1-2-3 CHERRY PIE
Couldn't find fresh cherries so I used canned cherry pie filling, a frozen pie crust and a little almond extract. Wow, what a pie this turned out to be.

Steps:
- Pre-heat your oven to 400 degrees.
- Defrost and roll out your thawed pie crust and set aside.
- Mix the pie filling with almond extract and stir completly.
- Place one pie crust in bottom of 8 inch pie pan sprayed with non-stick spray.
- Pour in pie filling and top with other whole pie crust or cut into strips and decorate as disired.
- Fold foil around edges of pie to keep edges from burning.
- Place in pre-heated oven and bake for 35 minutes or until top crust is golden brown.
- Remove from oven, cool and serve with whipped cream or ice cream as desired.
- NOTE: Depending on your brand of pie filling you may need a thickner such as corn startch. If so, stir in a tablespoon of corn startch to about two tablespoons of the juice until desolved and mix in with the rest of the pie filling. Finish and bake as directed. Enjoy!
BEST EVER PIE CRUST
You can double or half the recipe without any problem. This is a simple recipe and very tasty! It will be very flaky.

- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight.
- Roll out dough on a floured counter. Don't over work it. Use as directed in pie recipe.

- It should barely hold together when you squeeze a handful, though the remainder may look quite dry., Shape the dough into a disk about 1" thick, and refrigerate it for 30 minutes or longer; this resting period allows the flour to absorb the water, making the dough easier to roll out.
- If you decide to let the dough chill longer than 30 minutes allow it rest at room temperature for 10 to 15 minutes before rolling, to allow the butter to soften up a bit. , When you're "ready to roll," remove the dough from the fridge.

- Mix the dry ingredients together in a large bowl. Cut the fat into tablespoon sized pieces and add them to the flour mixture. Toss the butter and lard lumps around until they are coated with flour. Use a pastry cutter or your fingers to mix the fats and flour together until you have a mixture with uneven crumbles, some as big a an almond and some as small as peas. Add the water and mix until the mass comes together. Don't worry if it's a little shaggy. It's all right as long as it sticks together.
- Dump the mixture out onto your work surface. Use a bench scraper to gather the crumbs into the mass of dough. Use the heel of your hand to smear the dough away from you a third at a time. You are creating flat layers of flour and butter. After the dough is smeared out gather it back together with the bench scraper, using the scraper to layer the smears on top of each other, creating a mass of dough. Do it again. The dough should come together nicely, but you should still see pieces of butter.
- Divide the dough in half and form into flat discs. Wrap each in plastic wrap and refrigerate for at least an hour and as long as two days. You may also freeze the dough.
