3 tablespoons extra-virgin olive oil
1 medium onion, chopped (about 1 cup)
1 medium-size red bell pepper, thinly sliced
1 pound kielbasa sausage or smoked sausage, cut into 1/4-inch-thick slices
12 ounces sauerkraut (about 3 cups), rinsed, well drained
2 tablespoons Dijon mustard
1 teaspoon caraway seeds
Pinch of cayenne pepper
1/4 cup dry white wine
2 tablespoons chopped fresh parsley
12 ounces ziti pasta

Steps:

  • Heat olive oil in heavy large skillet over medium heat. Add onion and red bell pepper and sauté until almost tender, about 7 minutes. Add sausage and sauté until beginning to brown, about 8 minutes. Mix in sauerkraut, mustard, caraway seeds and cayenne pepper. Sauté until heated through, about 4 minutes. Stir in wine and parsley. Cook mixture 2 minutes longer.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta and return to pot.
  • Add sausage mixture to pasta and toss to coat. Season with salt and pepper.

It's 'old school.' Serve with Jewish rye bread, butter, and horseradish. A good side is mashed potatoes with cheese, milk, and butter to create a rich, creamy, tasty mashed potatoes to go with the dish.

8 ounces pork fatback, diced
2 (16 ounce) packages sauerkraut, drained
2 heads cabbage, cored and sliced into long, thin shreds
5 links kielbasa sausage, cubed

Steps:

  • Cook fatback in a large pot over low heat until the drippings render out, about 45 minutes, stirring often. Stir sauerkraut and cabbage into the pork drippings, bring to a simmer, and cook until cabbage is very tender, about 3 hours. Stir occasionally. Mix kielbasa into the cabbage and kraut; cook 45 minutes to 1 hour to blend flavors.

A nice way to add some ZIP to your ziti, made healthier with whole wheat pasta and part-skim mozzarella! Add a tossed salad to round out the meal!

1 lb ziti pasta (Ronzoni Whole Wheat pasta)
1 1/2 lbs polska kielbasa, sliced diagonally (Hillshire Farms)
2 tablespoons olive oil
1 (26 1/2 ounce) can spaghetti sauce (Hunt's Roasted Garlic)
1/4 cup fresh parsley, chopped
1/2 teaspoon pepper
8 ounces part-skim mozzarella cheese, shredded

Steps:

  • Preheat oven to 350°F (177°C); lightly oil a 13X9 baking pan or grab a non-stick one.
  • Cook pasta per package directions and drain.
  • While pasta cooks, heat oil in a mediun skillet over medium-high heat; Cook kielbasa in skillet until browned on both sides, 5-7 min; drain.
  • In a large bowl, combine the pasta, kielbasa, spaghetti sauce, oregano, salt and pepper and mix well.
  • Pour into the baking pan; sprinkle with parsley and then the mozzarella.
  • Cover lightly with foil and bake in the preheated oven for 30-45 minutes until casserole is bubbly and the cheese is completely melted.
  • For OAMC: Prepare casserole but use a disposable (foil) baking pan; do NOT bake; double wrap casserole in plastic wrap, then in foil wrap and freeze; remove from freezer 24 hours or more in advance of need; remove wrapping and thaw in fridge; once thawed, preheat oven to 350°F (177°C); then cover lightly with foil and bake in the preheated oven for 30-45 minutes until casserole is bubbly and the cheese is completely melted.
