Steps:
- Fry onion in skillet, stir and cook until tender.
- Stir in all other ingredients, and heat to a boil.
- Reduce heat, cover and stir occasionally. Cook until vegetables are tender (ten to fifteen minutes).

- In a wok or frying pan/skillet, heat the oil until a light haze appears, add the garlic and fry until golden brown. Add the boiled rice, stir once, add all the remaining ingredients and stir until thoroughly mixed. Turn on to a serving dish and garnish with thinly sliced cucumber rounds and coriander leaves.

RICE PILAF WITH PEAS (GREECE)

Steps:
- Wash rice & leave to soak for half an hour. Allow to drain. Heat oil in a pot & fry onion till it becomes translucent. Add bay leaves, cinnamon, salt, pepper & rice. Cook until the rice grains become opaque, stirring occasionally. Add peas & stir together until the peas are well coated in oil. Add 4 c water or stock. Bring to a boil, cover & simmer over a low heat until the rice is tender (15 to 20 minutes). Serve with the garnish.
