Succulent braised lamb shanks slow cooked in a red wine, tomato, and fresh basil sauce. Serve with mushroom risotto and grilled zucchini.

2 large white onions, chopped
4 lamb shanks
2 cups dry red wine
1 cup balsamic vinegar
⅓ cup olive oil
4 cloves garlic, pressed
2 lemons, quartered
2 (14.5 ounce) cans diced tomatoes
1 bunch fresh basil, chopped
1 tablespoon kosher salt
1 tablespoon cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the onions in a layer in the bottom of a Dutch oven or medium roasting pan with a lid. Arrange the lamb shanks on top of the onions. Pour the wine, balsamic vinegar and olive oil over the lamb. Place a clove of pressed garlic next to each shank, and a quarter of a lemon on each side. Pour the tomatoes over everything, then season with salt, pepper and basil.
  • Cover and place in the preheated oven. Cook for 3 hours. Use juices from the pan to make a nice flavorful gravy.

Number Of Ingredients 12

4 3/4-inch-thick shoulder lamb chops (3 to 4 lbs)
5 large garlic cloves, smashed
2 Tbsps mixed chopped fresh herbs (such as oregano, marjoram and thyme) plus 4 whole sprigs thyme
Salt and pepper
1/4 cup flour, for dusting
3 Tbsps olive oil
4 large onions, sliced thick
4 large tomatoes, sliced thick
1 cup dry white wine
2 bay leaves
1 bunch parsley, stems removed and reserved separately, leaves finely chopped
3 large boiling potatoes, peeled and sliced thick

Steps:

  • Preheat oven to 275F.
  • Rub both sides of lamb shoulder chops with 1 to 2 garlic cloves, as needed. Rub with chopped herbs and season with salt and pepper. Dust both sides of chops with flour. In a large (10-inch) cast iron skillet, heat oil over high heat. When nearly smoking, add 2 lamb chops and sear, 4 minutes each side, until well-browned. Remove and repeat with remaining chops. Discard fat that has accumulated in pan.
  • In skillet layer onions, half of tomato slices and lamb chops. Top with remaining tomato slices and pour wine and 1/2 cup water over. Bring to a boil over medium-high heat. Add remaining 4 garlic cloves, bay leaves, thyme sprigs and parsley stems. Cover pan loosely with aluminum foil and roast for 3 hours.
  • Cover top with potato slices, pushing them into liquid so they are completely submerged. Cover pan, return to oven and cook 30 minutes or until potatoes are tender. Using a large spoon, remove excess liquid and any fat from stew to a small saucepan. Bring liquid to a boil over high heat and boil rapidly until thickened, 10 to 15 minutes. Before serving, broil lamb under a preheated broiler, 5 minutes or until potatoes are well-browned. Sprinkle with chopped parsley and serve with sauce.

Legs of lamb are on special at the store at the moment, with 10 CHF off a kilo, so well worth enjoying at that price. They were selling them on the bone and off, I bought a de-boned leg of about 900g of meat. I served this with buttery mushrooms, celeriac and carrot and braised onions. I do usually make this with baby onions, but I could not find any, and I went to 2 stores, so I gave up in the end and bought shallots instead, worked fine and tasted fine but it is better with baby onions. I made this for myself, hubby and son and thought there would be left overs, but they ate all the meat, I think they were just being a bit piggy as this should have served 4 easily. So serving size depends on what kind of appetites you are cooking for, if like my men they are quite big eaters, I would serve some potato with this, either mash or some nice roast ones, you could even make stuffing balls. If you have read any of my recent posts lately you will have read that my hubby and I are trying not to eat to many carbs in th evening, hence I didn't make any with ours.

1 tablespoon olive oil
1 onion, sliced thinly
3 garlic cloves, crushed
900 g leg of lamb, boned
1 cup dry white wine
3 sprigs fresh rosemary
10 sprigs fresh thyme
1 teaspoon mustard seeds
1 1/2 cups water
2 teaspoons beef stock
1 kg celeriac, sliced
2 medium carrots, cut into strips, 5mm approx
100 ml cream
2 tablespoons cornflour
1/4 cup grainy mustard
2 tablespoons fresh parsley, chopped finely
2 tablespoons olive oil
400 g baby onions
1/2 cup dry white wine
1/2 cup beef stock
1 tablespoon white wine vinegar
1 teaspoon sugar
400 g mixed mushrooms, chopped and sliced (Anything you like swiss brown, oyster, shiitake, enoki, chantrelles etc...)
50 -70 g herbed butter

