This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

- In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

SALMON PASTA SALAD
Don't recall where this recipe came from years ago, but it is one of the few salmon recipes that I really like. Note that 1.75 cups of cold baked salmon can be substituted for the canned salmon. If the final product seems too dry for your taste, additional red wine vinegar and olive oil can be added.

- Rinse & remove skin & bones & other tissue from red salmon, then break into medium-size pieces.
- Cook pasta according to box, then chill.
- In large bowl, mix together salmon, pasta, carrots, celery, olives, onion & bell pepper.
- In smaller bowl, combine vinegar, oils, sugar, oregano, salt & pepper & mix well, then pour it over salmon mixture, tossing carefully to coat.
- Serve immediately, or cover, chill & serve later.
SALMON TWIST
A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, are the perfect salty-sweet complement to rich salmon fillets. Adding vinegar or fish sauce and white pepper will emerge new flavors to create a Filipino or Thai twist! For more of a twist, use other types of fish, like cod, catfish or tilapia. You can even use it on chicken! Trust the cooking of the fillets and do not be tempted to open or you will lose valuable time and heat.

Steps:
- Combine water, soy sauce, brown sugar, olive oil, lemon juice, cornstarch, garlic powder, and black pepper together in a saucepan; cook over medium-high heat until sauce is thickened, 5 to 10 minutes.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
- Arrange salmon fillets on the prepared baking sheet. Brush sauce on both sides of each fillet. Fold aluminum foil loosely over fillets and seal edges together creating a packet.
- Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes.
- Bring remaining marinade to a boil and serve alongside cooked salmon.

- Cook the pasta according to package directions; drain and set aside.
- In a mixing bowl, combine yogurt, mayonnaise, lemon juice, basil, oregano, salt, and pepper.
- In a separate bowl mix remaining ingredients, add it to the first mixture.
- Toss to coat pasta.
- Transfer to a container, and chill for at least 1 hour before serving.
- Before serving, make sure to gently stir it all up again well.
- Note: other kinds of pasta can be used in place of macaroni, to make it interesting -- small spirals, orzo, penne, etc. Don't be afraid to experiment!

- Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with parchment paper.
- Coat salmon with olive oil and place on the prepared baking sheet.
- Bake in preheated oven until salmon is cooked through and no longer translucent, 15 to 20 minutes.
- While the salmon is baking, bring a large pot of lightly salted water to a boil. Add pasta, return to a rapid boil, and cook until tender yet firm to the bite, 11 to 13 minutes. Drain, rinse with cool water, and drain again. Transfer to a large mixing bowl.
- Remove salmon from the oven, cool, and flake with a fork. Add to the pasta along with celery, mayonnaise, and walnuts. Mix all ingredients with a wooden spoon until well combined. Season with salt and pepper and add dill. Place in the refrigerator until chilled and flavors have combined, 2 hours to overnight.

SALMON PASTA SALAD RECIPE

- Gather the ingredients.
- In a large pot filled with boiling, salted water , cook the pasta according to the package directions. Place the frozen peas in the colander, then drain and rinse the pasta (it will simultaneously thaw the peas). Shake well to remove excess water.
- In a medium mixing bowl, add the mayonnaise, yogurt, honey mustard, lemon juice, chives, paprika, salt, and pepper. Mix the dressing well and adjust to taste.
- Assemble the salad in the serving bowl you intend to use. Add the pasta and peas, then the salmon, bell peppers, and havarti cheese. Top with the dressing.
- Gently toss to combine. Cover and chill for at least 1 or 2 hours in the refrigerator.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Pat salmon dry with paper towels. Coat lightly in 1 tablespoon grapeseed oil. Season with blackened seasoning.
- Heat remaining grapeseed oil in a cast iron skillet over medium heat until it starts to smoke. Be sure to turn on your oven vent. Put salmon in the skillet and cook until it flakes easily with a fork, 4 to 4 1/2 minutes on each side (turning only to flip to the other side). Set salmon aside and let cool while you mix up the pasta salad.
- Combine drained pasta, pineapple, cucumber, onion, olives, broccoli, Brussels sprouts, banana peppers, bell peppers, tomato, and thyme in a large bowl. Mix well. Mix in mayonnaise and salad dressing, adjusting to taste. Flake the salmon and gently fold into the pasta salad.

- Cook pasta al dente and let cool.
- In a mixing bowl mix the salmon, black olives, onion and tomatoes together.
- Add the cooled pasta to the bowl and mix with the above ingredents.
- Take about 2 tablespoons of mayo and mix into the mixture. It should be coated, not creamy.
- Add salt, pepper, dill and tarragon to taste.
- Put mixture in the refridgerator for at least one hour to cool. Be sure to cover it.
- When you take it out of the fridge it may need a little mayo. That's o.k., just add to the mixture and serve.
