Welcome to your new 30 minute midweek dinner saviour: a butterflied chicken rubbed with tandoori spices, lemon and yoghurt and cooked in the steam oven until juicy and golden.

3.5 lb whole chicken (backbone removed and bird flattened out, to give a cooking weight of around 3.3lb (1.5kg))
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
1 ½ tsp paprika (I use sweet, smoked is fine if you prefer)
1 tsp turmeric
½-1 tsp cayenne pepper
1 tsp fine salt
2 cloves garlic (crushed)
2 tbs natural yoghurt
1 lemon (juiced)

Steps:

  • Preheat oven to 430°F/220°C, combination steam setting. If your oven has variable steam settings, choose 30% (if not, don't worry! Just set to combi steam at the correct temperature and the oven will figure out the humidity for you).
  • Mix all ingredients except the chicken together in a small bowl. Cut deep slashes into the breasts and thighs of the chicken (this helps it cook faster, but also absorbs the marinade more easily), then rub the marinade all over both sides of the chicken and into the slashes.
  • Set the chicken, breast side up and legs splayed as in the pictures, on a rack over a baking dish or pan, so air can circulate all around the meat.
  • Put the tray in the preheated oven until the chicken is cooked through and the marinade is a dark golden color, about 30 minutes. Remove from oven and set aside to rest in a warm place for 5-10 minutes before carving and serving. If any cooking juices have collected in the pan, pour these over the chicken as you serve.

1 1/2 pounds skinless, boneless chicken breast
1/2 cup non-fat yogurt
2 tablespoons fresh ginger, grated
1 tablespoon ground turmeric
1 teaspoon ground cumin
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon finely minced garlic
1 small white onion, roughly chopped (about 1/4 cup)

Steps:

  • In the bowl of a food processor, combine the yogurt, ginger, turmeric, cumin, paprika, cayenne, garlic, and onion, and process to a smooth puree. Put the puree into a shallow, flat dish and place the chicken breasts into the puree, coating both sides evenly. Allow to marinate, covered and refrigerated, for several hours or overnight.
  • Preheat oven to 375 degrees.
  • Season the chicken breasts lightly with salt and pepper and place on a rack in a roasting pan that has been preheated for 10 minutes in the oven. Roast the chicken, turning once, until fully cooked but still moist and not dried out. Cooking time will vary depending on the size and thickness of the chicken breasts.
  • Alternately, prepare an outdoor grill and cook over indirect heat with the lid on, turning once. Serve the chicken breast with a salad and a grain such as lentils to make a complete meal.

1 teaspoon coriander seeds
1 tablespoon garam masala (Indian spice blend)
1 tablespoon paprika
2 teaspoons turmeric
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
2 dried guajillo chiles, seeded
1 1/4 cups plain yogurt
1 lemon, juiced
2 cloves garlic, minced
One 2-inch piece fresh ginger, peeled and grated
1 tablespoon kosher salt
4 boneless, skinless chicken breasts, sliced into long pieces
Whole-Wheat Flatbread, recipe follows
Cucumber, Mint and Basil Raita, recipe follows, for serving
1 1/2 cups plain Greek yogurt
1 cup whole-wheat flour
1 cup all-purpose flour, plus more for the work surface
2 teaspoons baking powder
2 tablespoons chopped fresh parsley, plus 1 tablespoon finely minced
1/2 teaspoon plus 1 teaspoon kosher salt
Oil, for the grill
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons minced fresh garlic
16 ounces plain Greek yogurt
1 medium seedless cucumber, peeled and finely diced
1/2 cup chopped fresh basil
1/4 cup chopped fresh mint
1/4 cup chopped fresh cilantro
1 teaspoon agave syrup
1/2 teaspoon ground cumin
1/2 clove garlic, minced
1/2 teaspoon salt

Steps:

  • Make the marinade: Toast the coriander seeds in a small skillet over medium-high heat until fragrant, 2 to 3 minutes. Add the garam masala, paprika, turmeric, cayenne pepper and cinnamon and warm through to make fragrant, about 1 minute. Pour everything into a spice grinder and process until fine. (Alternatively, crush the spices with a mortar and pestle.)
  • Place the guajillo chiles in a bowl, cover with hot water and let soak for 10 minutes. Drain the chiles and finely chop. Combine the spices with the chiles, yogurt, lemon juice, garlic, ginger and salt in a in a large bowl. Stir well to combine.
  • Using a meat tenderizer, pound the chicken to a 1/2-inch thickness in between two pieces of plastic wrap. Place the chicken breasts in a large resealable freezer bag. Pour in the marinade and toss to coat well. Refrigerate for at least 1 hour and up to overnight if you have the time.
  • Heat the charcoal in the charcoal chimney. To closely replicate a traditional tandoor clay oven cooking environment, set two large cast iron skillets (about 12 inches each) over high heat until hot, about 5 minutes.
  • Remove the chicken from the marinade. Thread a skewer into each chicken piece so the chicken lies flat.
  • Very carefully remove the skillets from the heat and add a layer of charcoal to one of the skillets. Working in batches, place the skewers over the coals in the skillet so they rest on the rim and the chicken is above the coals. Carefully cover the chicken with the second pan, making sure the skewers don't slip. Cook, turning once, until the chicken is bright red and charred and blackened around the edges, 10 to 12 minutes. Remove the skewers, place them on a plate and repeat with the remaining chicken.
  • Serve with warm flatbread and raita.
  • Combine the yogurt, whole wheat flour, all-purpose flour, baking powder, 2 tablespoons chopped parsley and 1/2 teaspoon salt in a food processor and process until the dough is smooth. Wrap the dough in plastic and refrigerate for 30 minutes.
  • Preheat the grill to medium-high heat.
  • Divide the dough into 6 equal portions. On a floured surface, using your hands or a rolling pin, flatten each piece of dough into a large oval, about 6-inches in length. Oil the grill grate. In batches, grill the flatbreads until puffy and charred around the edges, 2 to 3 minutes per side. (Alternatively cook in a pizza oven or on a pizza stone for 4 to 5 minutes.) Hold the flatbreads on a plate under a warm towel as you cook the rest.
  • Combine the butter with the garlic and remaining 1 tablespoon minced parsley and 1 teaspoon salt. Brush the hot flatbreads with the butter mixture.
  • Combine the yogurt, cucumber, basil, mint, cilantro, agave syrup, cumin, garlic and salt in a food processor and pulse just enough to break down the cucumber and herbs slightly (the raita should still have texture). Do not overmix or the raita will become too runny.
  • Refrigerate for at least 20 minutes to allow the flavors to come together and for the raita to firm and settle.

