2 large bananas, ripe to overripe (peeled and cut in slices)
4 eggs
Maple syrup or Honey
Fresh Blueberries

Steps:

  • 1) Crack in the eggs in a mixing bowl and whisk to combine 2) Add the bananas and mash with a fork or potato masher until the mixture is smooth, stir to combine 4. Spray a frying pan with PAM o coconut oil, cook the pancakes over a medium low heat for less than a minute. Once one side is cooked flip it over and cook for about one minute more. Serve immediately with honey or maple syrup and fresh blueberries. Super easy, fast and delicious! Enjoy!

  • Spread almond butter on top, roll up and serve.

  • Cook until golden brown on the underside (around 1 minute) sprinkle on any chunky ingredients (e.g. chocolate chips, fruit, nuts, if using), then use a thin metal spatula to gently get underneath the pancakes and flip them over. Cook until golden brown on the other side (30 seconds to 1 minute).
