MARIE'S CHICKEN FRENCH



Marie's Chicken French image

My absolute favorite chicken dish. I have put together bits and pieces of other chicken French recipes and this is the result. Almost failproof, comes out good every time.

1 lb boneless skinless chicken breast
2 eggs
1/4 cup parmesan cheese
1 tablespoon fresh parsley, chopped fine
salt and pepper
1/2 cup flour
1/4 cup olive oil
2 tablespoons butter
1 -2 minced garlic clove
1 cup chicken broth
1/2 cup white wine
1/4 cup lemon juice

Steps:

  • Mix together eggs, cheese and parsley.
  • Between two sheets of plastic wrap, pound chicken thin.
  • Lightly salt and pepper chicken.
  • Dredge chicken in flour, then dip in beaten egg mixture.
  • Fry in olive oil until brown on both sides.
  • Remove chicken to platter.
  • In same skillet, saute garlic lightly, then add wine and bring to boil.
  • Add broth and lemon juice.
  • Lastly, stir in butter.
  • Add chicken back to pan and bring to boil.
  • Simmer for about 3 minutes.

MARIE'S ROAST CHICKEN

Makes a wonderful moist chicken with crispy skin. Vegetables stuffed inside cavity add great flavor.

1 (3 1/2 lb) whole chicken, apprx
1 stalk celery
2 cloves garlic, minced
1 medium onion, sliced
4 sprigs parsley
salt and pepper
4 tablespoons melted butter

Steps:

  • Preheat oven to 450 degrees.
  • Sprinkle salt and pepper inside and outside of chicken.
  • Place celery, garlic, onion and parsley in cavity of chicken.
  • Brush all over with butter.
  • Cut up additional celery and onion and place under chicken.
  • Place in roasting pan and bake at 450 for 15 minutes.
  • Reduce oven heat to 425 and continue roasting until leg pulls apart easily- approximately 45 minutes to an hour more.
  • Drippings make wonderful gravy.

A wee twist on a basic recipe

Steps:

  • Cook the chicken in the oil until brown. Meanwhile cook pasta in boiling water for 10 mins, then add broccoli for a further 8/10 mins until both are cooked through. Drain. Remove chicken from pan, add stock, tomato purée, cheese and cream and stir until combined. Add chicken to pan, then pour this over the pasta and broccoli until coated. Pour into an ovenproof dish. Cover with breadcrumbs, followed by garlic, parsley and grated Parmesan. Bake in oven at 190 degrees for 25/30 minutes, until mixture is bubbling and crumbs are browned.

1 (2 to 3 pound) broiler/fryer chicken, cut up
4 tablespoons butter or margarine, melted
½ cup grated Parmesan cheese
½ cup dry bread crumbs
1 teaspoon paprika
½ teaspoon dried thyme
2 tablespoons sesame seeds

Steps:

  • Dip chicken pieces in butter. Combine remaining ingredients; dip chicken into this crumb mixture. Place on a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle any remaining butter over chicken. Bake at 375 degrees F for 45-55 minutes or until chicken is done.

3 whole boneless skinless chicken breasts halved
1 cup dried bread crumbs
1/4 cup olive oil
1/4 cup low-sodium chicken broth
Grated zest of 1 lemon
3 medium garlic cloves minced
1/4 cup minced fresh parsley
1/2 cup fresh lemon juice
1/2 cup water
1/2 teaspoon dried oregano
1 medium lemon cut into wedges
Parsley sprigs for garnish

Steps:

  • Rinse the chicken in cold water and then roll it in bread crumbs. Spray a skillet with nonstick cooking spray and brown the coated chicken breasts over medium heat about 3 minutes on each side. Transfer the browned chicken to a baking dish. In a small bowl, combine the remaining ingredients, except the lemon and parsley. Pour the sauce over the chicken. Bake the chicken at 325 degrees, uncovered, for 30 minutes until tender. Transfer to a serving platter and spoon sauce over the chicken. Garnish with lemon and parsley. This recipe yields 6 servings.