Steps:

  • Add lamb to a heated pan and cook, until, browned all over, remove, set to one side. Heat olive oil in same pan add onion and garlic, cook, stirring, until onion is soft, return lamb.
  • Add wine, herbs, seeds, stock and water, simmer covered, 1 hour.
  • Add celeriac, simmer covered, for further 20-30 minutes until lamb and celeriac are tender, add carrots about 15 minutes before lamb is finished, carrots will just be cooked, add with celeriac if you prefer your carrots quite tender.
  • Remove lamb, celeriac and carrot cover and keep warm. Strain liquid into a smaller pan, add cream, simmer uncovered, 5 minutes. Blend a little water with the cornflour, add to sauce, stir until mixture boils and thickens.
  • Serve lamb sliced with celeriac, carrot, sauce, buttery mushrooms, braised onions and sprinkle with parsley.
  • Braised Onions.
  • Heat oil in a pan, add onions, cook, stirring, about 10 minutes or until onions are browned.
  • Add wine, stock, vinegar and sugar, simmer covered, 30 minutes, remove lid simmer uncovered a further 10 minutes or until almost all the liquid has evaporated.
  • Buttery Mushrooms.
  • Melt butter in a pan add mushrooms, cook, stirring occasionaly until mushrooms are tender and cooked as desired. (I say this as I like to brown mine a little.).
  • To Serve: Slice lamb and arrange on a serving platter plate with vegetables, onions and mushrooms. Pour a little sauce over the lamb sprinkle with parsley and serve the extra sauce in a gravy boat on the side.

This homemade vegetable stock from chef Sam Beall's "The Blackberry Farm Cookbook" is used to make his 10-Hour Braised Lamb.

Number Of Ingredients 15

2 large onions, peeled and quartered
2 medium leeks, trimmed, washed, and roughly chopped
2 ribs celery, roughly chopped
2 small parsnips, peeled and roughly chopped
2 small white turnips, peeled and roughly chopped
3 cloves garlic, smashed
1 cup mushrooms or mushroom stems
1/4 cup extra-virgin olive oil
1/2 cup lightly packed fresh flat-leaf parsley leaves and stems
2 teaspoons fresh thyme leaves
1 bay leaf
10 peppercorns
1/4 cup white wine
2 teaspoons coarse salt
1 tablespoon white-wine vinegar

Steps:

  • Preheat oven to 400 degrees. Place onions, leeks, celery, parsnips, turnips, garlic, and mushrooms in a large roasting pan. Drizzle with olive oil and toss to coat. Transfer to oven and roast, stirring occasionally, until vegetables are lightly browned, about 45 minutes.
  • Transfer vegetables to a large stockpot. Add 2 cups water to roasting pan and scrape up browned bits from bottom of pan; pour into stockpot. Add 10 cups water to stockpot, along with parsley, thyme, bay leaf, peppercorns, wine, and salt. Bring to a boil over high heat, then reduce heat to low. Partially cover pot and gently simmer stock until vegetables are very soft, 30 to 45 minutes.
  • Strain stock through a fine-mesh sieve into a large bowl; discard solids. Stir vinegar into stock and use immediately or cool to room temperature and transfer to an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months.

SLOWLY BRAISED LAMB

1 boned shoulder of spring lamb, about 3 1/2 pounds, rolled and tied
Salt and freshly ground black pepper to taste
3 tablespoons vegetable oil
1 cup finely chopped onions
1/2 cup finely chopped leeks
3 cloves garlic, peeled and minced
1/2 cup chicken or veal stock
1/2 cup dry white wine, kosher for Passover
2 tablespoons lemon juice
3 sprigs fresh tarragon, or 1 teaspoon dried
2 scallions, finely chopped
2 tablespoons finely minced parsley
Sprigs of parsley for garnish

Steps:

