2 cups chopped chicken breast
3/4 cup light brown sugar
1/3 cup soy sauce

Steps:

  • Rinse, dry, and chop the chicken, then sprinkle with salt.
  • Warm some oil in a pan over medium heat, then place the chicken into the pan and cook for 12 minutes, turning every couple of minutes. It should brown on the outside and be completely cooked through and white on the inside.
  • Take the chicken out and put aside, then place the light brown sugar and soy sauce in the pan and keep the heat at medium.
  • Continuously stir the cooking sugar and soy blend for 5 minutes until the sauce bubbles and then thickens.
  • Place the chicken back into the pan, allowing the chicken to be coated by the sauce.
  • Garnish with optional green onion and sesame seeds. It is now ready to be served!

1 cup soy sauce
1 cup white sugar
¼ cup pineapple juice
¼ cup vegetable oil
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger
3 pounds chicken wings or drumettes

Steps:

  • Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.

1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice wine vinegar
1/4 cup brown sugar
1 fresh red chile, halved
5 garlic cloves, halved
2-inch piece fresh ginger, smashed
2 dozen chicken wings, about 3 1/4 pounds, rinsed and patted dry
Sea salt and freshly ground black pepper
1 tablespoon sesame seeds, toasted, for garnish (see Note, page 34)
1/2 bunch fresh cilantro, chopped, for garnish

Steps:

1 (12 ounce) can orange soda (Do Not use diet. It will not carmelize)
1/4 cup soy sauce
1/2 teaspoon salt (or to taste)

Steps:

  • Pre heat oven to 375. Place chicken, soy sauce and soda in an 11'X 13" baking dish. Sprinkle salt over the top. Bake for 20 mins to 45 minutes, depending on the type of chicken you are using. Boneless breast filets will take less time than boned chicken thighs, for example. Use a meat thermometer to determine doneness. Serve over rice with a side of boiled edamame beans. Serves 6.

1/2 cup soy sauce
1/2 cup mirin
1 tablespoon minced garlic
1 tablespoon minced ginger

Steps:

  • Cut 3 pounds of chicken wings into three sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine soy sauce and mirin (or 1/4 cup honey mixed with 1/4 cup water) in a small saucepan over medium heat. When it boils, turn off the heat and stir in garlic and ginger. Let cool.
  • When the wings are cooked, put them in a large bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.
