1 (14 3/4 ounce) can salmon, drained keep bones and skin
4 green onions, sliced, bulb and green tops
1 sleeve saltine crackers, crushed
2 eggs
1 tablespoon minced garlic
2 tablespoons minced dried parsley flakes
1 teaspoon salt and pepper, to taste
1 teaspoon red pepper flakes, to taste
1 tablespoon butter (for cooking)

Steps:

  • Mix all ingredients, using skin and bones (they are fully cooked and very nutritious, you won't even know they're mixed in).
  • Press mixture together in hands to form into eight patties.
  • Place butter in nonstick pan to coat.
  • Cook patties in butter on medium heat for 4 mins on each side until golden brown and crispy.
  • Serve immediately or freeze for later.