  • Season the lamb with salt and pepper. Preheat the oven to 250 degrees.
  • Heat the oil in a casserole large enough to hold the lamb. Brown the lamb on all sides over medium heat; it should take at least 15 minutes. Remove the lamb from the pan and set aside.
  • Add the onions and leeks to the casserole and sautee over medium-low heat until they are tender and just turning golden. Stir in the garlic.
  • Return the lamb to the casserole and add the stock, wine, lemon juice, tarragon and scallions. Bring to a simmer, cover and place in the oven.
  • Bake the lamb for five hours; by then it should be extremely tender. Remove the lamb from the casserole.
  • Strain the sauce into a heavy saucepan. Skim off as much fat as possible. Place the solids in a blender or food processor along with 1 tablespoon of the minced parsley. Puree, adding a little of the sauce if necessary. Add this puree to the sauce, reheat and check seasonings.
  • Remove the strings from the lamb. Slice the roast down the middle the long way, then cut it into chunks. Layer the meat into a bowl or loaf pan that holds 5 to 6 cups, then unmold onto a warm serving platter. Sprinkle the remaining minced parsley over the top, garnish the platter with parsley sprigs and serve, with the sauce on the side.

Hearty and aromatic, this braised lamb dish, adapted from my mother, Annette Gertner, takes inspiration from the Middle East by way of Eastern Europe. It simmers mostly unattended and even benefits from being made earlier in the day - or even a day or two in advance - and reheated. The four shanks yield four copious portions. (The recipe will serve six if every guest does not insist on having a bone.) Orzo alongside will sop up the sauce.

4 small-to-medium lamb shanks (3 to 3 1/2 pounds), excess fat and silver skin removed
2 tablespoons extra-virgin olive oil
Salt and ground black pepper
1 large green bell pepper, cored, ribs removed, cut in 1/2-inch strips
1 large red bell pepper, cored, ribs removed, cut in 1/2-inch strips
4 small yellow onions (about 1 pound), peeled and quartered vertically
3 large garlic cloves, smashed
1 teaspoon dill seed, crushed in a mortar
1 teaspoon paprika, preferably Hungarian
1/2 teaspoon ground cinnamon
1 cup chicken stock
1/2 cup dry red wine
3 tablespoons tomato paste
1 tablespoon dried oregano
3 tablespoons lemon juice
2 tablespoons minced fresh dill

Steps:

  • Pat dry lamb shanks. In a heavy casserole or Dutch oven that will hold all the shanks, heat oil on medium-high. Add lamb shanks and brown on all sides, about 10 minutes. Remove to a platter. Season with salt and pepper. Reduce heat to medium-low.
  • Add bell peppers and onions to the pan. Sauté, stirring, until the vegetables wilt and just begin to color, 5 to 6 minutes. Add garlic, dill seed, paprika and cinnamon. Stir. Add stock and wine. Bring to a simmer. Stir in tomato paste and oregano. Season with salt and pepper. Stir in lemon juice. Return lamb shanks to the pot along with any juices on the platter. Cover them with a piece of parchment or waxed paper, cover pot with lid, reduce heat to very low and cook about 2 hours, basting the shanks occasionally and turning them at least once until the meat is very tender when pierced with a knife.
  • Remove shanks from the pot. Increase heat to medium and reduce sauce by about a third, about 10 minutes. Taste and season with salt and pepper as needed. Return shanks to the pot, baste and reheat. Serve directly from the casserole or transfer to a serving dish. Strew with fresh dill before serving.

2 large carrots, peeled and chopped
1 large white onion, chopped
2 ribs celery, chopped
1 lamb neck, about 1 1/2 pounds or 1 1/2 pounds lamb shank
2 1/2 teaspoons coarse salt
1 teaspoon freshly ground black pepper
3 cups Pinot Noir or other light red wine
3 cups Vegetable Stock for 10-Hour Braised Lamb, or low-sodium, store-bought vegetable broth, heated

Steps:

  • Preheat oven to 250 degrees.
  • Place carrots, onion, and celery in an even layer in a roasting pan. Season lamb with 2 teaspoons salt and pepper. Set lamb on top of vegetables. Transfer to oven and cook for 6 hours.
  • After about 5 1/2 hours of cooking, place Pinot Noir in a medium saucepan and simmer over medium-high heat until reduced to 1 1/2 cups.
  • Remove roasting pan from oven and add wine to pan, along with stock and remaining 1/2 teaspoon salt. Cover roasting pan with parchment paper-lined foil and return to oven. Continue cooking until meat is almost falling off the bone, about 4 hours more.
  • Remove lamb from braising liquid and use a fork to scrape meat away from bones. Divide meat among 4 plates and serve immediately.
