

  • Preheat oven to 350.
  • Line a 15"x10" pan with wax paper.
  • Wisk together cocoa, sugar and boiling water.
  • Cool to lukewarm.
  • Prepare cake mix to pkg. directions, using the water and adding the cocoa mixture.
  • Spread batter evenly in the pan.
  • Bake 20 minutes or till top looks dry.
  • Invert onto large rack.
  • Remove pan and wax paper and let cool.
  • In a medium bowl, dissolve coffee in milk.
  • Add whip topping& pudding mixes.
  • Beat on low speed till moistened, then high speed till soft peaks form.
  • Chill 5 minutes.
  • Cut cake crosswise into thirds, cover each with topping, then stack.
  • (I'll probably skip the stacking and just frost& serve) Chill for 2 hours.

My favorite way to dazzle in a hurry, these shrimp take minutes to make. Full of flavor, they take the center stage at any meal, but I am also known to throw them in a fresh garden salad as well. I do tend to always use the largest shrimp I can get my hands on, they seem to have the best flavor to them! Once complete, feel free to serve immediately over pasta, with warm crusty bread and a garden salad, or with a rice dish. This one compliments them all!

⅓ cup extra-virgin olive oil
3 cloves garlic, sliced
1 teaspoon red pepper flakes
2 teaspoons paprika
2 pounds shell-on deveined jumbo shrimp
¼ cup lemon juice
2 tablespoons chopped fresh basil
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Heat the oil in a large skillet over high heat; cook and stir the garlic in the oil until translucent. Sprinkle the red pepper flakes and paprika into the oil. Add the shrimp and toss to coat. Pour the lemon juice over the shrimp; allow to cook until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, 1 to 2 minutes more. Reduce heat to medium-low; add the basil and toss lightly. Season with salt and pepper to serve.

2 (3.5 ounce) packages non-instant chocolate pudding mix
2 eggs
2 ½ cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 13x9 inch cake pan.
  • Make chocolate pudding according to package directions.
  • Combine chocolate cake mix, chocolate pudding, and eggs and beat for 2 minutes at medium speed of an electric mixer. Pour batter into prepared pan and cover top with the semisweet chocolate chips.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes.
