Taco Baked Ziti image

This recipe is from "Woman's World" magazine, January 24, 2006. This is a great dish for that Tex-Mex flavor. Great for potluck or social occasions with friends.

8 ounces ziti pasta
1/2 lb ground chuck
1/2 teaspoon salt
1/2 teaspoon chili powder
1 (16 ounce) jar salsa (mild, medium, hot)
1 (8 ounce) bottle taco sauce
1 (15 ounce) container ricotta cheese
1 1/4 cups Mexican blend cheese, shredded
2 tablespoons fresh cilantro, chopped
sour cream (optional)

Steps:

  • Preheat oven to 350 degrees. Spray a 1 1/2 quart casserole dish with cooking spray. Cook pasta according to the package directions; drain.
  • Heat skillet over medium heat. Crumble in ground chuck; stir in salt and chili powder. Cook. Stir occasionaly. In large bowl combine salsa and taco sauce; reserve 1/2 cup. Stir beef mixture and reserved pasta into remaining salsa mixture.
  • Place half of pasta mixture into baking dish. Combine ricotta, 1 cup shredded cheese, and cilantro; spread over pasta in dish. Top with remaining pasta mixture; spread with reserved salsa mixture. Cover with foil and bake 40-45 minutes. Uncover and sprinkle with remaining cheese. Bake until cheese is melted, 5-10 minutes. Serve with sour cream.

Baked Ziti with Vodka Sauce image

Tired of every day mac and cheese? Try this easy recipe the family will love!

1 (16 ounce) package ziti pasta
2 pounds ground beef
1 medium onion, chopped
2 tablespoons Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon garlic powder
1 (28 ounce) jar vodka marinara sauce
2 cups shredded mozzarella cheese
1 (16 ounce) package cottage cheese
2 ½ cups milk
6 large eggs
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook at a boil until tender yet firm to the bite, 9 to 11 minutes.
  • While the ziti is cooking, heat a large skillet over medium-high heat. Add ground beef and onion to the hot skillet and cook until beef is browned and crumbly, 5 to 7 minutes. Stir in Worcestershire sauce, oregano, and garlic powder; cook until fragrant, about 1 minute. Drain and discard grease. Stir in marinara sauce.
  • Drain ziti and transfer to the prepared baking dish. Sprinkle 1/2 of the mozzarella cheese over top, then layer with cottage cheese, meat sauce, and remaining mozzarella. Beat milk, eggs, salt, and pepper together in a bowl, and pour over top.
  • Bake in the preheated oven until set and bubbly, about 45 minutes.
