Steps:
- Preheat the oven to 400 degrees and butter a 9x13 inch pan.
- Add buttermilk and 4 tablespoons butter to a liquid measuring cup. Microwave for 20 seconds at a time until butter is mostly melted. Buttermilk should be very warm but you should still be able to touch it without burning your finger (about 110 degrees).
- In a large bowl, combine honey and yeast.
- Whisk in buttermilk and butter mixture.
- Whisk in salt and egg.
- Add 2 1/2 cups flour.
- Mix (by hand, or with an electric hand mixer, or you can do this in the bowl of a stand mixer fitted with a dough hook attachment) until flour is completely incorporated.
- Gradually add more flour, 1/4 cup at a time, until dough comes together just enough to form a ball. (It will stick be quite sticky! You should be able to handle it with heavily floured hands.)
- With floured hands, transfer to a lightly floured surface (be careful not to use too much flour as it will dry out your dough) and knead for 4-5 minutes until dough is smooth and elastic.
- Divide dough into 12 equal-size pieces and roll each into a ball. Place 1 inch apart in prepared pan.
- Cover pan tightly with plastic wrap and let dough rise for 10 minutes in a warm place (I place mine near the preheated oven).
- Uncover, and bake in preheated oven for 15-20 minutes until golden brown on top.
- Brush immediately with remaining 2 tablespoons butter and serve.

Steps:
- Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
- In a microwave-safe bowl (or saucepan, see below), stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F. It will be warm but not hot to the touch. (*Alternately, you can heat the mixture over medium-low heat in a saucepan until it reaches 110°F.)
- Pour the liquid mixture into the large bowl of a stand mixer. Sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
- Add in 3 1/2 cups of flour (not all of the flour) and the salt.
- (See alternate instructions in the notes below for how to knead the dough by hand.) Use the dough-hook to mix in the dry ingredients on medium-low speed until combined. If the dough is sticking to the sides of the bowl, add in 1/4 cup more flour at a time until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch. (Only use up to 4 cups of flour total.) Continue mixing on low speed for 4-5 minutes until the dough is smooth. Then form the dough into a ball with your hands and transfer it to a greased bowl.
- Cover the bowl with a damp towel or paper towel, and let it rise briefly for 15 minutes.
- Gently punch the dough down and divide into 15 equal-sized pieces. Form each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15-20 minutes.
- Uncover and bake for 15 minutes, or until the rolls are lightly golden brown on top and cooked through.
- Transfer the baking dish to a wire cooling rack and brush the tops of the rolls with melted butter.
- Then serve warm and enjoy!
DIVINE ONE-HOUR BUTTERMILK ROLLS
Got this off the internet (somewhere!) a few years ago. Absolutely delicious - they will be gobbled up quickly! You can make them in an hour, but of course the longer you can let them rise, the better!

- Spray your hands with butter or cooking spray, and scoop out a piece of dough (about 2-3 T. size).
- Roll it into a ball in your hands.
- Drop the ball into the pan, and roll it around in the butter.
- Repeat this process with the remaining dough, buttering hands again as needed.
- You will wind up with about 12 rolls.

- Longer is better, of course.

- Place butter, buttermilk, and water into a heat-proof bowl. Microwave until butter is mostly melted and between 115-120 degrees F, about 30-45 seconds.
- In a stand mixer with dough hook attached, place flour, sugar, yeast, and salt, mix to combine. With the mixer running, slowly add warm milk mixture. Increase speed to medium and knead for 4-5 minutes, using a rubber spatula to scrape edges of the bowl. The dough should be slightly sticky but manageable.
- Drop dough onto a lightly floured surface. Shape into an evenly level square, about 9 by 9-inches. Cut into 16 equal portions (don't have to be exact). Shape dough into 15-16 balls, while using excess dough from the 16th portion to add to smaller rounds as needed, and place shaped dough into prepared baking dish.

- Place butter, buttermilk and water into a heat proof bowl. Microwave until butter is mostly melted and between 115-120 degrees F. Mixture will separate, don't worry when you see this. Transfer to bowl of stand mixer with dough hook attached.
- Place 3 cups flour, sugar, yeast and salt into a large bowl, stir to combine. With mixer running on low speed, slowly add flour mixture. Use a rubber spatula to clean sides of bowl as dough is forming. With remaining 1 cup of flour, slowly add little bits at a time so that dough mostly cleans sides of bowl while mixing. I usually only use 1/2 cup of the flour during this step. Use the remaining 1/2 cup to flour countertop. Let dough knead on medium low for 4-5 minutes, using a rubber spatula to scrape edges of bowl. Transfer dough to a lightly floured countertop.
- A couple options for shaping rolls. For crescent rolls, divide dough into two equal pieces and roll one of them at a time into a large 1/4 inch round. With a pizza cutter or pastry cutter, cut into 8-14 triangle wedges. Starting at wide end, roll dough down to the pointed end of the dough. Place crescents into a lightly greased 9 x 13 inch baking dish(s), placing 1/2 inch apart. Generally I use an 8x8 inch baking dish in addition to the 9x13 inch.

- Combine 1 cup flour, yeast, sugar, and salt in a large mixer bowl; mix on low speed until incorporated. Heat buttermilk in a microwave-safe measuring cup for 45 seconds to 1 minute, until very warm (120-130°F). Add warm buttermilk and butter to flour mixture and mix until combined; mix in remaining cup of flour.
- Switch out the flat beater for a dough hook, and knead dough for 5 minutes until smooth. Place dough in a medium bowl coated with cooking spray and cover with plastic. Let the dough rise in a warm place until doubled in size, about 20 minutes. Spray an 8-inch baking dish with nonstick spray and turn out dough onto a lightly floured board. Shape dough into a ball and use a sharp knife to cut into 12 equal portions.
- Use lightly floured hands to roll each piece into a ball, gently stretching the dough over itself and pinching together at the bottom. Place rolls in square baking dish, cover with plastic, and let rise for 20 minutes. While rolls rise, preheat oven to 400°F. Use a pastry brush to gently brush rolls with 1/2 tablespoon melted butter. Bake for 14 minutes, until golden. Remove from oven and immediately brush rolls with remaining butter and sprinkle with salt before serving.
