Zucchini con Carne image

Living in the land of green chilies and hot peppers, my family has grown to love the flavors of the Southwest. We now have a tradition of buying 50 pounds of chilies every year and roasting them on the grill. It keeps us stocked for the year.

1-1/2 pounds beef stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
2 tablespoons vegetable oil
1-1/2 cups water
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
4 large zucchini, cut into chunks
2 cups whole kernel corn
1 medium onion, cut into wedges
2 cans (4 ounces each) chopped green chilies, undrained
Shredded Monterey Jack cheese
Warmed flour tortillas, optional

Steps:

  • Toss beef with flour until coated. In a Dutch oven over medium heat, brown beef in oil. , Add water, garlic, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 1 hour and 15 minutes or until the meat is tender. Add zucchini, corn, onion and chilies; bring to a boil. , Reduce heat; cover and simmer for 20-30 minutes or until the vegetables are tender. Sprinkle with cheese and serve with tortillas if desired.

Found this one a number of years ago in Texas Highways. I wanted to save safely. This originally was adapted from The Melting Pot: Ethnic Cuisine in Texas. Zucchini can be substituted for the mexican squash.

2 tablespoons vegetable oil
2 lbs pork, cubed
2 cups tomatoes, chopped
1 cup onion, diced
1/2 cup green bell pepper, diced
2 garlic cloves, minced
1 teaspoon ground cumin
2 ears fresh corn or 1 cup frozen corn
1 1/2 lbs mexican squash
salt and pepper

Steps:

  • Brown pork in hot oil in a large skillet; drain.
  • Stir in tomato, onion, bell pepper, garlic and cumin. Cover, reduce heat and simmer for about 15 minutes.
  • Stir in corn, squash and salt. Cover and simmer for about 30 minutes.

1 tablespoon unsalted butter
3 small zucchini
1/4 lb prosciutto, thinly sliced
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 400ºF and spread butter in an 8x8-inch baking pan.
  • In a large saucepan of boiling water cook zucchini until crisp-tender, about 5 minutes.
  • Drain zucchini and cool until they can be handled.
  • Trim ends of zucchini and quarter lengthwise to form spears.
  • Wrap each zucchini spear in a slice of prosciutto and arrange side by side in pan. (Zucchini will be touching).
  • Sprinkle zucchini with parmesan cheese and pepper and bake until lightly browned, 10 to 15 minutes.
  • Serve zucchini warm.

  • In a large skillet heat oil on medium-high. Add the ground beef and break up with spoon. As it is cooking add the chuck roast. Drain any water/grease from the meat and then add the onion and continue to cook until translucent. Add the red pepper and vegetables. Stir in the spices: garlic, chili powder, paprika, cumin, salt, pepper until all the ingredients are well coated.
  • Add the diced tomatoes, tomato paste, and beef broth. When the stew begins to reach a slight boil reduce the heat to simmer. Cover and cook for 30 minutes.
  • If you would like to thicken the broth stir in the cornstarch mix and cook until desired consistency is reached. Serve with your favorite toppings
