3-1/2 cups half-and-half cream, divided
2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons cornstarch
1 package (8 ounces) cream cheese, softened
2 bunches broccoli, cut into florets (about 9 cups)
2 cups shredded cheddar cheese
TOPPING:
1 cup crushed cheese crackers
1/4 cup shredded Parmesan cheese
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large saucepan, combine 3 cups cream, butter and seasonings; bring to a boil. Mix cornstarch and remaining cream until smooth; gradually stir into cream mixture. Return to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Stir in cream cheese until melted. Stir in broccoli., Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheddar cheese. Bake, covered, 30 minutes., In a small bowl, mix topping ingredients; sprinkle over casserole. Bake, uncovered, 15-20 minutes longer or until broccoli is tender and topping is lightly browned.

1 cup sour cream
1-1/2 cups shredded sharp cheddar cheese, divided
1 can (6 ounces) french-fried onions, divided
2 packages (16 ounces each) frozen broccoli florets, thawed

Steps:

  • Preheat oven to 325°. In a large saucepan, combine soup, sour cream, 1 cup cheese and 1-1/4 cups onions; heat through over medium heat, stirring until blended, 4-5 minutes. Stir in broccoli. Transfer to a greased 2-qt. baking dish., Bake, uncovered, until bubbly, 25-30 minutes. Sprinkle with the remaining cheese and onions. Bake until cheese is melted, 10-15 minutes.

36 ounces frozen chopped broccoli, warmed in microwave then drained colander
3 large eggs, beaten
15 ounces campbell's healthy request reduced fat low sodium condensed cream of mushroom soup
2/3 cup light mayonnaise
1 medium yellow onion, grated
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups cheez its cheese crackers, crushed

Steps:

  • Heat oven to 350. Spray a 12-cup casserole dish with nonstick cooking spray.
  • In a large mixing bowl, whisk eggs. Add soup, mayonnaise and onion, and whisk together. Fold in broccoli, cheese and 1/2 cup of the crushed crackers. Spoon into prepared casserole dish. Top with remaining 1 cup crushed crackers.
  • Bake at 350 for 1 hour, then open oven and check casserole when shaken, all but the center should be set. If needed,cook another 5 minutes. Let stand 10 minutes before.