CHICKEN STEAM ROAST

Traditionally served at wedding banquets in Pakistan, the chicken steam roast has found its way into Punjab's street food scene, and the recipe is replicated by home cooks all across the country. Marinated chicken legs steam slowly in their own juices in a deep pot with a little bit of fat. A tawa or thin metal griddle (a metal comal would also work) is used to temper heat from the stove so it can be applied evenly and for longer. Steam accumulating in the closed pot raises its temperature high enough to cook the chicken through. Patience and faith are key ingredients in this recipe. Resist checking on the chicken periodically and have some faith in the cooking process; you'll ultimately be rewarded. The result: tender, flavorful, falling-off-the-bone chicken legs.

1/4 cup full-fat Greek yogurt
1/2 teaspoon paprika
1 teaspoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon ground turmeric
2 teaspoons ground red chile
1 teaspoon ginger paste or finely grated fresh peeled ginger
1 teaspoon garlic paste or finely grated fresh garlic
6 to 8 Thai green chiles, stemmed and chopped
1/2 teaspoon fine sea salt
6 bone-in chicken legs (3 to 4 pounds), skin removed, meat scored to the bone
Ghee or neutral oil, for cooking
Chopped cilantro, chile flakes, mint chutney and lemon wedges, for serving

Steps:

  • Mix the yogurt, spices, ginger paste, garlic paste, chopped green chiles and salt in a large bowl to make a pasty marinade. Add the chicken and thoroughly rub the marinade into the meat. Cover and refrigerate for at least 2 hours or up to overnight.
  • Place a tawa, griddle or comal on the stove if you have one and center a large stock pot or Dutch oven on top of it. Otherwise, place the pot directly on the stove. The stock pot or Dutch oven should be large enough to hold the chicken pieces in a single layer, and deep enough to gather steam. Add enough ghee to coat the bottom of the pot, then add the chicken in one layer, meatier side down. Cover and cook on medium for 10 minutes.
  • Turn the heat to the lowest setting and continue cooking for another 20 minutes. Flip the chicken and continue cooking, covered, for another 30 minutes. Remove the lid. Cook on medium until the juices in the pot have mostly evaporated, 10 to 12 minutes. Transfer the chicken to a serving platter and pour any juices from the pot over the chicken. Garnish with cilantro and chile flakes and serve with chutney and lemon wedges for squeezing.

TANDOORI-STYLE ROAST CHICKEN

1 cup plain nonfat or low-fat yogurt
2 1/2 teaspoons Seriously Simple Seasoning Salt or other seasoning salt
One 3 1/2- to 4-pound chicken
1 pound baby Yukon gold or fingerling potatoes
Fresh flat-leaf parsley or watercress sprigs for garnish

Steps:

  • • In a small bowl, stir together the yogurt and 2 teaspoons of the seasoning salt. Place the chicken in a large lock-top plastic bag. Add the yogurt mixture and turn the chicken to coat evenly. Seal the bag and marinate in the refrigerator for at least 2 hours or up to 8 hours, turning occasionally.
  • • Preheat the oven to 425°F. Place the potatoes in a roasting pan and sprinkle the remaining 1/2 teaspoon seasoning salt over them. Remove the chicken from the marinade, reserving the marinade. Place on a rack (a vertical roaster works well), and arrange in the pan on top of the potatoes. Pour the remaining reserved marinade over the potatoes and turn to coat them lightly.
  • • Roast the chicken for about 30 minutes. Turn the potatoes so they cook evenly. Roast for another 20 to 30 minutes, or until the juices run clear when a thigh is pierced with a knife and the potatoes are crispy and cooked through.
  • • Transfer the chicken to a carving board and let rest for a few minutes. Carve into pieces and arrange on a platter. Surround with the potatoes. Pour the juices from the pan over the chicken and potatoes. Garnish with parsley or watercress and serve immediately.
